We had a 6:30 reservation and were seated promptly at 6:30. Gabi, our server was very friendly and prompt getting our drink order back to the table. I started with a small crock of French onion soup which was very flavorful and refreshingly light on the salt. The entrees came out in perfect time and temperature. We both had the filets cooked medium rare with mine served Oscar. Each steak was cooked as ordered and tasted exactly as we had hoped...delicious!... and the amount of crab meat on my steak was heaping to say the least. I am forever grateful to the chophouse for an incredible evening celebrating my son and daughter-in-law to be on the evening of August 29, 2024.. we were planning a destination wedding in Vail and I was in charge of the rehearsal dinner for 60 people and welcome party for 150 people. I had never been to Vail so most of the planning was site unseen. I worked with Stacy throughout the process and she continued to calm my nerves and make things easy for me. She helped me plan a beautiful Italian buffet, a nicely designed table layout, microphones for speeches, and the chophouse is very own homemade Limoncello at each place setting to cheers the special couple. She even brought in a chef from one of the Italian restaurants in the area to add a special touch to the meal. After dinner, we welcomed 150 guests with an incredible display of hors d'oeuvres and desserts. The indoor area worked perfectly, the bartenders took care of our guests Incredibly and the indoor and outdoor space was just perfect. Not to mention the beautiful view surrounding us. Again, I am forever grateful to Stacy and highly recommend the Vail Chophouse for any event. I also want to mention Joey. I met with him the day before the event to go over any last details. Overpriced and underwhelming. The waiter was in the weeds so we waited 30+ minutes for him to come back for our dinner order. I assume this is a staffing shortage and not his fault. The charcuterie board was heavy on the prepackaged cheese and light on the meat and accoutrements. The steak on my Caesar was flavorless and expensive. The asparagus was impossible to chew. The mashed potatoes had zero flavor and had the texture of instant potatoes We had a party of five and 20% was added for a large party. I don't mind this practice in touristy areas but 18% is more reasonable when the prices are inflated and a good portion of the bill was wine. $700 for five people!!! I love the sister restaurant in Beaver Creek, but this one, not so much. This seems like it's the place to be for après, less so for fine dining. We came on a Thursday at 6pm, there were still crumpled up dollar bills all over the floor (this is part of the après festivities where live music, often played by the owner, occurs and people throw money at him), and the place just felt dirty. The floors were filthy, many of the tables had not been cleared after guests had left, the bathrooms were dirty. At the BC Chophouse, you feel like you're at a nice steakhouse, here just feels like any typical restaurant. Disappointed. Hotel concierge said this place was fine dining. Decent food. I had the sea bass, my husband had the NY strip and my daughter had the salmon. The salmon was a little on the overcooked side but everything else was wonderfully cooked, including the sweet potato fries. The place didn't seem so busy so I couldn't understand why they didn't allow us to dine earlier than 8:30pm which was a little late for us. Staff seemed to enjoy themselves more than ensuring patrons felt tended to, so it made the place less "fine dining" with professionalism.
