**EAT HERE**The employees here are hands down amazing. They are so patient and helpful. She even gave us a sample to decide if we would enjoy an ingredient in a dish. The food was fresh and arrived to our table hot. We ordered the $9 breakfast special which included an entree, potatoes and a drink. We got the breakfast burrito and the egg sandwich. I could only eat half of the burrito as it was so big and filled to the brim! It had scrambled Vital Farms egg, rice, black bean, plant-based chorizo, smoked gouda, cherry tomato pico de gallo, green chili, cumin-lime crema. That crema was delicious! The egg sandwich had fluffy Vital Farms eggs, Impossible sausage, chive pesto, smoked gouda and sriracha aioli. So many flavors! The environament is low key and has a great vibe. Did I mention that every employee was amazing?! Unfortunately, the desserts were not enjoyable to us. We got the Beet Brownie and the No Bake Cinnamon roll. Both were really dense in texture and both tasted bitter in an odd way and were not sweet enough. Even though the cinnamon roll did mimic the flavors of a regular cinnamon roll it was very heavy on cinnamon flavor and lacked the other flavors to make it complete. I would go back but will skip dessert.

2nd time visiting and got the same thing as last time. It did not disappoint. The cashew queso is soooo unique and tastes like the real thing!!! Love the nachos. The service is always kind and pretty fast. You can tell food is made to order. The wrap is so delicious, I could just eat the bread and salad all day because its so good. Now that its warmer they have the windows open and you can sit to look out while you eat.

This place was there on my brunch list but instead we went there to grab coffee and snacks in the afternoon and almost regretted why dint I go for brunch. There was an elaborate menu we ordered the yummiest smoothie that had cocoa tahini with coconut milk. SO GOOD! My daughter wanted to have beetroot brownies so we had that. It was good. The third thing we ordered was taco that was great too. Ambiance was chill and relax and staff was super sweet.

Service is a 10/10! Indoor outdoor setting options. Good for intimate dates or large groups. Casual counter ordering with water station . Heavy vegetarian options but also vegan friendly. I was torn on what to order and landed on the pad-Thai. I sadly hated my pad-Thai as the sauce was too sweet (for my preference). Also, not exactly pad-Thai sauce or traditional noodles, either. My smoothie was good. Nachos were also good. Loved the cashew queso cheese!!! Now -- My absolute favorite I'd order over and over again was the vegan raw Cinnamon Rolls!!!! We'd love to come back again!

The good: -Banh mi breakfast tacos were really good (non-vegan dish). -Service was super friendly and attentive. -Nice ambiance for a more casual counter order restaurant. The not so good: -Banh mi breakfast tacos were pretty dang spendy for just two :) -Pad thai was not very good. Tasted more like a sweet and sour noodle stir fry. Would not recommend.

Having recently tried El five and Root down, I figured oh if this is part of the same ownership group it must be great. The idea of having a healthy, pay at the counter but aesthetically pleasing ambiance on Tennyson seems like it would be a clear hit. However, the only thing was decent was the sweet potato fries. The pad Thai was far too sweet and saucy, to me it just tasted like a really poorly made pad Thai with limited distinct qualities. The Turkish version eggs on paper sound like they would be good however they also fell short of my expectations. With so much good food in Denver this place wouldn't be on my list.

Orange tofu bowl. $16+ for a medium-sized meal that was so sweet, it could pass for dessert. No acidity, nor umami to balance the flavors. - A black bowl holds fried chicken pieces coated in sauce, accompanied by white rice and a side salad with shredded lettuce and broccoli. The bowl is on a light-colored table, with a metal cup and a person's legs visible in the background. The setting appears to be a casual dining restaurant.

This is my favorite spot because I have so many dietary needs. However, I felt terrible sending the orange tofu bowl back today because it was so incredibly sweet it could pass for dessert. They offered to switch it out for my favorite falafel wrap. Thank goodness. I will keep coming back to Vital Root because the service is excellent.

Absolutely love Vital Root. I've gone 2x this week because I wanted to try more menu items. Bahn mi tacos are still a favorite, but I highly recommend the vegan pozole with tofu/avocado added and the fried oyster mushrooms. Absolutely adored the fried oyster mushrooms and will order it every time I return now.

Enjoyed the Breakfast Burrito Deal for $9. Ordered it vegan with tortilla made with whole wheat and spinach. Included drip coffee, which I got with almond milk. Weather was just right, so I sat in the patio, overlooking the sidewalk as people walked by. Service was friendly and prompt. Atmosphere was casual and relaxed.

It was a cute restaurant with great tasting food and marvelous servers who were concerned over my celiac disease I loved that the restaurant had 2 places to go and order with humor! The one we choose was the one you could speak with a human. I chose that one because of my medical condition. The staff was very knowledgeable about the disease and had some recommendations. I was an active foodie before my diagnosis and I wanted to still have great food but now it has to be safe. The food was fantastic. I had fish and chicken tacos. The tacos were soft and chewy with delicious sauce. The spicy level was spot on for me I also included a dessert and both were good, not wonderful. I understand that gf baking is tough. I'm a former baker. The chocolate chip cookies were good but not great. They weee on the hard side not soft and chewy. Most I've tried are too soft so this was an improvement. The beet brownie that my husband had was the best. Tasted gloriously sweet. I'm planning to take my friends who aren't celiac but enjoy good food. They'll love it

Beet sandwich. The fries were the best part.

The service is decent but the food is really just acceptable. I want to love this place. Maybe their kitchen had an off day, but food was not fresh. I know y'all can do better!

Nachos, chicken wrap and Korean BBQ Veggie "Wings" - The image shows three food items on black trays placed on a gray table. The first tray contains nachos topped with cheese, ground meat, chopped onions, and sliced jalapeños. The second tray has a wrapped sandwich with visible lettuce and grilled chicken, partially unwrapped. The third tray holds a bowl of fried food, possibly chicken or beef, with a small cup of red dipping sauce. A fork and knife are placed on a napkin at the bottom of the image.

While we ended up getting different drinks, I have no doubt the espresso martini is yummy. My husband went for the Old Fashioned and I opted for As the Crow Flies - both were very tasty. Not cheap though - about $14 a pop. They had a wide beer selection and a few NA options, which I'm looking forward to trying as they sounded good. The bartender was friendly and skilled. We ended up sitting inside because it was a bit too hot for us, but others were on the patio and it did have ample seating and shade; will likely be lovely in a few weeks. The decor inside was clean with comfortable seating and a variety of bar seats and low tables. They also had virtual golf - an interesting mix. My one complaint is the amount of televisions. It had the amount I'd expect at a sports bar but way above sports bar prices. They could get away with removing 1-2 and still catering to the same crowd while appealing to those (like me) who don't want to have to sit in a corner and strategically place the chairs just to not have to look at a screen.

Always adventurous, I tried their Sour Cream & Onion Martini. Our server advised that I try a small sip first. I loved it. I can see why it would not be for everyone. The flavor notes were strong and intense but true to the name, so much so that it was like drinking a bag of Lay's Sour Cream & Onion potato chips. Yum! My next adventure for my palate was from the sour section, The Cherry Sour. Full of carbonated foam when first served, this cocktail was a nice and refreshing balance.
