I asked for an allergen menu and they did not have one. I'm intolerant to soy and asked if they had anything without it. They said yes, then proceeded to bring me miso ramen (which is basically all soy). I told the waitress it tasted like miso, and she didn't know that miso had soy in it. She left for about 30 minutes and brought me a new dish that was supposed to not have soy in it, but it did. Now I am feeling absolutely horrible. I wouldn't have ordered anything if they said that soy was used in every dish. Very disappointed and I will be in discomfort and pain for the rest of the night. read more

What a pleasant surprise! I knew they had only been open for about 6 weeks, so was tentative to try, but had read some good reviews. We had a large party of 11 (which has it's issues simply in size!) and I have to tell you every one of us thought this place was fantastic. We are from LA, but had two Boulder locals with us. Went here for our anniversary since they serve a very special drink in a whole pineapple. The drink was killer (literally)! The pineapple rings served with the drink were boozy and delicious. The reason for the 3 stars was the sub par waitress as well as very bland ramen. With all the buzz about this place I was expecting an outstanding broth and one of the best bowls of ramen around. Wow! This place rocks! Edwin Zoe has come up with a winner in Boulder. Korean seafood soup, Soon Dubu, had great spice and seafood flavor. Stuffed with calamari, shrimp, cabbage. Yum!! Homemade Ramen noodles were outstanding. Chow fun was delectable. Edamame with Chile sauce was a robust surprise. Open only 2 weeks. Great start for a new offering in Boulder, thank goodness!! I ate here tonight with 3 other friends. The total bill was $120 with 3 drinks. The food was mediocre and tasteless. If you've ever had real ramen, this place doesn't even compare. The broth was too simple and the rest of the bowl was rather bland and it was overpowered by the taste of sea weed. The dishes are scattered from all over Asia, so the menu doesn't make much sense. The papaya salad was very overpriced ($15 for a small pile of shaved and dressed veggies). The table next to me was complaining that the bao bun was too sweet and undercooked. Service was not great. 1. Reduced menu. not a complaint, just an update as the options are a good bit reduced because of covid. I am not sure how this place got 4 stars, but I know how it got 2. Below average food. How average is this? Good enough you won't necessarily refuse to go back. However, plain enough you'd suggest something/anything else and certainly never take someone there. The Staff was VERY nice and helpful. I expected more but the honest truth is that the food is a snooze. The apparatus for making the ramen noodles is prominently displayed as you walk in. I was thinking it was a good sign, but no. Among the must un-memorable noodles i've had at a noodle house in quite a while. The Miso was the same. Shockingly, the veggie bao we purchase couldn't muster enough interest to eat 50% of the thing amongst 3 people. My best recommendation is to go elsewhere if you're interested this fare. Or just don't eat. $70+ later, I wish I'd skipped my meal and just had a beer. I'd have been MUCH happier. read more

This place supposedly had great ramen so my wife and I went there on our last night in Boulder. We both ordered ramen. My wife's was just OK but mine tasted like watery oil, I took two bites and couldn't eat any more. The waitress came over and took it away when I told here it was inedible, she said it would be taken off the bill. I had lost my appetite and didn't want to order something else. My wife finished hers and the manager came over and apologized but then brought the bill which she had reduced my ramen by 20% but had not taken it off the bill! What the hell? Who still gets charged for a dish that is horrible?! We had to ask her to take the whole thing off. She said that she would have to talk to the owner in order to do that.... why should I have to ask for something to be taken off our bill when I took two bites and couldn't eat any more because they screwed it up? I have no idea what all the 5 Star reviews were talking about. The food here is mediocre at best. My wife wanted something Asian and so we decided on this place based off of the reviews. The service was good and the people are very nice, that is the only reason I bumped it up to a 2 Star. I hate to say this but for how much it cost, the portions were small and the food, not very flavorful. And we almost tried everything on the menu, including the lobster ramen. It was hard to figure out what cuisine this place was, they had Chinese, Japanese and Korean. Instead of focusing on one and executing it well, they diversified and came up short. SMH. read more

Went on recommendation from a friend. Atmosphere was nice, and the cockyails looked good too. The ramen just didn't taste as good to me as others in the area or a short drive away. It just came down to taste for me. I might send someone here to stop by for drinks or an appetizer, but it's not the 1st place I'd mention for ramen. read more

Fantastic! The food was phenomenal. I got the chimera and added a soft egg and baby bok choy. My husband got the red ram and added the same items to his. We got the kids some edamame (just to keep them busy they had eaten before we got there) and they ate all of that and ended up stealing some of my noodles and broth once they tried it because they thought it was delicious. Pros: Service, atmosphere, location And the food? Meh. I've never been to a ramen place before and came based on reviews. I ordered the GF noodles (rice noodles) and they were slimy. 2 small pieces of pork belly sat on top of my Chimera ramen, and they were also slimy. The broth had an interesting flavor, not in a good way. I think the best part of the bowl was the egg. My kids love pho and any noodle soup, they weren't too thrilled with this and said it was "greasy." Husband got the bulgolgi, which was good, but small portions for the price. I think I'll find a good pho place next time. read more

If you're a foodie, Chimera is hands down, the most delicious, authentic, healthiest ramen in Boulder. Great place for a date night, or taking a friend or family member that's in town. I was thrilled about gluten free ramen and the corn and pork belly was amazing, I mentioned it several times throughout the meal! Yet, they didn't have any spicy ramen and the only thing to add spice is chili paste which is not spicy, more flavorful than anything. For the price of food the service could be way better, our waitress disappeared and only came back to deliver the check. Probably will not be returning but I won't tell people not to go...unless they want spicy ramen. read more

Wow! Talk about exceeding expectations the server was adorable and friendly! She took perfect care to make sure all questions were answered and food was brought promptly! The manager paid extra attention and we even got a visit from the owner! Truly amazing ramen! Genuinely the chimera ramen had spectacular flavor! I drank every last drop of that broth! The duck bao was flavorful and fluffy. The wings were refreshing and delicious! Don't forget the duck dumplings. The sauce is really sweet and tastes of maple syrup. My daughter and I stumbled upon this gem while wandering the shops on a Saturday night. The restaurant was nearly full and the only free table seated 4. Rather than make us wait for a 2-top to come available, the hostess sat us right away (thank you, we were really hungry!). They eventually asked to take our two extra chairs to put at another table, which was perfectly fine with us (I thought it was nice that they asked vs. just whisk them away like most places do). Our waitress welcomed us promptly and gave us a quick overview of their menu. The menu is somewhat small & limited, but I have found that this can result in very good food (focus on quality vs quantity) and that was definitely the case here. We split the duck dumplings (thumbs up!). My daughter had a vegetarian ramen dish - large portion, lots of quality ingredients, very flavorful broth. I had the "Everybody Chow Fun" (wide noodles, chicken, veggies) and at first glace decided I would only eat half of it since the portion size was plentiful...however, I somehow managed to devour all of it. :-) Other reviews mentioned the kitchen struggling to keep up - we did have a little bit of a wait for our food but it was acceptable and our waitress checked in on us often. The place was completely packed and when we left, there was a line out the door waiting for seating. We arrived around 6pm, so on the early side of the dinner hour - so definitely try it out, and get there early! read more

The servers let me use the bathroom twice and then I went to go again and the chef told me I could not use the the bathroom again. If you cannot offer a bathroom to the paying costumers then why are you open? Very upset about this situation.. I will remember that next time someone suggested eating out at chimera. Wow, the broth was out of this world. It was piping hot. Everything in the bowl was absolutely delicious and if you want some added spice, they have some really great sauce or seasoning for that. 3 stars because my boyfriend loved his dish, but mine was sub par. He got the chimera ramen and said it was great and flavorful. I got the seafood pan noodles. They lacked favor and texture. And the waitress said it was her favorite item! I asked them to make it spicy and it came out bland. Bummer, because it was $18. Would love to go back and try the spicy red broth ramen, however after this experience I will likely not be back for a while. Pork bao and soft shell crab bao were pretty good though. read more
