I noticed Hal walking through the bar checking on guests and also assisting the servers as needed with drink and food orders. We were seated at the window which had stunning views of the local village and mountain. Our servers John and Augustina were excellent. They never left us waiting for service and continuously checked in on us. We ordered dirty martinis which were served nice and cold. The only negative about the martinis would be the glasses are smaller than what martinis at most other places would be served in so it is simply a smaller serving. However, the wine was a generous pour. For bites, we ordered the Pimento Cheese which was served warm with baguette. So tasty. The beef + blue toasts. This was okay but not our favorite. The burrata salad. Very refreshing and delicious. Since we were not staying at the Weston and had to valet, they were kind enough to validate our ticket. We ultimately were gathered in the hotel lobby to take us back to the speakeasy - the welcome drink was a super nice touch! The speakeasy itself is fairly tiny - seats about 30? It felt super swanky and loved all the wood - felt like we were somewhere back in the 30s. The cocktail connoisseur behind the bar, Danny, makes you a custom made drink based your preferences. They can of course make standard drinks but what fun is that? In their menu, they have a list of the most popular liquors (gin, vodka, whiskey, rum, etc.) and then flavors that typically pair with those liquors. For example, I wanted some sort of whiskey sour and asked to make it with peach or ginger flavors. Christian is a dedicated young man, and as I told him he is like "an old soul in a young body". I mean that with the highest regard! He is completely squared away, he was personable, kind, and friendly while still tending to all of the guests that were there. One thing that impressed me the most is how he kept his bar so organized.....he has an incredible attention to detail... before he served any drink, he put a straw in it, pulled it out with his finger held over the top of the straw and sampled a taste of the drink, and then would throw the straw away. I've only seen this done at a few establishments, which I can tell you Cecilia is at the top of the list and the epitome of a wonderful experience! The only thing I would ask in return is that the owner of Cecilia's please recognize Christian for all of his efforts. Too often in life, people are very quick to complain about a negative experience and as a result, no one will take the time to reward positive experiences. Great crowd and we had a lively time. 2 nights later we went back for the same BYO Old Fashion and I gave the bartender (different from prior visit) the ingredients; Rye, angistino bitters, orange bitters and thats all! Over a single large block of ice. They were out of Ang bitters (???) so i substituted walnut bitters. It happens, no biggy. They arrived at the table and were over small chipped ice. Wrong for a bourbon drink. She said they were out of blocks (8:00???) It was full of simple syrup- yuck! I discreetly took it over to the bar and asked what was in it, it was terribly sweet and not what we ordered. She said she puts simple syrup in them. I told her that is not what we ordered in the BUILD YOUR OWN. And asked her to remake it. She stormed to the table and said she would have to charge me for the new drink since that is how they make them. I asked her isn't it a build your own? And said forget it just throw the damn thing away. I'm done. I had nothing and we left. Be careful to explain it is build your own and you get to tell them how to make it.

That is like going to Red Lobster and being told they are out of seafood. Carrots are literally the rabbit's entire brand. Absolutely unserious behavior. Then we ordered a dessert drink that supposedly came with bunny ears. It arrived earless. At this point, the rabbits weren't the only things being chased..... Just when we thought the evening couldn't get stranger, someone walked past our table and crop-dusted us with the confidence of a person who had diplomatic immunity. I cannot prove it was the hostess, but spiritually, I believe it was the hostess. The breeze had authority.
