Not knowing what to expect, we asked a few questions and wanted to make sure that the onions were cooked and not raw in this dish, and asked the chef to leave them on the skillet a little extra. This special request seemed to throw our server for a loop, he said he'll have to translate and disappeared into the kitchen. When our sizzling dish arrived, he warned us the plate was very hot. Chunks of quality tender sirloin steak, green onions and cilantro on top, white onions cooked underneath. A fried egg sizzling on the side, with a crusty base stuck to the plate in a very delicious way.. It was everything I could do to keep from scooping up all the leftover gravy and eating it with a spoon. This dish has the most savory sauce, great for the rice! A nice pile of veggies on the side, traditional sliced cucumber shredded lettuce carrots and herbs. I asked for a side of fish sauce vinaigrette, like they would use on the vermicelli ball and he happily brought me a small container. I used this as a salad dressing and then finished it on the rice. Wow! We have been coming to this same restaurant through three owners, and it has always been delicious. Viet Bites, is no different. The menu has been updated to more authentic Vietnamese cuisine. Our normal "go to" order is the Pho combination with steak, brisket, meatballs, tripe and extra tendon. This is phenomenal. I added the bone marrow pho, which is new, "to me," and equally delicious. The Banh Mi is offered with different proteins, but my favorite is the barbecued pork. The Banh Mi is served with pâté, if you enjoy the pâté taste, order extra to be added to the sandwich. Also, the Banh Mi is traditionally served with a baguette, the toasted roll will also suffice for my taste. The appetizers are just as scrumptious. Service is quick and polite.
