I really can't say enough good things about what the Edible Beats team does. Linger was one of the first restaurants I ever went to when I moved to Denver, and El Five has always been one of my favorites too, so I finally made it to Root Down and honestly... another win. The space feels very Root Down in the best way. Funky, artsy, a little mid century, but still comfortable and not trying too hard. Then the food starts showing up and suddenly the whole table is passing plates around because everyone keeps saying "wait, try this." We ordered a bunch of things and the smoked carrots were probably the biggest surprise for me. I would absolutely go back just to eat those again. The masa birria, diver scallops, and grilled artichokes and asparagus were all great too. The hanger steak was cooked perfectly and came with duck fat potatoes, which immediately puts me in a good mood. Dessert also fully delivered. The banana cream pie with black sesame whip was one of those desserts where you keep going back for another bite even when you're already full. We were here early Sunday night. This is the second time as we were here two years ago. We were disappointed on many levels as our first visit was quite good. The menu has changed and it was a struggle to find something we wanted. We looked at the menu before coming and I wanted to try the Lion's Mane as I am a fan of that mushroom. It was a slow time as it was early. We ordered and everything took an exceptionally long time to get to the table considering the restaurant was relatively empty. Prob my favorite place to eat in the Denver airport. And I don't like eating in airports. This place always has ample seating so you if need a break between flights and a meal it's a good place to stop. The food is absolutely delicious with really big portions but that also comes with a heavy price tag as most airport restaurants do. Super cozy and welcoming spot in Denver. My friend and I walked in on a Sunday evening and were able to get seated without a reservation. Their bar area is beautiful and we enjoyed our dinner sitting there. I started with their bean salad which was super fresh and had a lovely vinaigrette. We then shared their brussel sprouts, gnocchi and scallops. All of which had unique flavors and tasted fresh. I also really enjoyed my ginger/coconut mocktail! I would give this place six stars if I could the decor is eclectic and wonderfully weird and definitely fit the vibe. The menu choices were varied and every single thing was tasty. This was not what I expected but was quite surprised. The setting is rustic modern with a sense of high end dining but in a casual way. The bar was prevalent to the right as we entered. We were coming from an event and didn't have a reservation. Though the place was relatively empty likely they had space reserved and we were sat at the back of the bar in an awkwardly positioned "booth". The party sitting as we were sat decided to leave before ordering. Looking at the menu I noticed a beet salad and my sister loves beets so I figured she would be okay. The menu is select but a choice for all diets, but limited. My sister had the beet salad and I ordered the chicken opting to not take the waitresses suggestions. The food was surprisingly well seasoned and tasted good. We both ate all of our food with the highlight being the bread appetizer. This is more suited to those who are foodies. For me, Root Down was just OK. We went for brunch and the menu had lots of allergy friendly food for my friend. The cocktails looked great, but I stuck with coffee and Diet Coke (which came in a carafe). The food I will say was pretty average, the veggie burger sliders were OK but the sweet potato tots were yummy. Three of us shared a variety of small plates snd entrees from across the menu. All were amazing (the Rockfish Tom Kha was especially delicious.) The Mixed Berry Cobbler was a perfect shared treat at the end (tart berries rather than sweet which we liked but may not suit a sweeter palate.) Going to preface that my review is based off my experience with their restaurant week menu. With that, the menu is 3 courses and a small appetizer. And all of my food was delicious. I cleaned every plate that was given to me. Their service was phenomenal very professional staff and extremely attentive. Really loved the vibe of the restaurant as well, the lighting was perfect and having the three course meal created a great opportunity to talk to the people I came with. Loved this place! Very cute spot in LoHi, i had no issues finding street parking and the ambiance is nice inside. They had an amazing menu with extensive tasting options great for sharing. The drinks were so yummy and unique, we love a good craft cocktail. I believe i tried the dazed and confused and one other mezcal cocktail - both were unique and delicious, and decently strong! We tried the lamb burger sliders - amazing! And the sweet potato tater tots, also delicious. Really interesting with the sweetness. We tried the aguachile appetizer. The fish was fresh but i wasn't blown away by the flavors and textures on that one. We opted for the strip steak which was also good and cooked well but i don't think i would order it again. I tried Root Down on a "Time Left" event (meeting strangers). The food was very good but the portion sizes were kind of small considering the prices.The location is beautiful; Urban, relaxd but still upscale. Our waiter, Al, had some very good suggestions. I started the night with an extra dirty martini and he recommended an ear gray gin from a neighboring colorado gin distillery. He was correct. He was very patient even when I couldn't decide on which wine to pair with my steak (which was delicious!). He recommended the montwpluciano, but I ultimately decided on the cab (the montepulciano was too light). Some of the other people in my group were nice enough to gave me taste their dishes (despite small portions) but I will have to go back to try more things. The ambiance here is fancy, which makes the perfect date night spot! Service here is attentive and friendly and we really appreciated that they were able to accommodate dietary restrictions. We ordered the bison New York strip and the pesto gnocchi. You can tell that the ingredients are fresh and healthy. Taste wise, nothing blew me away but with that being said, it was still enjoyable. The space is pretty well decorated and hip. But I'd say at the price point none of the dishes were exemplary. The fried chicken and grits were tasty but the sauce was a little bland, similar feedback for the rhubarb cake, in my opinion it didn't have enough going on. Hands down my favorite restaurant in Denver. I love it so much I went 2/4 nights I was in town on my last trip! From the food to the people, everything about this restaurant is why I like to dine out: delicious cocktails, scrumptious food and wonderful service. I know Root Down is a popular go-to for out of towners and locals alike but wow did not expect it to be consistently busy on a weeknight. We were seated on the high top table near the bar to the right (upon entrance) - ambiance felt intimate, eclectic, upbeat, and lively. Ideal for our group of 8 coworkers. We essentially ordered every item on happy hour app menu for the table to share. Items that stood out to me: veggie burger slider and Colombian arepa. A bite of each was enough to quench my curious palate. For my main entrée, I had Rockfish Tom Kha which was tasty and a solid portion size. I was happy with my entrée pick but did hear from some coworkers that their dinner item was too salty (ie. risotto). Really appreciated that each of the handcrafted cocktails could be made in NA. While visiting Denver for a conference, I had a chance to meet up with a friend who moved here from NYC and his partner. He's an excellent chef in his own right and a verified foodie, so I let him pick a place and he suggested Root Down and it was stellar. I immediately loved the vibe of the place when we walked in...bustling and fun but not shrill. The serving staff was very nice. Drinks were terrific and the food was superior. I had the fried chicken and goat cheese biscuit and could have easily eaten another serving it was so good. The fried chicken was heavenly and I loved the biscuit with the goat cheese. Everything was just spot on. My friends and I split a banana cream pie for dessert. It's not like the traditional pie you'd think of when you hear "banana cream pie" but it was delicious and we may or may not have fought over the last scrumptious bite! Love this concept of fresh local ingredients. Different options were great. For apps/starters, we tried the beet salad, which was my all time favorite, and scallops, which were also very delicious. Entrees included the rock fish and bison ribs. Both had great flavor but neither provided the wow factor with me like the beet salad. The description provided with the ribs should have been enough to probably go a different way, but I was still curious. Drier, pulled off the rib but not fall of the rib. We gave the sweet potato fries a try and they were eaten up pretty quickly. Crunchy and satisfying. Food presentation and the service were both fabulous. The energy shifted while we were there. Very quiet and low energy, we were maybe one of two tables initially, then lots of activity and bustle as the evening went on. Would go back just for the beet salad. Never missed a beat for us. Former restaurant people ourselves so we know what it takes and we know how well it can be done. Trin makes it look like his joy and makes it look so easy. We are impressed. Good servers like this are hard to find these days. Here, Trin was magic. Made for such a great date night. And the food was delicious. Drinks were Delicious.
