This was our first meal to kick off a week in Vail, and it was a great way to start the trip. I'm usually not a big fan of raw fish, but this place honestly changed my mind. We tried the crab, tempura, grilled fish, and several sushi rolls, and everything was fresh and delicious. Even the sushi was something I genuinely enjoyed, which is pretty rare for me. We ended the meal with shaved ice, which was a refreshing way to finish dinner. The service was friendly, the atmosphere was nice, and everyone in the family enjoyed the meal. First of all, this restaurant is beautiful. Located above the Ice skating rink in vail village, the restaurant is large with high ceilings and very welcoming. There is a gorgeous bar, a separate omakase room, and large dining room area. I will continue to go back to Matauhisa to any of their locations simply for their miso cod. The appetizer lettuce cups are delicious and we ate them too quick to even picture but the main miso dish is one of my favorite of all time. The yuzu olive oil sauce is so good it can drink it. The nigiri was all so fresh and the powdered miso on the fish special made it so savory and delicious. The uni shooter was amazing with uni quail egg and sake. Overall the food meets the high end criteria that comes with the name and price, definitely an all time favorite place to go! read more

The miso cod & spicy tuna never disappoints, those are a must! Ask about the house special rolls because we are so glad we did, we even ended up ordering 3 more.... For apps we got the cod lettuce tacos, edamame, crispy rice with tuna, & salmon. All were amazing. We each got different cocktails but all were so good. Went with the bento box & rice pudding for dessert which were both incredible but I personally think the bento box is the way to go. The tuna truffle special was out of the world flavorful that I was honestly shocked with the amount of flavor and taste I was hit with all at once. Nice restaurant with floor to ceiling windows and they had the doors open, but it was hot during the first half of our dinner even though it was a 7:30 reservation. My friends and I dined at Matsuhisa this past weekend and had a very nice experience. Our friend who has dined here in the past took control and ordered for us. The service was superb. Between the food runners bringing the food out and our waitress always being present set the tone. The food was really good, but the wagyu wasn't worth it. Everything else was really good. I do suggest the bento box for dessert. The molten chocolate cake was hot and oozing chocolate filling. We sat out doors and the views were breathtaking looking into the mountains. We were SO looking forward to returning to Matsuhisa since we were last here in 2/20 (during the epic snowstorm). Matsuhisa has always been our favorite in Vail, however, the food fell really flat and was so disappointing. The sushi looked good but didn't taste fresh. Definitely was not memorable. The food was very good overall, though the nigiri portions were quite skimpy--the fish was thin, especially considering the price, which was higher than top spots in Denver like Sushi Den or Temaki Den. However, the non-sushi dishes, like the crispy rice, black miso cod lettuce wraps, and sizzling cauliflower, were excellent. The service truly stood out--each time we used a plate, it was promptly replaced, and we felt very well taken care of. We went to Vail to ski at the end of February and beginning of March. First time staying in Vail so we relied on concierge from our hotel to make dinner reservations which ended up being all very similar restaurants. So after the first two days we started asking for recommendations and Matsuhisa was one of them along with Chasing Rabbits (see separate review). We tried making reservations but they were booked three weeks out. Told we could try to walk in if we showed up a little before 5pm. So a couple days later, we showed up a little after 5 and had to get in line but were seated within 20 minutes. As we were walking to our table we were greeted by the sitting patrons to "Irasshaimase". I stated laughing thinking I was in an episode of Curb Your Enthusiasm and was expecting Larry David to pop out. Maitre'd told us the place was crazy for a month after that episode of Curb aired. My wife isn't a fan of Sushi but found a wonderful spinach salad with dry miso, parmesan, and grilled shrimp to enjoy as her main meal. We also snacked on Edamame and skewers of beef and chicken. I had the Blue Fin Tuna sashimi special and a separate order of sushi. The service was great and the food excellent. My wife tried the Gardener drink special which was flavorful with a little bite to it. The Gardener can be made with Tequila, Gin, or Vodka to suit your taste. The deserts were outstanding. My wife was in heaven with the rice pudding and I got my chocolate fix with the Bento Box. (See pictures of most of our meal). Looking forward to stopping here again next year. Have been eating here since 2019. It's a really nice setting with meticulously prepared food. I do not eat seafood, but those that I come with say it's among the best sushi and seafood they have in any given year. The restaurant can be very loud so if you have hearing issues, keep that in mind. Like any good Japanese influenced restaurant they also know how to prepare the land lubbers food well. Their veggie tempura is great as is their beef and chicken. It's always cooked perfectly and seasoned well. Their sauces are a nice balance to bring the flavors out of the meats. I'm a big fan of the mushroom soup and shishito peppers as a starter. In fact, the peppers come with a sweet miso sauce that I think pairs well with all of the meat dishes; I end up supplementing with it as I nibble away on other items. If you have a hankering for some of the very expensive Wagyu options, you can order a teaser in their Wagyu roll. It's "only" $20 and is a satisfying and tasty piece of beef. If you want to go for the full experience, you can order the Wagyu on a salt stone or just as steak in 1 oz increments. It adds up fast, but it is decadent so you don't need too much. Unfortunately, service is where the restaurant tends to fall flat. It's ok. Some servers are great, but most are clearly working to move the deck chairs around and get people out. It's fine as this is one of those rare experiences where the food compensates for the mediocre service, but it does consistently leave something to be desired. The plus side is if you need something there is always a floor lead or manager nearby and they are on it. Additionally, the "bussers" are competent and provide backup well if you have a question or need anything. All in all, you won't be disappointed, but book as soon as reservations open up during peak season or you might be standing outside looking in at all the deliciousness. read more

What an amazing meal. We came to celebrate my parents 49th wedding anniversary and the staff, food, drinks and ambiance were outstanding. My sister coordinated with Max (one of the managers) and Matsuhisa Vail took care of everything. From a customized printed menu to a large circular table overlooking Vail mountain to accommodating our party of 10 (with two kids under 4) and fantastic waiter Nathan (and many others who helped bring/bus food and drinks) this was what a nice meal is meant to be. We had so much good food. We stated with edamame and Shishito peppers. The peppers came with a delicious dipping sauce. The yellowtail jalapeno was sliced perfectly and dressed delicately with yuzu soy. The other all star was the bincho truffle with miso, chives and yuzu dressing. Each piece has a generous amount of truffle on top for a satisfying bite (and we each got two pieces) The cocktails are worth mentioning. My sisters enjoyed the gardener with gin, serrano pepper, cilantro, ginger and lime. I personally loved the whiskey sour. I believe it has Japanese whiskey, something that made it pinkish in color and just a perfect blend. They have a huge list of sake, wine, champagne, etc. so you have plenty to choose from. We tried three of their salads and the mushroom was the best followed the spinach and hearts of palm. The Colorado lamb chops were well cooked with a choice of antichucho sauce (smoky and a bit spicy) or teriyaki (good but sweet). The crispy spicy tuna is an adventure. Take a crispy rice tot that you dip in sauce and then add spicy tuna to. Addictive. The Alaskan Black Cod Lettuce Cup was good but not a favorite. The Japanese eggplant was also good but the sauce used is very sweet. The nigiri and rolls were a nice way to end the meal with super fresh fish. This was my most expensive meal of the year and the best. To family, good food and Matsuhisa! read more

Loved the food at matsuhisa. It's authentic Japanese food with both sushi and warm food options. We had the vegetable and yellowtail rolls and they were divine. As a couple we also shared a seafood soba noodle soup and the kitchen / server was so kind to serve the soup split into 2 bowls. The seafood were so well cooked and the broth was delicious. We also had a salad and tempura for appetizer and they were not bad but not as amazing as the sushi and soup. For a landlocked mountain town, Vail is rich with great sushi places (Joy Sushi also is wonderful). Matsuhisa is my fave. Tucked inside the posh Solaris complex, this sprawling sushi place has some of the best sushi chefs around. Ask them for the freshest nigiri, and you're sure to be steered to something different than your usual yellowtail. Or try the House Special Roll, a nice gf spin on the rainbow roll. read more

Service was amazing we never really had to look around for help with anything. To start I ordered the Hamachi Jalapeño which was delicious and by far one of my favorites. I will say this is a dish you can order at almost all sushi restaurants but I will say the flavor made it better than most of the places I've ordered it. Second I had the tuna taco wasn't really what I expected and I probably wouldn't order again. Not that it was bad just plain. For my main entree I had the scallops on a bed of Brussel sprouts which was amazing and I highly recommend trying if you're a scallop lover. First time eating at the vail location. I think the Denver spot is much classier and holds the dress code well to keep the higher vibe. This one was very all over the place. They lost a star because the portions are just so small. And the menu was a bit limited compared to their other branches. The rock shrimp was the only decently sized item. The oyster shooter with the quail egg and sake combination was a little questionable at first but once you swish it in your mouth like advised, delicious. New style sashimi is always amazing. The tacos were very very bland at this location. Wouldn't recommend (we got the tuna and a beef). The hamachi jalapeño was good but it's hard to mess that up. The lava cake was excellent. I wavered on whether this is 4 or 5 stars. Needless to say when had a great meal. Eating at the sushi bar is always fun because of the interaction with the sushi chefs. And that's what we did. We went with our regular favorites and added a few exotics of which one was a raw oyster with uni and some other fun stuff. This was an "off menu" favor that the chef did for us. I came here to celebrate my anniversary with my girlfriend, and I was truly lost for words. Excellent cuisine; I indulged in the omakase experience, which left me speechless. The service was also top-tier; Jeff and Ryan were incredibly kind and helpful. The staff acknowledging our anniversary was also very nice; my girlfriend ordered ice cream at the end adorned with chocolate that said "Happy anniversary." Small things like that go a long way. The charming, large space gives you that high-class feel just from looking through the monstrous windows from the outside. Whenever I'm back, I'll make it a point to dine here again. read more
