I wish they were warmer, but alas, everything is scooped out of a buffet-style assembly line and I believe I got the end of a batch. I also got brisket and it was divine. Great crust and smoke ring, lovely flavor and a not-obscene amount of fat. The location is great with indoor and outdoor seating, but the music is a little loud (my age is showing) for a random Wednesday afternoon. Also, I was there when they were offering $2 domestics. I was told it applies to anything in the cooler at the front, but there were also coronas in the cooler which I absentmindedly grabbed and had to put back. Asked if we could split a quart and get two pints. One person said fine but he was overuled. That seemed a little absurd. I've heard it said that you'll either get good meat or sides at Texas BBQ restaurants but never both. That's definitely not true here. I get the Brussels sprouts and potato salad and macaroni and all are amazing. Then you get to die for brisket and ribs (which I usually don't eat because ribs are not my go-to) and the sausage of the month. I've had both the pimiento cheese and Chile relleno sausage and can recommend them both. The service is great and the restaurant is clean and pleasant. I love it here!! read more

We passed by Stiles Switch multiple times so when my buddy asked what I wanted to eat for dinner and I suggested Stiles Switch he was a little surprised. "Barbecue again?" Yes, why not? He had never been so he couldn't really vouch for it but it looked pretty popular with it being 'COVID packed.' The layout is pretty Texan, you go down the line pick what cuts/meats/sides you want with your tray. I ended up getting the 2 meat, 2 side plate, brisket and hot link with potato salad and I was convinced to try the pinto beans with brisket, guaranteed that if I didn't like it I could get another side. I'm not a beans guy so I eye the mac and cheese as a back up. Before I get to that, let me talk about the rest: the hot link, I think that often times it's 'spicy' is relative and for me, it was ok but not at the heat level I would have liked, it's not just for hot links but anything that's labeled 'spicy;' not melt your face off but maybe a light bead of sweat on the brow. I also got the moist brisket which was good. I'm a full convert to moist, fatty whatever you call it brisket. Now, the sides. I liked the potato salad but DAMN she was right about the beans and I REALLY don't like beans; I skip them entirely at Chipotle, that kind of dislike. Potatoes cooked through without being mushy, not overdone with mayo, had some flavor, again it was good. Onto the rib, can you say peppery. It was a definite pepper taste but if you add the BBQ sauce, it killed some of the pepper. I finished it in record time because there was hardly any meat on it. Too bad as pork ribs are my favorite. Finally taste was the tomato/cucumber salad, I asked for the feta cheese on top and it was barely there. The dressing was also barely there. When it was announced that the Switch was coming to the CP I jumped for joy as I'm a huge fan of their Lamar location. My enthusiasm was tempered as I had previously visited their location in the Drip and my experience was Meh. Well, I am pleased to report that if you are a fan of their original location you will not be disappointed. We have dined here twice during the Rona and they are practicing strict social distancing guidelines. Let's talk their BBQ. The two big smokers out back are producing Fabu BBQ that rivals their original venue. Their brisket is moist, not over spiced, and have has a beautiful smoke ring. Their St Louis ribs are AOK with a nice peppery crust. Like a spicy sausage then order their jalapeno link. I'm not a sides guy as I prefer to load up on protein, but.... their pinto beans with brisket is spicy and full of awesomeness. Their coleslaw has a nice spicy surprise as well. My Plus 1 was also raving about their Mac and cheese. Last but certainly not least service is top-notch and friendly with frequent check-ins while you are dining. There are plenty of TVs both inside and on their patio. They also have a decent craft beer selection on tap. Don't be discouraged if there is a long line. Everyone is six feet apart and the line moves fast. Order their two meat plate with two sides and a draft beer and you will roll out stuffed or have a nice snack when you get home. It's probably the most authentic central Texas style barbecue around unless you want to go to Lockhart. Although we prefer sit down and order restaurants, this one like most barbecue places, you walk up in order at the counter. The brisket is delicious as well as the jalapeño sausage. The rest of the barbecue menu is also very good. I really enjoy the cucumber, tomato salad and my wife absolutely loves the brussels sprouts, which I believe are deep fried with a balsamic drizzle. Yes, they have the standard barbecue sides as well like potato salad, which is also quite good. The staff is always friendly and quick to get you served. Slowest line I've seen. If you see the line at the little bike rack outside expect 20-25 minute wait outside and then another 15-20 minutes inside. So you are talking 35-45 minutes or so. Line had about 16-18 groups of people - most are 1 or 2 people groups. And this is a social distance line. The cool thing was they did offer a free beer ( Coors or Miller light) once when I was in line- I politely decline. But that seemed more random that at an interval - took me 40+ minutes or so to get through the line and saw them offer the beer once. Cool gesture. Guy manning the door was nice. I got a to-go order and unfortunately you cannot order online or call in orders which is frustrating. I got a 3 meat plate with 2 sides. We got the brisket ( above average), sausage(average), and jalapeño sausage(really good). Our two sides were mac and cheese - it was mild cheese and better than average and a tomato/cucumber salad. That 3 meat plate was able to feed myself, my wife and my son. Yeah we could have ate more but we don't want to stuff ourselves. Side proportions were pretty small imo. Inside looked awesome! Located in a shopping center, the parking was more then adequate. The restaurant itself felt open and spacious with an outside dining area. The food options are pretty typical of what you would find at a Texan BBQ establishment. I had the brisket and pull pork with mac and cheese and corn casserole on the side. The mac and cheese was okay and the corn casserole was a little dry for my tastes. The brisket I thought was very tender and favorable and was my favorite part of the meal. Combined with the sauce they place on the side it was a total win. The pull pork for me was dry, but one of my co workers thought it was good. Was excited to check out the new location up north as we've been patrons of the Lamar location for years now. Its a great place to bring folks, very cozy seating and inviting atmosphere. Waited for the post launch hype to die down to avoid the crazy lines and went on a Thursday afternoon, and thankfully we hit it at a lull. I particularly like Stiles for the sides, that always stood out. They do things a little different from most joints. The meats were great- Brisket was moist and fresh, ribs fell off the bone, pulled pork was a bit lacking in seasoning though. I think the bbq sauce was unusually watery during this visit which kind of dampened my enjoyment of that meat. Probably a fluke but worth noting. This is one of the few joints with fries, and they're amazing. Try out the hawg fries, the potato salad is buttery and fresh, the beans have brisket in them and they offer a lighter cucumber and tomato salad. All the sides are elevated compared to other joints. And if you're a Coke or Pepsi fan, worth noting this is a Pepsi joint (minor disappointment). Either way, awesome to have this joint in Cedar Park! I came here with my family after a day of water activities. We got the family meal that feeds 4-6 with 2 extra sides and a frito pie. It came with brisket, pork ribs, and jalapeño cheddar sausage. For sides we got corn casserole, potato salad, tomato and cucumber salad, and Brussels sprouts. My favorite meat was the ribs. It was the perfect texture. The brisket and sausage were pretty good but not as good as the ribs. The sides were all so so good. My favorite side was the Serrano glazed Brussels sprouts. Although I wish it had been crispy on the outside, the flavor was great and the heat level was perfect. The corn casserole was a bit dry but tasted good. The potato salad and tomato cucumber salad were pretty great too. I liked how they topped off the sides and garnished it. It was a nice touch. The slices of bread it comes when were really soft. I would def recommend coming here on an empty stomach. (One negative- I saw a girl leaving the women's bathroom without washing her hands when I first arrived. I saw the same girl behind the counter. I got a two meat plate with brisket and ribs along with brussel sprouts and Mac and Cheese. The wife was craving a frito pie. The ribs were exceptional. Loved the flavor and super moist. Though the brisket was decent, I felt like one of the slices had too much fat on it. But it was tender and good as well. My wife's frito pie was massive but tasty as well. Seeing brussel sprouts as a side was definitely interesting, not your typical side at a BBQ joint. It was done pretty well, had the right kind of heat. Just wish the brussel sprouts were more crispy instead of drenched in the balsamic sauce. Beer selection is pretty good, have a lot of local ones on tap.
