The Slope Room used to be Terra Bistro and overall it's improved quite a bit. The new decor is very trendy - creating a hip/modern atmosphere. The food is very good. My Filet was one of the best cooked steaks i've had in a long time. No problems with the staff, our server was very nice and attentive; however, echoing a lot of the other reviews the cons to Slope Room is the food service takes a very long time and the price is borderline outrageous. I'm not sure if we'll be back to visit again with so many other options to dine at in town. read more

Made reservations for dinner during our trip to Vail and so far best restaurant and experience we've had. The service was top notch. Our server promptly refilled our water when we near empty and made sure to make himself available multiple times during our meal to make sure we didn't need anything. The food was also top notch. We had the lamb shank, filet and Wagyu strip and nothing was left on any of our plates. Also a great selection of sides. I've been to Slope Room twice in the last 2 months and I'm absolutely loving it. First, the renovation is stunning and they took the somewhat tired Terra Bistro interiors and completely transformed it. It manages to be chic and glam in the evening and cozy and welcoming at brunch. Dinner was delish and among the 2 couples we had the hamachi crudo, beef tartare French onion soup, seared salmon, wagyu steak and roasted chicken. I would recommend all of them. Cocktails are to die for! Also highly recommend the sticky toffee pudding for dessert. Brunch with 3 girlfriends before we headed back home was equally good. Avocado toast, salmon lox and vegetarian bagel- yum! It feels more like a private Club at brunch and we hung out for a while as it was so welcoming. Review here is mixed. We had a fabulous breakfast Sunday morning. Male barista working made my hot tea to perfection - but of milk and honey. The avocado toast was extremely delicious. And the house made croissants were the perfect mix of fluffy inside and gently crisped exterior. The food and service was so good we came back for dinner. The drinks and food were great but the female bartender seemed annoyed with our questions about the restaurant. She did not make us feel welcome. We came back Tuesday morning for breakfast again and the barista was overwhelmed. The orange juice, my milk and honey, and my fruit mix was forgotten. Located inside Gravity Haus, Slope Room is one of the newer fine restaurants. We were there back in April and had a early dinner so it was still a bit quiet. Good looking restaurant with a lot of promise. While I rarely ever comment on the prices of entrees, we thought the food was good but better bang for your buck elsewhere. While the wagyu was great, the bison and paella were good. Time will tell but Slope Room can be one Vail's better restaurants. read more

My husband and I spent our honeymoon this past weekend in Vail and went to the Slope Room for dinner on Saturday night. We both have said that this meal was one of the highlights of our trip! Every server and manager was so gracious, attentive, knowledgable, and made us feel like our night out was truly special. Their cocktails were unbelievable (we both LOVED Smoke and Mirrors) and I dont think any description of the food does it justice. Their watermelon and burrata salad was incredible; so flavorful and the dressing was SO good. We had the tenderloin and halibut and it was truly the best meal we had all trip. We were sat at 6:30 and they were already out of one of the main sides as well as had to substitute a second side. We were also told that there would be blackberry cobbler, which was also not served. Wow! I did not expect the amazing dinner experience that I had. First of all, the staff are wonderful. We had the pleasure of being served by Joshua and Alex and not only were they extremely professional, they were easy to talk to and definitely looked like they loved what they do. They walked us through the menu and gave us such great suggestions. The chef Ulises Salas is amazing. We enjoyed everything that we ordered. We started with the Pork Belly - to die for, the flavors, textures and visual were all over-the-top amazing. We had a delicious gem salad that was so beautiful to look at and equally as delicious. Our entrees were also stellar. The 24-hour beef short ribs and the King Salmon were excellent. I want to go back and try EVERYTHING on their menu! Their cocktails were also AMAZING! I had something with a Japanese Gin and shiso...can't remeber what it was called but it was sooo tasty. I can't wait to go back to this amazing restaurant with the nicest staff and super talented chef. Me and my family had a very pleasant experience at Slope Room Vail. As we walk in, we are met with a homey and very aesthetic scenery. Our waiter was very attentive, polite, and fun to chat with. We ordered the Gulf White Shrimp and Sourdough Naan as appetizer, which was delicious. Sourdough in the shrimp appetizer was a little soggy, but that was to be expected. Sourdough Naan with the stracciatella was absolutely delicious, could've used a little less salt. The naan was crunchy flavorful, but still chewy like proper bread. Still amazing. I ordered the blue corn tamale, which was delicious. It was a light dish, however, and I wish there was more to it. My family ordered the cook's venture chicken, mountain view pork chop, and king salmon. Everything was delicious, but everyone wished there was some kind of grain or starch that came with the dishes to make the meal more fulfilling. We loved the space and enjoyed our time at the bar. The table was pretty but the split couches made it uncomfortable for our group of 5 to sit. The menu was nice albeit a bit overpriced ($86 for a chicken, $43 for the vegan entree). The portions were quite small, 2 pieces of cauliflower in the (yummy) appetizer was really bizarre. On to our disappointing entrees. The majority of us could not eat because the food was so salty. Nearly everything we ordered was so incredibly over-salted, including the side dishes. We sent 1 entree back and left half the food over. It was even more upsetting considering the size of the bill. I'm hoping this was just a bad night for the Slope Room cause it was a bad night for us! read more

Cheese dip, gnocchi Mac and cheese and salmon in particular were excellent, and I'm comparing the salmon favorably to my frequent salmon dinners in the Pacific NW.
