After being home 24/7 the past couple weeks because of Covid-19, I am so sick of cooking. I found myself scrolling through Uber eats, trying to find something to order for contact free delivery. And then, I saw Vital Root. I've never been before but have always wanted to try it, and now seems like as good a time as any. I ordered the Cashew Queso, Falafel Wrap, and Yuca fries. And wow, it was all really good. The cashew queso is really good, despite it being vegan. I think anybody from herbivores to carnivores would eat this and find themselves going back for more. The falafel wrap was great too, loaded up with lots of tasty sauces, crispy chickpeas, and veggies in a delicious wrap. The yuca fries had a nice flavorful seasoning on them, and came with a good dip. I can't wait to order more delivery through them during this weird time, and to actually go in person in the future. I've eaten here twice while visiting Denver. I've had: - avocado toast - miso ramen - pad thai - grab & go cashew milk Everything was so good the first night that I came back the next night again! I've been wanted to try this place forever and finally got take out during this stay at home era. I ordered the pad thai, veggie wings, and tiramisu. No idea what sauce came with the veggies wings but SO good, the red one was my favorite. The pad thai has tons of flavor and I love the pickled cabbage in it. Tiramisu was definitely boozy, I feel like it would have been much better fresh but can't help that right now in the time of takeout. My only disappointment was they were out of the mochi cake, not sure if they were out for the day or out for the duration of the stay home order. I've been wanting to try this place for a while and it did not disappoint! It's counter service and then seat yourself. Two patios, one in the back very secluded feeling and one out front. Lots of kids here today and they have a good kids menu. Menu has a lot of different options for different tastes, it was hard to decide what to eat as everything sounded delicious. I settled on the kitchiri, it was the perfect mix of heavy and light foods and I left feeling full and happy. Will definitely be back. read more

One thing we noticed about the food was the saltiness. Way too salty. I ordered a side of brown rice and it was salted too. For me I think you should leave the rice alone unless it's fried rice. We ordered Miso Ramen and Pad thai. Nothing stellar about them but I would be willing to go back again and try the other dishes. I am disappointed cause' I love their sister restaurant Root Down. We always eat there whenever we are in Denver. We were here two weeks ago and we are back again this weekend so we thought we would try this place out. We were visiting Denver from where we live in Wilmington, NC. Upon recommendation for a plant-based restaurant, we went to, and ate at, Vital Root. The meals we all had were amazing! The falafel wrap was one of the best I've ever had. The yuca fries with chimichurri sauce were delicious. I still have not been to Root Down yet, and since going at brunch seemed a little out of my daytime budget, my friend and I hit up Vital Root after a class at Rise Nation! I love exploring new trendy, vegetarian spots.. mostly because I delude myself into thinking that the options are ALWAYS healthier. When it came to Root Down, I think that was mostly true? Lots of variety with the type of meal you want to have at brunch, whether it be more sweet or savory. I was curious about the Banh Mi breakfast tacos and I actually was pretty pleased with the end result. It for sure wasn't an authentic banh mi with all the flavors that I'm used to (would have loved some vegetarian form of pâte) but what they tried to capture was there. Everything on the menu looked like it was creatively planned and from what I've seen, well executed! I'd go through the entire menu if it wasn't on the pricier side (esp. considering it's counter service), but I would be back! Let's get real here... I know that vegetarianism is on the rise culturally. So when a restaurant caters that need, everyone and their mother swoons over it regardless of how well it's executed. But as a vegetarian for 40 years, the quality and flavors always matter more to me than the hype. I came with my GF on Sunday night. We weren't too hungry, so we had a meal of appetizers. Main gripe: the food was mediocre. The fries in the Chili Lime Yuca Fries were on the dry side, and the banana ketchup reminded me of a mix between sweet chili sauce and scented bathroom cleaner. The Cashew "Queso" Dip was bland as were the chips, though the soyrizo in the middle of the queso helped improve the flavor. And finally the Sundried Tomato Avocado Toast with poached egg was too heavy on the herbs/spices and had hardly any avocado. Secondary gripe: too damn expensive. The appetizers at $9 per and the entrees at $14 per are far too pricey for what we got. If the food had been amazing, then I wouldn't be bothered as much, but it was far too bland to feel like we got what we paid for. But how much does it actually cost to make a bowl of kitcharee? About $4 or less. On the positive side: The staff who took our order was friendly and knowledgeable. Having the option to sit inside or outside was nice, and the chairs were comfortable. The music in the inside dining area was both mildly danceable and quiet enough to not be intrusive. The Cornhole game boxes on the sidewalk were a fun activity when casually strolling down Tennyson. And the water dispensers with still and bubbling water were a fun touch, but the water shoots out way too fast and splashes everywhere. read more

Nestled in a hip street with lots of small shops and bars to explore, Vital Root is an escape to a world of conscious eating. The outdoor seating area and the music is relaxing. While visiting Denver, some friends of ours recommended Vital Root because my husband and I are both celiac and vegan. This place was perfect!! My husband got the Korean stir-fry, my son got the country fried tofu and sweet potato fries and I got the the sprout head sandwich with a vegan cheese alternative. All of our meals were tasty and satisfying, and honestly we wished we were staying in Denver long enough to try everything on the menu. We got there are 1:30 on a Saturday and there was a long line, but we got through that line within about 10 minutes. I highly recommend Vital Root to anyone who likes food, not just gluten free and vegan. We will be back on our next visit. read more

Honestly I loved every aspect of this restaurant. Great employees and counter service with plenty of self seating and outdoor space in both the back and front. There were also plenty of staff roaming to bring the food to the table as well as bus it away. They have a free water tap with sparkling water as an option. The decor is on point with games hidden in lockers to play. The food had so much flavor you didn't miss the meat. Almost purposely obscure about what items are vegan, which makes no sense for a "99% vegan" restaurant. None of the menu items are marked as vegan and when I asked the staff, they said "all items can be made vegan." Then they had an internal discussion and said the bowl I was ordering was vegan by default. Um... Food wasn't hot, and was nothing special, unfortunately. The red wine was in a can (!) and in the same fridge as, well, everything else. In summary, confusing, kind of a fast food vibe (maybe that's your thing), mediocre execution. I've tried this place multiple times over the years. I love the vegetarian concept and that they creatively remodeled an existing building. The staff are great. I live nearby and I'd like to eat here regularly. Unfortunately the food is not good. Most dishes have amazing ingredients but are insanely salty. The other issue is that portion sizes are too small, and this is coming from a person who is usually happy with half an entree at other restaurants. I get that fresh ingredients ate expensive, but adding some extra rice or noodles hardly costs a thing. I would love to see the menu evolve so that there are some more substantial and less salty options. In the meantime I'll keep checking in periodically. read more

This is a great option for something healthy and fast. My sister and I were shopping around on a Sunday and wanted something somewhat healthy and fast for lunch. I typed in healthy lunch into Yelp and up popped Vital Root. It was pretty hopping for a Sunday - lots of families, kiddos, couples. My sister and I split the sun-dried tomato/avocado toast and the veggie "wings". (We initially ordered the cashew "queso" dip, but the cashier must not have known that it wasn't available. A worker stopped by our table and said we could sub it out so we went with the wings which were the same price.) Everything was really good! The toast was super delicious with lots of great flavors and fixings on it (smoked almonds, chickpeas, zucchini, goat cheese - yum!). And the wings turned out to really good with a delicious crispy-fried batter. Maybe not the healthiest side choice, but it was really good and came with a yummy spicy aioli sauce. This is a great place to stop if you don't want the typical greasy fast-food options. There are cocktails, beer, wine, and lots of drink/juice options as well. On nice days, you can sit in the front where there is an open garage door. Great location too! Surrounded by fun shops and other bars/restaurants. Decent grub for the health-conscious, but leaves something to be desired. I arrived in Denver ravenous and headed here to grab a quick lunch. I came on a Saturday, so opted for the brunch. The options seemed good, but at ~$9 a pop, I had to choose wisely. Ordered the tofu scramble and a fresh pressed juice. Strangely, they didn't have the juices on the menu, and instead had a bottled selection in the cooler. Ok, fine. I got the blue juice, which was cool and refreshing for a hot summer day. But at $8 a bottle, I perhaps was hoping for something more. If you do get a juice, they charge you $1 for the bottle and refund you when you bring it back... fyi. The tofu scramble was decent, but also, at $9, I expected a larger serving. The amount was barely enough to quell my hunger, and I immediately started thinking about my next meal (hangry much?). The experience inside the restaurant was a slight let-down. The temperature was cool on one end, but hot by the front window. And when you try to pour water out of the spout, beware... it literally shoots out of there splashing everything in sight. I saw a table I wanted to grab, but the previous diner's dishes remained. An employee came by and picked up the dishes, but strangely did not clean off the table. Pieces of food lingered behind, until finally a *customer* had to clean it themselves. Disappointing. Justin Cucci does it again! Vital Root is the latest to join the Root Down/Ophelia's/Linger fam, of which it fits right in. A hip restaurant boasting bright food and rad ambiance, this is the perfect place to bring friends from out of town or stop for a post yoga treat. I've dined in and gotten delivery from Vital Root, and it's been consistently tasty. Let me break it down: Concept - 5 stars I adore the idea of "fast slow food." As someone who's done a fair amount of work in the slow food world, I love the idea of making good quality, sustainable food more accessible in Denver. Food + Drinks - 4 stars Pretty good! The bowls can be a little too oily and salty for my taste, so I'll probably stick to salads from here on out. That said, their salads are bomb! I haven't been able to find coconut bacon since moving from LA last year, and I gotta say, I've missed it. They serve their cocktails in cute little bottles that you can bring back to your table and pour into a glass. I have to try their happy hour, but $2 tacos + $5 wine sounds like a plan to me. Price - 3 stars Although I do believe good food costs more, I also think $4 for a little bowl of chips or $16 for a vegetarian cobb salad is a bit steep. While you order at the counter and the restaurant may seem fast casual, don't expect to come here for dinner and drinks for less than $30-40 a head. Service - 4 stars Aside from one little slip up while dining in (the kitchen forgot about my friend's dish and then the server asked us if we were sure), service was friendly and quick overall. Ambiance - 5 stars As I mentioned, I've gotten delivery from Vital Root and while it's tasty, it's just not the same. This was one of my favorite spots to visit when in Denver. It's a bit out of the way of down town but it's an up and coming area getting filled with cool coffee shops, pizza joints, and most of the spots are vegan friendly. Vital Root is one of those places where there is something for everyone. The restaurant states that it is more of a lifestyle choice establishment than just another vegetarian restaurant I could not agree more. I learned though talking with others that there are six restaurants opened up by a guy named Justin Cucci who came to Denver and decided that there needed to be more local whole food based dishes that were based on international prized dishes but changed and made modern and more healthy. Well Vital Root is one to open up in Columbia Heights area outside Denver and it's worthy of checking out. The menu is based off of signature dishes such as Pad Thai, Banh Mi, Kitchari and curry bowls, Korean Stir Fry, even a Miso Ramen. You basically wait in line and order from the menu and you pay at the cash register. The staff here are super friendly and in fact they know the menu well because they all have tried the dishes so that is very helpful. Also the menu can be made vegan for over 90% of what's on the menu so just ask. There is a nice selection of salads, a soup option, and some small plates like yucca or sweet potato fries, Korean Veggie wings made with cauliflower and broccoli. I saw a dish called Devils on Unicorns which is a date stuffed with goat cheese and coconut bacon. Not sure if that can be made with vegan cheese but it sounded really interesting. They also have pre made juices you can pick up in front and they also make different smoothies. If you come for breakfast they also have a few items such as coconut quinoa pancakes, and an oats dish that looked really good. Although everything looked great I knew I would have to try the Pad Thai as it looked unique in that they used mung bean noodles and it looked spicy good. I also got a half order of the 3 grain sesame salad. The atmosphere is super cool here with a very contemporary design. There are two outside eating areas, I recommend the back as it has a wall garden, a kids play area and it's more quiet. They also have both filtered water ambient or cold or chilled sparkling filtered water for free which is a nice touch. Both of my dishes were excellent. The colors of the dishes are enough to light up you up. They say we should eat from the rainbow and boy did they do that with these dishes. The seaweed salad was so unique. It was made with a lemongrass slaw with Wakame seaweed and comes with a dollop of edamame black sesame pesto. It had a lot of flavors going on and the small size was the perfect amount. The Pad Thai also was so fresh and healthy. The mung bean noodles were chewy and firm and mixed with a spicy sauce with pickled veggies mixed in with sprouts and peanuts. It also had a tomato spicy jam on the side that had all the flavors going on and went well with the noodles. It also comes with a lime to squeeze on top and that just puts it over the top. Both dishes blew me away they were so good. I actually got to come back for happy hour and try out their veggie wings and cucumber juice. Both items were discounted $3 for the BBB wings and $4 for the juice of the day. For the juice they basically take one of their green juices and fill it half with soda to make more of a natural soda. The wings came with two sauces one was a sweet chili sauce and the other was a mustard type sauce. I liked the mustard one much better just because the other was too sweet for my taste. I liked the wings made of cauliflower and broccoli but I will say they were a bit greasy. It's one of their more fast food kind of items. After a few of them they got a little boring. I think if I had them with a beer they would have been much better. Last thing to mention is they have a whole dessert case in front of everything from vegan cheesecake to cookies. I saw even a beet brownie with nibs on top. They even had a vegan rice crispy treat. I tried the cookie and the halfa and they were both really good. This place is amazing and delicious! It has a very cool atmosphere, (indoor and outdoor-depending on the weather and season), and the food tastes so fresh! The salads are all incredible, but don't expect your standard salad lineup: Caesar, Greek and cobb. Vital Root has some really unique salads on their menu and they are delicious. The gazpacho is absolutely phenomenal and of course the sweet potato waffle fries (you may also find at sister restaurant Linger)...a must try! It's vital you eat here!! SERVICE: Wonderful service, Elysia & Sara(h) took the time to look through their binders of ingredients to ensure I did not have to worry about my allergies.
