**EAT HERE**The employees here are hands down amazing. They are so patient and helpful. She even gave us a sample to decide if we would enjoy an ingredient in a dish. The food was fresh and arrived to our table hot. We ordered the $9 breakfast special which included an entree, potatoes and a drink. We got the breakfast burrito and the egg sandwich. I could only eat half of the burrito as it was so big and filled to the brim! It had scrambled Vital Farms egg, rice, black bean, plant-based chorizo, smoked gouda, cherry tomato pico de gallo, green chili, cumin-lime crema. That crema was delicious! The egg sandwich had fluffy Vital Farms eggs, Impossible sausage, chive pesto, smoked gouda and sriracha aioli. So many flavors! The environament is low key and has a great vibe. Did I mention that every employee was amazing?! Unfortunately, the desserts were not enjoyable to us. We got the Beet Brownie and the No Bake Cinnamon roll. Both were really dense in texture and both tasted bitter in an odd way and were not sweet enough. Even though the cinnamon roll did mimic the flavors of a regular cinnamon roll it was very heavy on cinnamon flavor and lacked the other flavors to make it complete. Found myself in a rarely-visited part of town with 2 vegan friends, and located Vital Root here on Yelp. It was a terrific choice for all of us. At 11 on a Wednesday, the patrons were sparse and the employees efficient and kind. We ordered Nachos, a Mission Bowl, and a Burger--all vegan and all delicious and freshly prepared. It wasn't noisy, and the vibe was pleasant and relaxed. Orders are placed and paid at a counter, then food delivered. There's ample seating inside, and even more on a lovely patio. The restroom is gender-inclusive. There are a few steps I could not avoid, awkward with my rollator. We enjoyed our meals very much, and were pleased to experience Vital Root. Now if there were only a store on the south side of metro Denver so we could visit more often. read more

Having recently tried El five and Root down, I figured oh if this is part of the same ownership group it must be great. The idea of having a healthy, pay at the counter but aesthetically pleasing ambiance on Tennyson seems like it would be a clear hit. However, the only thing was decent was the sweet potato fries. The pad Thai was far too sweet and saucy, to me it just tasted like a really poorly made pad Thai with limited distinct qualities. The Turkish version eggs on paper sound like they would be good however they also fell short of my expectations. With so much good food in Denver this place wouldn't be on my list. read more

We visited Vital Root for lunch on a hot day, which was perfect weather for a salad. I'm not a big fan of fake bacon or chicken, so I opted for the Vital Salad instead of the Cobb. It was very good, especially the avocado and chickpeas. (It could do with a bit more protein though.) My son had the tacos, which he didn't love. They are a bit adult, although the kid's menu is lacking. The prices have also increased, again. We love Vital Root but hope they try to stay affordable and offer some better options for kids. Great veggie spot!! We happened to walk in at the start of happy hour which was exciting but honestly not as good of a deal as I would have expected. Listed in order of preference (first = fave), we had the bahn mi tacos, veggie wings, falafel, hummus plate, and house kimchi. Have to admit I was really surprised at how much I liked Vital Root. I usually don't eat vegetarian, but was all about everything we had at Vital Root. I would definitely come back again. My favorites include the yucca fries and the Korean stir fry. The yucca fries were perfectly crispy and came with an amazing grilled banana ketchup. The Korean stir fry had a good amount of spice without being overwhelming, the cashews made the perfect crunch, and the veggies rounded the dish off. The restaurant was also so open and airy.
