The burrata appetizer was perfect. We came here for our anniversary and felt very spoiled. They even included a little rum cake dessert. I still got coconut ice cream to try and it was so good! Really, really great food and a seasonal menu in a cozy environment and super accommodating staff. We had a medium sized party (6 people) with one vegan and another person with strict (and confusing) dietary restrictions. Everyone had something they could eat; the chef prepared special courses for the vegan, which she said were great. I had the potato and leek soup (the soup du jour), and it was excellent. Creamy and well-seasoned, and not too thick, with lots of rich umami from the leeks. For my entree, I had the lobster ravioli which was also fantastic. Would love to come back again-- just wish parking in St. Augustine was a little easier! This is the best restaurant in St Augustine! I take multiple out of town guests there and am NEVER disappointed. Service is always above and beyond. The food is always perfect, and the atmosphere cannot be beaten. Cozy but in the main part of the historic district, this restaurant is easy to miss since it's tucked away between other buildings and fairly nondescript. They served raw food and then embarrassed my family by having the chef come out. A little tight and my duck was overdone. Very pricey for not getting it right and causing a display when we had an issue we wanted to be handled discreetly. Too bad we were really looking forward to this also they did not return any phone calls. The ambience was off because we were too close to everybody staring at us when the chef came out to check our meal after a discreet complaint away from the table from myself. Too bad! This was our first visit to Collage. We found the space very cozy and charming, although my spouse and I both noticed a string fishy smell upon entering. The food was delicious - we each had the corvina, which was plentiful and so flavorful. We noticed that the menu lacked any chicken dish or salmon. Had my December birthday dinner at Collage. Although the menu is small there was something for every palate including vegetarian. The room is cozy and inviting, the server was pleasant and very professional. All of us enjoyed our food, serving size perfect. The food was hot, expertly prepared and plated. The wine list offered a wide range of types and prices. They knew it was my birthday and gave me a piece of buttery cake- no singing thank goodness. This is one of the top three fine dining restaurants in st. Augustine, you usually need to make a reservation a week ahead. Not sure if I caught into the hype of Collage. Was it worth bypassing all the other fine dining establishments to drive 45mins to this place? Not sure. I think it was at par with other fine dining restaurants. It was a great date night, just not exceptional. The baked Brie was our best meal of the night. The burst of flavors in my mouth transported me to a restaurant in italy. Escargot had more mushrooms than escargot. Lamb was bland. I've had better and immediately wished I had skipped it. Beef tenderloin was very flavorful. Lobster ravioli sauce was flavorful as well but nothing out of the ordinary where Lobster is concerned. Service was excellent. Didn't care for the ambiance too much as the dining room felt a little cramped. It was difficult not to eavesdrop. This restaurant was really fantastic and we had a lovely time. The service was friendly and attentive. We never ran out of wine or water in our glasses. The menu had something for everyone and wasn't overwhelming at all which is hard to do. We started with the gambas al ajillo and the fried goat cheese salad. Being Cuban myself, I feel required to say that it was not really a classic al ajillo, which is a white wine, garlic and butter sauce. These gambas came in a spicy red sauce, which we would call camarones enchilado! However, we really didn't care cause it was delicious and came with plenty of crusty bread to dip in the yummy sauce. The salad was also really enjoyable, we both loved the fried artichoke and the vanilla bean dressing. After our appetizers we were given a strawberry balsamic sorbet that was so delicious and surprised us so much we were giggling like little kids. (Could have also been the wine, tbh). For our entree we shared the branzino special with potatoes and charred broccoli and it was so amazing. Crispy skin and a delectable champagne sauce took it way over the top. We were so full but my sweet tooth got the better of me and we ordered the balsamic strawberry dessert, which was really good. Next time I would definitely go for the rum cake instead, though. So why did I give this amazing meal 4 instead of 5 stars? From the moment we walked in we kept looking at each other in fear and disappointment. While the servers were wearing masks, the tables were extremely close together in very small rooms with all the windows closed. My partner was so close to the table next to us that they were practically rubbing shoulders. We didn't feel safe at all and I would not go to this restaurant again until better safety measures are in place. read more

I wish I could eat here every week! It was approximately 100$ for two people for an appetizer and two entrees. All I can say is that it's worth it! I have been to some upscale restaurants with inventive but not necessarily the best tasting food. However, at Collage the food is superb! I highly recommend both the buttery, creamy escargot and the filet mignon with vidalia onion and blue cheese dressing done medium. The steak just melts in your mouth. This is the gem of the St Augustine restaurant scene. Simply amazing food and excellent service. My wife and I have have dined here multiple times and each time was a unique and different experience. Always amazing! I had a dinner meeting last night and once again Collage did not disappoint. Magnificent, one word for Collage. Elegant, yet subtle. The space was relaxing and toned down but felt premier. Our waitress was very friendly and had fantastic recommendations for wine and dessert pairing, truly amazing. I ate the grilled ahi tuna, my wife had the lobster ravioli. Both meals were superb. The real champion of the night was the wasabi mashed potatoes, sounds wild but it was refined. You had a smoothness of the garlic butter and bite of wasabi that left you hungering for more. Truly one of the best meals I've eaten. I'd also like to add that our waitress took the time to think about a wine selection based off our desires and choose the perfect wine for dinner. It was even close to the most expensive wine either, you could tell she knew what she was doing. Almost couldn't get in. We were in town for just two days and they did not have any reservations available. Luckily, I got a call that there was a cancelation and if I could be there in 15 minutes they would be able to get us a table. My wife got the steak with the Verde sauce (chimichurri) and I had the flounder (catch of the day) over rice, black beans, corn, with an avocado sauce around it. I took a bite out of my wife's steak and, honestly, it was probably the best steak I've had. Even if she likes medium-well and I like medium. Amongst the numerous restaurants in St Augustine, its really hard to find a gem in a sea of mediocrity. We made a reservation on the advice of a friend, and The Collage was as good as advertised.. Yes, its pricey, Yes, its not the greatest bang for your buck in portion..BUT, everything was just plain delicious and the service was fantastic (Mego was a delight). The freshly baked bread and roasted garlic was enough to warrant the 5 stars.. My chicken dish was tasty and my wife loved the lobster ravioli.. Overall, in fairness, Collage is 4.5 stars considering the portion to price ratio, but it is STILL very very good and highly recommended!! read more

The appetizers were good- not great. Beef Tenderloin Tartare was good but should have been served with toasted bread and not thin chips (beef tartare was perfect, the capers were too over powering and the eggs should have been a quail egg and not a chicken egg). The burrata was not served as cold as it should be and could have been creamer than firm, but the toasted sourdough and chopped mango chutney made up for it. The main dishes were a BIG disappointed! Just stick to appetizers! The fish medley special was served with charred white fish (very dry) and mussels/clams that were average. I originally was excited to have the baby octopus in the entree- but it was two very small pieces and were average in flavor and texture. The lamb shank was ordered medium rare and was so small that it should have been an appetizer- the mashed potatoes were basic with butter. The experience was average and there are so any other great Saint Augustine places to try- just skip this one! read more

Had dinner there on Feb 16th. I can say it was one of the top five restaurant meals I have ever had. We asked our server Harmony what she suggested for our main course. Surf and Turf. Served over a bed of Mushroom Risotto! Delicious. The filet was cooked perfectly. The lobster with hollandaise sauce was outstanding. I highly recommend this restaurant and ask for Harmony. The food at Collage was exceptional. The Burrata was fresh and flavorful (loved the apricot compote and arugula). We loved the shrimp and lamb meatballs. We ordered tenderloins for our entrees, and they were perfectly cooked, served with creamy polenta and string beans. I wish the wine list matched the quality of the food. I dined at Collage with a party of 9 including myself, and very much enjoyed the experience. The courtyard entrance was quaint, and inside lighting and mood were just right. The waiters/waitresses and hostesses were all delightful. At one point we had 3 of them simultaneously servicing us at our table between wine and apps, which made us feel very well attended to. Our main waitress, a beautiful woman named Caisha (spell check) from Poland, was an Adriana Lima lookalike and although she should be modeling, the service and experience she provided us was wonderful. The wine list was good, we very much liked the two bottles we got. The appetizers were incredible. They brought out roasted garlic to accompanyalpacas of hot, crunchy yet doughy sourdough bread to start us off, and I was extremely impressed with it. Escargot was next-- it boasted a savory buttery flavored sauce and a delicately fluffy puff pastry. I proceeded to douse some bread in that sauce too! I also got the goat cheese salad, although I wished it wasn't fried, it was tasty nonetheless. We also ordered the shrimp appetizer and it was another dish that tickled my taste buds just right. For my entree, I went with the lobster ravioli, which came highly recommended by the staff. My brother calls himself a "super taster" and while he thought it was not as good as advertised, I considered it to be fresh, creamy, and decadent. Not only was the ravioli lobster stuffed, but there was an entire tail atop the dish. I also tried my step mothers black grouper, and it was firm and wonderfully seasoned. The jasmine rice it came with was absolutely amazing and some of the best rice I've ever had, as weird as that sounds. The woman I sat next to ordered the duck, and she had to send it back because it was too underdone for her liking. I didn't try it, but from the looks of it, she was right. When they brought it back, it seemed to appear cooked enough to me, but she opted out altogether, I assume due to loss of appetite and fullness from the appetizers. She seemed like a picky lady. I didn't get any pictures from dessert, and actually didn't try it due to being on a sugar fast ... but everyone at my table loved all of the after dinner treats we ordered and seemed to have cleaned the plates right off. I'd definitely make sure to come back to Collage next time I'm in town, it's definitely the best restaurant I've tried so far in St. Augustine. read more

Oh Collage Restaurant, why don't I live nearby??? In an area filled with casual spots for all of your meals, this beautiful gem was a sight for sore eyes. On our last night we wanted a superior dinner experience and that is what we got. We made a reservation for 9:45pm because that's all they had. We asked them to call us if they had a cancellation, and to our surprise, they did! We arrived at 7:25pm for our 7:30pm reservation and had to wait out on their front patio. Someone came out and took our drink order, which was amazing. We sipped our Kir Royale champagne cocktails and met a wonderful group of beautiful older ladies who were sorority sisters on their annual trip. Boy we had fun with them while we waited for our table. Finally, at 8pm we were seated. Our server was very personable yet professional. He gave detailed descriptions and offered several suggestions as he knew the menu well. However, I feel like we were the forgotten table. Four tables were seated after us and all four finished and left before we even had our dessert. I enjoy a small wait between courses but there was definitely a lag in service the entire evening. We ordered a lovely salad, tomato soup with a tiny grilled cheese garnish, a filet, scallops and creme brulee. In addition to everything fabulous, we were also served a raspberry sorbet intermezzo to cleanse our palate. The filet was cooked perfectly and the scallops were prepared in a way that sounded a little crazy. They were amazing! I highly recommend them. The tiny restaurant makes the most of their vintage space. We did not feel crowded at all. It is classically beautiful that matched it's gorgeous cuisine. I wish I lived nearby. Completely wowed. I felt like I was dining at a top restaurant in NYC. Small menu with perfectly paired sides and thoughtful dressings. Just enjoyed my leftovers for lunch and still can't get over how wonderful our meals were especially at the cost. Completely affordable and nice wine list. I enjoyed a flounder special encrusted with nuts and a lovely lemon type cream sauce over jasmine coconut rice and zucchini. My husband enjoyed his beef tenderloin and the bite I had, has me wanting to get on their reservation list again soon! Brandon was a wonderful server and made a wonderful recommendation for wine. I'm a 30-year St Augustine resident and have dined at Collage numerous times. I was a little disappointed the last time I had dinner there and attributed that to the previous chef's, Danika Meheux, having left. Decided to give the new chef (and staff) another shot tonight. Although everything was tasty, the house salad was overdressed and the whole fried snapper was a bit overcooked, resulting in a texture that wasn't as firm as one should expect. Then I thought no, I can't just rate it 4 or 5 stars due to it being Collage. The experience was less than desired for the price point and the difficulty of getting a reservation. Our service was rushed. It was a night for us to catch up with friends and our server was rushing us through our experience. My wife wanted an appetizer and our server basically blew her off making her wait until our server had a free moment to provide service. Not what you want to hear when you want an appetizer. Once again, it was a constant hurried experience.. my wife finally had the opportunity to order and the server wanted us to order. She told us it's a scratch kitchen and we needed to hurry or it would take longer. We were in no rush. The audacity to make us feel hasty. I called the next day to come to a resolution with the manager her words were she's new, she's only been working here 3 day and it it takes time. We all have been new at something before, and the amount of money the 6 of us spent.... Collage did not prorate our meals due to her being new. The level of food and the price point should definitely be comparable with service received. Collage should look into improving upon their training protocol. I am in the customer serviced industry and I pride myself on providing the absolute BEST service I can every time. Just showing up and bring people food does not warrant you making 20-25%. This is THE upscale restaurant to eat at while in St. Augustine. Reservations here are a must as the place is tiny (two rooms with about 6-7 tables each). We secured an early seating on a Sunday night. Walking in, the vibe inside felt intimate and the wine was flowing at every table. The incredible meal began with fresh bread, basil infused olive oil, and fresh garlic. We chose the escargot for an appetizer. It was baked in a pastry and included quite a few mushrooms. I think there were more mushrooms than escargot, but I loved the flavors in the starter. My husband and I each chose a seafood dish for the main course. The diver scallops I had were sweet and tender - the caramel popcorn sauce added a unique and sweet spin to it! My husband had the shrimp and scallops. I had a bite and the flavors were different from mine (his more pesto based) but also a great choice for a dish. They forgot the crisped prosciutto on my plate, but brought it out before I had even taken a bite. Otherwise, the service was excellent.
