This food is incredible! The fact that this is eating vegan makes me want to never eat meat again! Delicious!

While visiting Denver, my coworkers and I went to ChoLon downtown. It was restaurant week in Denver…read moreso the menu was limited but we still found a lot of items to try out. The chicken soup dumplings, pork potstickers, and the ice cream was all very good! I wasn't such a huge fan of the tufu pork belly noodles. I'm not really a fan of tofu but I didn't really like the noodle dish in general. The inside of the restaurant is beautiful and well designed. The wait staff was also very friendly. I would like to come back here and try more items from their regular menu.

I was intrigued by the dumplings, but definitely did not try them seemed a bit to modern. Malaysian noodles were decent with bit of flavor, but overwhelmingly, egg & bean sprouts with very little noodle & overcooked pork belly. It was so rough... I was really expecting some being that would basically melt in my mouth and that was not at all the experience. it made me miss San Francisco Asian food so much... as a treat myself kind of meal, it was fine, but I'm glad I went by myself rather than a date night with my husband cause I think we both would've regretted it on the plus side if there is one is that the staff we're remarkably friendly even for the lunch crowd. It was pretty slow.

Don't order the Chicken Sausage if you're picky. *** Came here on a Saturday visit to Denver around 11am for brunch. I'd recommend making a reservation. Service was spectacular. The hosts were friendly and our server was extremely helpful and made excellent recommendations. We were seated upstairs. It was 100 degrees outside so naturally we were a bit warm up there, but it wasn't unbearable. Casual vibes here - jeans, shorts, tshirts throughout. We ordered Elderflower Spritz's to start. They were absolutely delightful. Light and very refreshing. We also had their seasonal specialty Cashew Queso. It was unlike anything I've ever tasted before. The cashew flavor wasn't overwhelming, it more so added a lovely bit of creaminess to the delicious homemade queso dip. We also shared the Carrot Cake French Toast. I truly have no words for how spectacular this dish was. I'll be fantasizing about it for the rest of my days. Perfectly crispy on the outside, soft, rich, and cakey on the inside - paired with a scoop of some sort of fantastic whipped cream cheese *chefs kiss* Highly recommend getting this to share. If you're bold enough to order it as your entree, be prepared to take a nap shortly afterwards. I also ordered the "Make Your Own Breakfast" with cheddar cheese scrambled eggs and a side of avocado & home fries. It was all amazing. The portion wasn't overbearing but with the 2 appetizers we had - everyone at the table left happy. One thing to note: someone in my party ordered the Chicken Sausage and said they'd definitely get the bacon next time. So if you're picky about your sausage, try the bacon or avocado instead. Overall 10 out of 10 would recommend!!

Karen was our server tonight and for a rather busy Monday night it was absolutely phenomenal. I would recommend this place to anyone who asked. Kitchen and sushi chefs should be extremely proud of themselves for the timing, the expertise, and exquisite taste. Landon the bartender chatted with us about cocktails and happenings about Denver and such. If I am ever back in Denver, this place is number 1 on the list. The owner, the front of house, the kitchen, and anyone involved with this place should hold themselves in high regard for providing folks with this experience.

Our Omakase included a daily special recommended by sushi chef Christopher, along with kingfish and kanpachi. My favorites were the kingfish nigiri, flounder fin nigiri, and Santa Barbara uni nigiri. Everything was incredibly fresh, and you could tell the team puts real effort into balancing flavor while preserving the freshness of each ingredient in every dish. We also had a great conversation with Chef Christopher about the fish we love -- a really nice personal touch. Our only nitpick: the salt seasoning was a touch too strong on a few dishes.

My favorite was the French toast, crunchy on the outside and warm, soft, and savory on the inside. It was also good I usually don't like anything with coconut and this has it in there. Never would've guessed that's what I was eating because of the way they incorporated all of the other ingredients! Me and my friends ate the ants on a tree, the Korean chicken, sweet and sour chicken, the potatoes, French toast, and the Korean corn dog. We shared everything and all were very full by the end. Which makes me very sad. I finally tried delivery from Ginger pig, and ordered the only two vegan dishes they offer Only one was actually delivered. It was delicious. It was not a very generous portion, and the price was high for what they gave me. I stopped in once during lunchtime to see if I could try the other dish and take it to go. But they didn't offer it during lunchtime. They offered one thing that was vegan, it was eggplant. No other vegetables. Just eggplant. That is not a meal. The person working the counter clearly could not care less. I am honestly confused and disappointed that they seem so uninvested in meeting people's needs. So I consider Ginger Pig to be just another heartbreaking potentially delicious new Asian restaurant that doesn't care about those of us who choose not to eat animals.
