We had dinner at Chimera this past Sunday night. Wow! This is the BEST ramen I have ever had. The broth is a combination of chicken, pork and duck broth--an amazing flavor profile. The homemade noodles were delicious. And, to top it off, the service was off the charts, from: -David, who was our bar server, -Brodie the General Manager who kept checking in on us and made us feel right at home -Cole the chef, who took the time from his busy schedule to come out and greet us -Edwin, the owner, who--likewise--took the time from his busy schedule to come out and introduce himself to us. I feel bad about what I'm about to write because we had an excellent waitress, but with that said, just do yourself a favor and buy a ramen package from the store, top with corn and boiled egg and you'll have the same bowl I got. Holy Moley this place is excellent. We have known the owner for years and seen every one of his concept restaurants. When he focuses on the Asian regions, Boulder gets some of its best food from Edwin. The decor in Chimera is sexy and chic. A great first date experience for sure. The food is outstanding.... the wings; whatever the rub is on them, open up your taste buds. The crudo is beautiful and the roe on top gives it a perfectly balanced saltiness. I had the butter lobster ramen and my man had the seafood pot (paleo). We were in heaven. Our 7 year old ate the Chimera Ramen and loved every bite. She also enjoyed the pork belly boa. Edwin has perfected the bun. The sake list is strong and the cocktails creative. For dessert, the Giant Fortune cookie with macha chantilly was unexpected, fun and delicious. We ate at Chimera last night in Boulder. Honestly? Only place we could get a reservation. But.... wow! Is this a new restaurant? It was amazing.... start to finish. Great food and service! Truly a great meal. All I can think of is it's a new place? Being from out of town I wouldn't know. We were thrilled to have a fabulous meal while thousands of people were standing around waiting for food that for sure was not this good. Next time aim in Boulder I will eat here again. My wife and I were walking around the main strip and I was craving pho/ramen. This is the only one we found on the strip and it's terrible. I got the lobster ramen and it was nothing but butter. I had to ask for something else because it was turning my stomach. Got the Miso Happy and it tasted awful as well. Normally I can stomach through some bad food, but I stopped after a few bites and decided to just go somewhere else. Wife's add: I ordered the chicken curry Udon. The curry and chicken were decent enough, but the udon noodles were literally a booger-texture. When my husband asked for a replacement on the lobster dish, they obliged (and quickly) however no refund was offered- that's a $17 difference, plus tip. The tip is automatic, 15%; also, if you plan to pay cash be advised that they will not give change. When they refunded, they did not refund that pseudo-optional tip either. read more

Delicious baos and ramen! Their menu is pretty small, but everything we had was very tasty. We were lucky enough to stop by just before happy hour ended at 6pm, so we got some drinks and baos as appetizers. Their pork belly bao was especially great! Cute new place. Had the vegetarian ramen, which wasn't my favorite because the miso broth was a bit bland. Luckily I'm not a vegetarian, so I added some of my friends broth from the chimera ramen and it was much more flavorful. They have a lot of gluten free options which is great, but I was hoping for better gluten free noodle options for my ramen like a rice noodle instead of clear noodles. I then had the seafood hot pot,delicious. The men had the lobster ramen and declared it also delicious. The short ribs were a bit disappointing, as they were very thinly cut and a bit tough, though tasty and served alone...just not appealing on the plate. We were seated at the window table where the AC was so strong we had to ask to have it turned off. The seats are backless stools...surprisingly comfortable. GREAT Ramen, but thats not all they serve. I have tried Ramen at more places then I can count, and this by far is the best I have had. The noodles are house made and I found the texture to be nice and toothsome. The broth was rich and very flavorful. My ramen came with pork belly, enoki mushrooms, seaweed and a soft egg and corn. The presentation was beautiful and makes you want to take a minute looking at it before digging in. You can tell there was a lot of thought put into the decor and it makes for a comfortable atmosphere. Staff was friendly and seemed happy to be there. The co-owner (Brodie McNeil) introduced himself and gave us some history of how Chimera has come about. He is enthusiastic and passionate about making the restaurant the best it can be and he seems to be on the right track to make that happen. I am a ramen snob of sorts, so when I say this was flavorful, rich, and authentic you can trust that you won't be disappointed. We also had one of everything on the happy hour menu and reordered a second round--yummy. For drinks try the pineapple mojito- it goes down a bit too fast and is so refreshing. Some of the best ramen I've ever had! Just got back from NYC where we went to our friends' favorite Ramen restaurant there, and the Ramen here blew it out of the water. By far, Chimera was our best dining experience while in Boulder. I ordered the buttered lobster ramen bowl and my spouse ordered the steak and kimchi lettuce wraps. For an appetizer, we ordered the mala wings. My spouse ordered a dry cider that was absolutely delicious and would have ordered a second one but they ran out. Everything was seasoned and prepared well. The drinks complimented the food perfectly, even my iced tea. The service was also great and the ambiance was wonderful. The owner came by our area and introduced himself as well as checked on the quality of our dining experience. He even gave us some sake to try which was very hospitable. We would definitely go back to Chimera when back in Boulder. I would highly recommend it to anyone who loves quality Asian food. We had the pleasure of eating here last night! Wow! Were we impressed. Not only was the service impeccable but the food was as well. My daughter is allergic to dairy and coconut and they accommodated our needs with the chef making my daughter a special and amazing halibut dish. I was a bit saddened to see a line at Pasta Jay's and no wait here. Pasta Jay's is good....but so is Chimera. I thought.... the word just is not out yet on this fabulous restaurant. Overpriced, bad asian food, bad fusion food. The menu is limited and not cohesive. We went on a Saturday afternoon, expecting something new - in the style of Mr. Jiu's in SF. When we got there, the waitress was not friendly, but the main problem was with the food. We got duck dumplings, which sounded interesting. However, the filling of the dumplings was not ground duck with traditional dumpling preparation, but just haphazardly chopped up duck meat stuffed into a store-bought wrapper. My friend got the ramen - poorly seasoned. The only good thing about it was the one piece of pork belly. Otherwise, it was effectively tasteless. My Korean seafood stew was good, but also lacked seasoning and spice. Overall, subpar, especially for what I expected. read more

This is a new restaurant with many of the problems associated with new restaurants. I thought the food was delicious, the drinks -Mai Thai and 7th chamber,seal,heart (I don't actually remember the name) were nice and fresh and boozy, perfect for a Friday evening out. Hot matcha green tea was gritty and viscous... bleck. I ordered the Everybody Fun Bowl which was tasty chicken, baby bok choy and wide noodles. Others had the Korean BBQ, delish but small. We ordered some of the dumplings with our drinks and were told they "take some time"... drinks came and went, dinner came and went, still no dumplings. When we asked the wait person he defensively said "I told you they take time".... we waited..... and wait ..... and wait 15 minutes after our meal was done and the dumplings arrived. I expected that they would be a party in my mouth but sadly there were just dumplings. Train your waitstaff better, encourage them to acknowledge that there was a mix up in the kitchen, comp something, bring something else over but don't tell us that the dumplings take an hour and 30 minutes! I will probably wait six months for them to work the lumps out, fire a few poor wait people and then give it another try. Loved this place! We tried the pork belly and soft shell crab bao which were both really great. Also got the duck dumplings to start, which again, were spot on. For entrees we had the chimera ramen which was enjoyable and the bahn mi, which had a large portion size and was very tasty. For dessert we had the dessert bao which were to die for! Fried bao with green tea whipped cream and some kind of chocolate that was heaven on earth. We also had their rum punch drink (served in a pineapple!!) to share, which was awesome. Overall, great experience, helpful and friendly staff, and great environment to be around. We were even greeted by the chef/owner (?) during our meal which made us love it even more. This is hands down one of the best restaurants in Boulder. Their elevated street food is flavorful and fun. The appetizers are the restaurant's true innovation. I had the duck buns and then ordered two more. Their spicy edamame is addicting. Ramen at Chimera is also very good it has a clean but rich broth and fresh noodles. If you have had top notch ramen before you will be disappointed here. The broth had no depth. The use of sweet chili sauce with several appetizers along with togarashi spice fatigues the palate. Maybe a bulldog sauce with the duck. The cucumber salad could be improved. They were crunchy but no flavor. We tried this restaurant after reading a rave review in 5280. Seriously overrated. My husband's chicken in his ramen tasted like pre-cooked frozen chicken. My Korean BBQ was even more disappointing. It was described as grilled, thin-sliced marinated ribeye but it was more like chopped up mashed meat. The marinade was over powering. It was served as lettuce wraps with toppings and a small side of rice. For $26, I have never left a restaurant so hungry. I wanted to ask for my money back. The service was great and other guests seemed happy but we won't try this again. Maybe we just have a higher bar coming from authentic ramen places in California. But Boulder in general has let me down at about 80% of the places we've tried. Like this place, many are pretentious with great presentation and stellar ratings, but end up overpriced and lacking taste and satisfaction. Bummer. read more
