I have been here a couple times. All the baked goods are vegan and gluten free and there are a variety of vegetarian and vegan dishes. Today I was planning to get a salad or healthy snack after yoga but I ordered the wings and tofu. Wish I wouldn't have only gotten fried food but the batter on the wings and tofu were good. The fried broccoli is pretty awesome. I got three sauces. The red sauce that came with the wings lacked spice but the maple mustard with the tofu was really good. I would have like a spicier sauce and some carrots and celery with the wings, I really should have got a fresh side like salad or slaw but that was my bad. I had high hopes when I strolled in on a weekday afternoon for this place but the food and prices really let me down. Ordered the Pad Thai which base cost is 17$ plus 4$ for the tofu leading to a plate costing 22$+ with taxes. They then prompt you for a tip even though this is counter service and a server will never once interact with you. The flavor was really a let down with no great interplay on salty, sweet, and spice that you'd expect in a great pad Thai. Really a disservice to the dish and Thai cuisine. Portion was decent but given how cheap the ingredients are and the outrageous price I'd expect a little more. The service was okay but again since it's counter it's very limited so not much to say. This is a great option for something healthy and fast. My sister and I were shopping around on a Sunday and wanted something somewhat healthy and fast for lunch. I typed in healthy lunch into Yelp and up popped Vital Root. It was pretty hopping for a Sunday - lots of families, kiddos, couples. My sister and I split the sun-dried tomato/avocado toast and the veggie "wings". (We initially ordered the cashew "queso" dip, but the cashier must not have known that it wasn't available. A worker stopped by our table and said we could sub it out so we went with the wings which were the same price.) Everything was really good! The toast was super delicious with lots of great flavors and fixings on it (smoked almonds, chickpeas, zucchini, goat cheese - yum!). And the wings turned out to really good with a delicious crispy-fried batter. Maybe not the healthiest side choice, but it was really good and came with a yummy spicy aioli sauce. This is a great place to stop if you don't want the typical greasy fast-food options. There are cocktails, beer, wine, and lots of drink/juice options as well. On nice days, you can sit in the front where there is an open garage door. Great location too! Surrounded by fun shops and other bars/restaurants. The Pad Thai tasted nothing like real authentic Pad Thai. It was really tangy and sour. It was made of clear vermicelli noodles and didn't really have that bite that Pad Thai usually has. I would give it a 3/5. I really liked the Korean Wings! It was basically deep fried cauliflower and it was really good! Crispy and nice flavor. Family friendly vegan! I stopped here for Sunday lunch with a friend. It was busy but we didn't wait long to order and found a table right away. The sunflower risotto and bahn mi tacos were to die for with so much flavor and spice! We sipped on refreshing and well made Sangria and mules. Today I sampled the bahn mi tacos with a side of yucca fries. I have an obsession with these flavors in general and today I was very pleasantly surprised. The corn tortilla was my first judge of the dishes character. So often a corn tortilla is dry and none too exciting. This was a soft, fresh corn tortilla that was the perfect vehicle for the rest of the taste explosion. The tofu was well seasoned and topped with Thai basil and jalapeno as well as I believe fresh jicama. Then we get to the yucca fries and there were among the best that I have had. Thick yet soft on the inside and crispy on the outside, they had the perfect balance. Sprinkled with a little bit of salt and what looked like chili and they were little pillows of perfection. It can be challenging to find vegan food on most menus around Denver, so when I want more than just one option, this is my go-to restaurant. The menu doesn't change a whole lot, so I can typically rely on getting the same dish I've been craving, which I love. The Korean Stir Fry is usually they item I crave most when thinking of vegan restaurants around town. It is the perfect mix of noodles and rice, with crunch from fresh radish and cashews. Do be warned it comes with a variety of herbs that can be somewhat overpowering (they come on the side) so just don't mix them in if you are not a fan of mint, basil and parsley. I also really enjoy the Devils on Unicorns - you'd seriously never know the difference between real bacon and coconut bacon. The flavor is spot on and it is just the right amount of crispy! Lastly, I always like to get the beet brownie. The staff is friendly and knowledgable making vegan-izing meals a breeze. Vital Root can get busy, but it is a fast casual approach allowing you to order your food before taking a seat. If you are a fan of Ophelia's, Linger, or Root Down, or just enjoy vegan food (or even if you don't) you will love Vital Root. Everything I have ever had here has been delicious. My favorite, and go-to, is usually the Korean Stir Fry. I also really like their yam noodle ramen and Banh Mi tacos. Whatever you decide to order, you can't go wrong. My gf got me into vegan food and Vital Root has quickly become one of our favorite restaurants. I also love the fast casual concept. Just the other day, my buddy and I came here for brunch and we both ordered the "Everything Bagel" Avocado Toast (as pictured). It is a must try and is quite possible the best Avo Toast I have ever had. I'm sure every Basic B will agree once they try it. Give it a go. Also, the outdoor seating area is awesome. Fantastic, fresh, gluten free/vegan cafe! The ambience is so friendly and inviting. I went to Bali earlier this year which has a huge vegan cafe scene and Vital Root seriously reminded me of a sweet vegan spot in Bali! This place doesn't have formal waiter service so you save money on tipping a bit. You order at the counter and then one of the staff will bring you your food. They have self-serve water taps which include sparkling, ice, or room temp water. I went here on a Saturday morning for brunch with a group of 5. The friends I went with got yummy frothy coffee latte drinks. I went for the green envy juice blend which was energizing and tasty although it does come pre-made in a bottle FYI. For my entree I went with the coconut quinoa pancakes which had a super tasty fresh blueberry-lemon compote. My friends got the avocado toast and the root down Benedict (covered in a neat bright-green poblano hollandaise), which were very well-received. The vibe here is great and the food is very tasty and leaves you with a clean-feeling rather than feeling bloated and full. One of the most unique dining experiences we had in Denver! It was a hot one but we still decided to eat in the beautiful outdoor area. So neat how they've used old lunch trays on the walls and plants everywhere. They have a little outdoor kid area which was great for our little one while we waited. Holding down the "V" in the fabled collection of L.O.V.E.R. Restaurants in Denver is Vital Root, which serves casual vegetarian fare along with wine and beer. During normal times, the front and back patios are prime spots for breakfast or lunch on a warm summer day. During the COVID era, Vital Root has repurposed their front counter facing Tennyson street as a very convenient spot to place a walk-up to-go order, or to grab your pre-ordered meal without having to venture inside. All of the above is true, but this review is going to focus on a little-known perk of Vital Root that my wife discovered: vegan holiday prix-fixe meals. Vital Root offers multi-course prix fixe holiday meals that you order ahead and then pick up at a set time. We've used this service for Thanksgiving in prior years when it was just the two of us and cooking a massive meal just didn't feel like it was worth the effort. This year, we snagged two pre-made meals for the night before Xmas Eve, and they were delicious. A fresh beet salad with dressing, mashed potatoes & cauliflower with coconut flakes, a roasted vegetable medley, VR's take on Beef Wellington: made completely vegan with spinach, mushrooms, and all sorts of other delicious fillings, and a cranberry tart for dessert. At $40 each these aren't exactly cheap, but if you are looking for a really well-made home cooked meal without having to put in the work, these are great options. The meal comes packaged in a compostable box with easy-to-follow instructions on how to prep (this year, simply removed the salad, pop the box in the oven and bake for about 20 minutes... DONE) and the order/pick-up process is also a breeze. Looking forward to dining in at VR's awesome space again in the (hopefully) near future. After the GM reached out and offered for us to come back in for a better experience we were more than willing to try it again as I mentioned before there were things I was hoping to try still! Sarah the floor manager helped us right from the door and she was very kind and made sure to let us know she was there for anything we needed. The guy at the register who had no idea of our previous experience but was still so incredibly friendly! He was funny and welcoming and just great customer service all around. This time was a completely opposite experience. We got to enjoy the restaurant and it's so cute, light and airy I really loved the atmosphere. The Cobb salad was MASSIVE, Like it could feed 5. I felt bad not finishing it, it was delicious though and i was super excited to try the "bacon" I feel like that's one of the rarest things i find on a veg menu so I really wanted to try it. My boyfriend got the pad Thai and let's just say it wasn't his for long. I love pad Thai, it's my favorite food and to be honest I didn't order it here because well it's not a Thai place and didn't think it would be that impressive. I was wrong.
