Empanada appetizer was delicious--I could have eaten several of those! I also got the wedge salad, with prosciutto and fennel I believe, a slice of avocado. The guys enjoyed their short rib and fried rice--short rib was tender and absolutely delicious. It was pricey but it's also Vail, I'd recommend this place for some good food. Excellent food in a bistro atmosphere tucked on the lower level of Vail's main commercial street, facing the creek. Short menu with contemporary American choices. I really enjoyed my rotisserie chicken which was tender and flavorful. My partner had the octopus and prawn paccheri, a dish that was new to us. The seafood was cooked to perfection. Upon arriving at Mountain Standard on a Thursday night we were met with a bustling restaurant and a packed bar. Despite the long line at the door we were quickly seated as we had an 815 reservation. Service was very prompt and within a few minutes we had two tasty cocktails in front of us. We asked our server for some menu highlights and he pointed out the Pimento Dip, Bone marrow, pork shank, and trout bo saam. The Bone Marrow and Carparccio was a lot in one dish. We were advised to mix everything together but found that the saltiness of the bone marrow overpowered the Carparccio. Both were delicious but should have been separate appetizers. The Bo Saam was one of the best dishes I have ever had. The crispy trout was perfect for the lettuce wrap and who would have thought a house made buffalo dipping sauce would bring it all together. This was easily a 1 Michelin star dish. Unfortunately, we were so full we ended up not getting desert. Definitely expensive but in line with other top restaurants in Vail. We were looking for a restaurant that would serve the "essence of Colorado", but we hadn't found one until one of the hotel staff recommended Mountain Standard in Vail. After making our reservation, we headed out to Vail from Beaver Creek, assuming we would be there way ahead of time. We did not realize that the car park was around 5-8 minutes walking from the restaurant, so I was glad that they didn't mind us being a bit late. The ambiance was cozy with dimmed lights, and our very friendly hostess guided us over to a corner table with a view of the outside snow. After going through the menu (and perusing Yelp pictures), we settled on three dishes, the Bone Marrow to start, my main being the Coffee and Cocoa rubbed Quail, and Meredith having the Rocky Mountain Trout. We stuck with unsweetened iced tea, which had a bit of a mango flavor. The bone marrow came out first, beautifully plated. As expected, the marrow was fatty, and very rich. The tiny little potato latkes on top helped cut down on the richness somewhat. We both agreed that the grilled bread (soaked in butter) was overkill...ordinary, or simply grilled bread would have been a better accompaniment. My main, the quail was phenomenal. The root vegetables were earthy, rustic and not overwhelming. The quail was tender, plump and the crusting was perfect, and the quantity substantial...I easily had two to two and a half quail on my plate. Meredith Rocky Mountain Trout was very tender, perfectly cooked. The sauce was a bit unusual but had a great mouthfeel and lightly sweet taste (it was made from apples). The accompanying vegetables only served to enhance the taste. Overall, a wonderful meal, and a great way to cap our stay in the ski areas of Colorado. TL,DR: I would come here again. The Chicago Dog Porchetta was good and did remind me of a Chicago dog, but the Mushroom Flatbread was just awful. If you're thinking about ordering the pork shank - just order one. Huge portions. Should have gotten two quail dishes instead - was probably the best dish of the night. Wagyu steak was fantastic as well. Shrimp and grits were a bit underwhelming. Bone marrow came with too much bread and not enough actual marrow. The potato hash on top of the marrow was also extremely burnt. Drinks were fine. Mr. Pink has no alcohol taste. Margarita was GREAT. Had a better experience upstairs at Sweet Basil. This place gets my vote for THE BEST meal I had while visiting Vail. Each dish we had was original, very flavorful, and cooked to perfection. We started out splitting the "standard" wedge salad and I have to say the name was the only standard thing about it. It was the most original wedge I have ever had- and the tastiest. Full leaves of fresh romaine topped with an original dressing (not blue cheese dressing) Blue Cheese, avocado, crisp Prosciutto and puffed farro instead of croutons make this salad a must have starter. As my main course I had the Loch Duart Salmon, which was Salmon with Brussels Sprouts, Coal roasted sweet potatoes, apple yusu dressing and Korean chili. The flavors all came together well, the spices perfect. Again, very original. We also had the rotisserie chicken and honestly it was so good I'm not sure which dish I liked the best. The service was wonderful and our server Rachel knew everything there was to know about the dishes, the ingredients and the history of the restaurant. The only negative experience that we had was not being able to get in for reservations again during our stay- we were there over a weekend and they were all booked up. If you are going to be in Vail make sure you have a reservation well in advance of your time here, its well worth it! read more

The first time I came to Mountain Standard was years and years ago, when they were the new, shiny restaurant on the block. We loved our meal so much back then that we had to return when we found ourselves in Vail again, though this time, the dinner reservation was much, much harder to land (and deservedly so)! The service is as friendly and well-paced as ever (there was a slight timing hiccup with our biscuit, which ended up arriving while we were in the middle of our mains, but our server, Ryan, provided us with constant updates while it was baking.) The drinks are super strong, creative, and well-mixed, and the menu has that Southern comfort with some global flair. (It also has those Vail resort prices, so just be prepared.) Favorite dishes included the "Standard" wedge salad, which is so good, our table remembered it from five years ago, and we actually all said we wanted to order it at the same time! The wood-roasted bone marrow, served over toast, was absolutely delicious, and the crunchy bits on top added textural interest to the dish. The coffee and cocoa-rubbed quail with dates was like a punch of flavor reminiscent of Middle-Eastern flavors (though some members of my party swore it tasted more East Asian). And the corned pork shank, with meat so tender, we didn't even need a knife to tear the meat away from the bone, felt like a nod to German pub cuisine. I have to say, the biscuit, which I remembered so fondly from a few years back, felt smaller, denser, and less buttery than back then, and I'd probably skip it next time. Don't make the same mistake we did: save room for dessert at Mountain Standard! They had a really incredible apple bread pudding on the menu, and it was so decadent and delicious, but we were so, so full we just could not finish. (Note: their ice cream and sorbet selection was very limited: I think they had vanilla and cinnamon ice cream, and then apple-cinnamon sorbet, so I guess you had to really like cinnamon that night.) Mountain Standard also has a great happy hour with the friendliest bartenders: one bartender heard that we were following the AFC divisional game score and lent us his phone so we could watch! They also make an incredible hot chocolate using steamed milk. The restaurant feels as exciting, welcoming, and inspired as when they first opened, and I'm already looking forward to fighting for that coveted dinner reservation next time I'm in Vail. read more

We made a reservation and In the 25 minutes we waited for an outdoor table after checking in early, we saw four parties seated outside. We were told those parties were walk in's and get first pick on outdoor seating. Don't make a reservation just walk in, the front was very unhelpful and unfriendly. By far my favorite restaurant this year. From start to finish, was so good. We started with great cocktails, I had the Old Fashion, my husband had the Manhattan. Both were perfectly crafted, loved the crystalized ice in my drink with the perfect orange peel. We picked the roasted olives to accompany our cocktails. As a starter we shared the whipped goat cheese, mushroom toast, OMG, a must. We shared the roasted carrot, kale salad, so inventive, great salad. I chose the salmon entree, seared rare with crispy brussel sprouts, caramelized roasted sweet potatoes, so good, the plate was beautifully plated. My husband had the trout, he is still talking about it. We had no room for desert, as the portions were large. The whole meal was so good, service was really excellent, atmosphere super nice, we had a booth. We had wines by the glass with our dinner, nice wine list. Took forever to get our waiter and he was slow the entire night, but no big issues. Started out with the Pimento Cheese Dip and the Octopus. The cheese dip was tasty but nothing memorable. The octopus was succulent and fresh. Now for the entrees... Oh Pork Shank, how I dream you. Hands down the most tender, flavorful pork I have ever eaten. I almost cancelled dinner plans the next night to come back for it again. The potatoes were perfectly whipped, the gravy deliciously salty, the meat was tender, and the little crispies on top just took it over the edge. Mouth explosion. My husband had the salmon and said it was good but he would try something different the second time. Dessert was a chocolate peanut butter cake. Honestly, this place is overrated. I have eaten at the finest restaurants in the world-Osteria Francescana, French Laundry, etc, so know my way around a restaurant. First of all, and a positive is that the ambiance and environment is terrific. That is where it ends. The service was awful. Our waiter clearly had no interest in taking care of our table. There were 2 of us. He took 10 mins just to tell us that he would be back soon. He never offered my wife a drink after shel clearly told him she wanted one with her meal. He never refilled our water glasses and at the end by and large dropped the check on the table and scurried away. WRT the food, it was average at best. I will say that the salmon spread was pretty good. Not great, but good. Needed more flavor. My "tri-tip" was cold and tough and the steak knife had a hard time cutting it. My wife even commented that I was working quite hard on cutting it. The au gratin potatoes were a stack of potatoes with cheese sauce poured on top. Definitely not your mother's au gratins. Overall, I give it 2/5 stars for ambiance, but would not return. read more
