Me and my family visited Gessner last weekend for dinner while staying at Grand Hyatt. The ambiance is really nice, very classy with those mountain views, but the food was a bit hit and miss :( We ordered the chicken breast, which I was really looking forward to. The meat quality was good, no doubt, but it was lacking that punch of flavor. it felt a bit bland, like they forgot to add something. My wife got the pesto pasta, which was better, but still too dry for our liking. It had good flavor, but needed more sauce to make it perfect. Service was excellent. The presentation of dishes was nice, though, and the place is super clean and fancy. Overall, it was above average. read more

Atmosphere is quite nice weather you are sitting outside or inside beautiful view of trees, mountains and river agnostic of the season. Service is friendly and tried to be accommodative. Most the dishes we ordered for breakfast were quite bland: think hospital food. The chilaquiles were particularly disappointing, and the Ava avocado toast was average at best. The elk sausage was an interesting savory novelty but it could be a little less salty. Overall space, ambiance, and service were in line with my expectation but the food was a miss. read more

This place is not great. Came for breakfast and would stick to the market going forward. Ordered the mixed fruit for the kiddo and not a single berry was included. What place doesn't include berries for kids? It was all cantaloupes, melon and pineapple. The potatoes included on my plate looked amazing but lacked seasoning. The eggs were huge and were good. The French toast tasted like the ones you can buy at a grocery store. Even tho they look picture perfect, it lacked everything else. The service was ok. The ambiance was nice. The food and atmosphere gets a solid 4-5 stars but I'd give the attentiveness of staff, and food portions a 2. Side dishes at a steak restaurant can usually be shared - NOT here. The restaurant was less than half full on a Saturday night so service should have been exceptional, but it was lacking. So if you want good food, don't care about the price, and feel laid back enough not to check your watch, this is your place. read more

It took 30 minutes to get seated with no body in line ahead of us. When we were being seated, we saw 10 tables open. Short staffed? The breakfast buffet had a good mix. Omelets we're ordered through the waitress and took 25 minutes! By that time, we had all finished our meals. Coffee refills took a long time as well. For the place not being so busy, why the long wait? Short staffed? 20% gratuity is automatically added to the bill which I'll never agree with....especially since service was below average. We only came here for breakfast each morning during our 3-day stay at the Grand Hyatt so I can't comment on lunch/dinner. However, the breakfast was wonderful especially their à la carte menu. We never got the buffet since we're not big eaters early in the day. We were fortunately enough to try basically every menu item during our stay, sometimes twice. My favorite dishes were the beet toast, chair 20 omelet and the French toast. French toast was exceptionally good to share for the table as dessert for breakfast. read more

Was looking forward to a meal here. Ordered the charcuterie board the person who brought it could not say what kind of meats were in it except for it's from an animal. The steak was not cooked how I asked and could not eat most of it. Sat outside and was only checked on a few times. Was hoping for dessert but no one came back out to provide a dessert menu or give us the check so we went in and asked for the check which took another 10 minutes. This was our anniversary trip and I wanted it to be lovely, most of it was but dinner was a bust. Do not recommend. read more

Wonderful breakfast place that turns into a bar in the evening. Conveniently located in our hotel, they open bright and early at 7am. We visited 3 times, and every time, there were people waiting to get in. So budget some extra time if you're tryna hit the slopes early! We got their breakfast buffet, which is $35 per person and includes eggs, bacon, ham, an omelet made to your preferences, yogurt, oatmeal, fruits, smoked salmon, pancakes... literally any breakfast item you can think of! They've got the best earl grey too! :) Service can be a little slow here depending on how busy it is. But great food options are available! They also have an a la carte menu as well. read more

This is a hotel restaurant which makes it difficult to really compare or compete with other dining options. Realistically it's closer to 3.5 than to 4 but it's not a 3. . Also, while they required a reservation, the exact same menu is available in the hotel bar and lounge which had plenty of seating to walk up to. What we ate: - beer cheese fries - pretty good - pretzels and cheese - they were warm and the cheese was too thin to hold onto the pretzels - meat and cheese plate - very good but we were told there were 3 meats and it showed with only 2 - pizza - not good; doughy and sweet sauce - steak frites - very good. Expensive because it was wagyu but it was tender and flavorful - pastrami sandwich - very good. - twice cooked wings - very good. Small but crispy and tasty - cocktails - all were excellent; wine list was also pretty good even by the glass choices So summary - Ambiance - 3 out of 5 (basically dimly lit) - Service - 4.5/5 (friendly, attentive, but bar service was hampered by only having 1 guy on duty to support restaurant, bar, and lounge by himself) - Selection - 3/5 (probably better than most hotel restaurants but it was very average) - Flavor - 4/5 (seasoned well, good concepts) - Quality - 4/5 (prepared well, fresh) - Price - 3.5/5 (cocktails and steaks were overpriced) Net is just above 3.5. read more

This is my 4th time in this restaurant. The las 3 times where during winter and it was amazing so I was really happy to go one more time now at summer. It was a waste of time and money. Food was mediocre. Fungi pasta taste like they put mayo on it. Horrible wine (we chose it as we wanted a good californian wine we took the most expensive in the list and was so awful) salmon was over cooked when we ask medium rare. I believe this used to be Atwater on Gore Creek. Then they redid the Cascade Resort and we got Hotel Talisa and Gessner! I love the large space. We had the option of dining in the lobby, bar, or main restaurant. The food and cocktails were delicious. The spinach and beet salad cannot be missed. Their version of a negroni cocktail was also amazing. A little pricey - I would consider this a fine dining experience. The service and presentation was impeccable, even for lunch. The restaurant/hotel offered free cookies at 4pm along with a free champagne tasting. Bar specials from 4-6 pm including a $10 cocktail, bartender's choice. Cocktails were $14 a piece normally. The Vail bus system will get you there, just ask for the Cascade stop. read more

We were attended by Olivia, and she was excellent; really fast and paying attention to the details (We were picky ordering, so she had to come like 3 times :)). Didn't want to go back out, so stayed in the hotel. My fish had very little taste and while I like white beans, there was enough white beans for 3 people on the one plate. There were other items I asked for, but they were out. Staff was very busy and I had to ask to be served after sitting for 10 minutes. Guess this is the reality of hotel food? read more

My family and I came here twice during our recent stay at the Grand Hyatt and had great meals both times. It's a hotel restaurant, in Vail, it's expensive. If you're looking for a good cheap meal you're bound to find it somewhere in the valley. But this was convenient for us and we all agreed it was our favorite spot of the trip. While it might not be convenient if you're staying elsewhere in Vail, it's a great option if you're over in the Cascades Village area. They don't get too packed during apres ski hours and it's easy (at least during our stay) to make a same day reservation in the evening. Our first meal was a casual quick bite at the bar after a long day of traveling. I opted for the Beyond Burger (big props for having vegan options here) which was pretty much your standard burger made with Beyond Meat, though it was thicker than the patties you get at the store. The rest of my group split orders of pizza and wings which they raved about. We enjoyed being able to sit in the lounge area on big comfy chairs. Though, at one point during out trip we came back for beers after skiing and the service was less attentive at that hour, so we moved to the bar. We came in for a more formal dinner the next night. Once again, a handful of vegan and vegetarian items peppered the menu to make me feel right at home. I ordered the black bean tournedo which was essentially a black bean patty surrounded by a spicy squash puree (more soup like than puree, IMO). The flavor of the dish was outstanding and earned the approval of even the steak eaters. My boyfriend devoured the bison cannelloni and my family all enjoyed their steaks. They ordered the sauce on the side and did not care for it that much, so something to consider if you're going for a steak. Our server that evening was wonderful and attentive. He knew the menu backwards and forwards and was just a generally nice person to have waiting on you. I wish I remembered his name! This restaurant probably is more of a 4.5/5 review in my book, $28 for a black bean patty is a little excessive even given Vail prices, but it was a truly enjoyable meal. This was the best hotel dining experience that I can recall. The staff are all polite, knowledgeable, and efficient. I had the bison chili 2x and tasted the tomato soup- outstanding and generous portions. They serve the best grilled cheese with soup. You've gotta try it. Their version of an old fashioned was tasty along with their tequila Gessnerita. No need to go out for every meal while staying there at the Hyatt. It's a great property too. read more

If I could give zero stars, I would. We had a group of about 13, tonight. My end of the table had about 6 of the 13. Everybody's food was either cold, over cooked, or just downright terrible. One of their specials tonight was a 18 ounce bone-in ribeye. Upon asking the chef what the USDA Quality Grade on the steak, we were informed that it is USDA Choice. I have never had a steak priced so high for so little value. It took almost 3 hours to finish our meal from the time that we ordered until we finished. I had no idea what this place was called my entire 4 night stay at Hotel Talisa around Christmas. We ate here our first night because we were too exhausted to venture out to lionshead. Not very crowded so no reservations required. I had low expectations honestly because in my experience, hotel restaurants aren't particularly noteworthy for the most part. The place is kinda fancy, I guess keeping with the theme of "luxury" or whatever. Prices are high for the amount of food you get. Wouldn't be particularly problematic except we had spent the past 7 hours trying to control our descent down various mountains, which is pretty energy consuming. I was hungry after consuming a walnut and goat cheese salad, scallops with risotto, and cheesecake. I can't complain about the quality of the food - everything was presented beautifully, salad was fresh, scallops were seared nicely, risotto was creamy. Desserts were made in house (I think?). I tried the apple strudel as well and enjoyed it. Service was above average for sure. Waiter (don't remember his name) was friendly and attentive. We had questions about menu items and would go to the kitchen to make sure he had the correct info to give us. Overall, this place is a solid option, though I'd still recommend making the trip to one of the larger villages for more options. read more

I had dinner at Gessner the other night with friends, and it was fantastic. I initially ordered the 18 oz Ribeye, and our server Charlie suggested the dry aged cut. It was a treat. 18oz is a lot of steak and I cleaned my plate. The service was great throughout. The manager stopped by and checked on our table halfway through the meal, and I could see he was genuinely invested in his work and the service they offer. Being at the Cascade Village, Gessner is a little bit out of the way, but they did have a shuttle to transfer us back to the village and it was well worth it. One more note to point out... Their peanut butter cheesecake is likely the responsible culprit for some newborns in the world. Absolutely divine. read more

If you are looking for a place to sit at the bar with great service in Vail, this is it! It's outside of the village (in Cascade Village) but it's way less crowded and the service is 100x better than what you will find in Vail Village. The bartenders are so nice, kind, and fun to talk to. They are excited to be at work and are excited to serve you - even if they are overwhelmed. Charlie and Bryan are the two bartenders that served us and they are some of the best we have experienced out of anywhere. The drinks are made perfectly and they love getting to know the guests. We have loved the bar atmosphere and amazing service so much that we made reservations to eat here tomorrow. Highly recommend!!!! read more

Had a wonderful meal yesterday evening. The house made vinaigrette was light and a perfect compliment to the salad. My bison burger was cooked exactly as I requested. Since I like my meat medium well, I was thrilled when it was medium well and still juicy. The tomato jam add a nice piquant touch. My husband had the tomato and beet salad with added chicken. He raved about the flavorful chicken. And the beets and tomato salad was very tasty. We will definitely come again. read more

I'll start by saying that the service was great! However, the food... that's another story. Honestly, I never complain about food but this was worse than eating Raman Noodles in college. We went here for breakfast. It's a nice restaurant located inside Hotel Talisa. The ambiance is nice, the staff is friendly, overall restaurant was clean. You can order al la carte for breakfast and the price varies depending on what you order (bowl of cereal $8, toast $5,etc)or you can get the breakfast buffet for $32 per person. The selection was decent (scrambled eggs, potatoes, bacon, fruits, yogurts, juices, smoothies). I give it 3 stars for a couple of reasons: 1. I know we are in Vail but really $8 for a small bowl of Honey Nut Cheerios, 2. The staff was friendly but a little slow on bringing water, the check, or just clearing your small plates while dinning. I'm not sure I'd be back to try dinner or lunch one day. read more
