This was our first meal to kick off a week in Vail, and it was a great way to start the trip. I'm usually not a big fan of raw fish, but this place honestly changed my mind. We tried the crab, tempura, grilled fish, and several sushi rolls, and everything was fresh and delicious. Even the sushi was something I genuinely enjoyed, which is pretty rare for me. We ended the meal with shaved ice, which was a refreshing way to finish dinner. The service was friendly, the atmosphere was nice, and everyone in the family enjoyed the meal. Overall, a really great dining experience and easily one of the highlights of our time in Vail so far. We'll definitely be back.

Nigiri selection

First of all, this restaurant is beautiful. Located above the Ice skating rink in vail village, the restaurant is large with high ceilings and very welcoming. There is a gorgeous bar, a separate omakase room, and large dining room area. I will continue to go back to Matauhisa to any of their locations simply for their miso cod. The appetizer lettuce cups are delicious and we ate them too quick to even picture but the main miso dish is one of my favorite of all time. The yuzu olive oil sauce is so good it can drink it. The nigiri was all so fresh and the powdered miso on the fish special made it so savory and delicious. The uni shooter was amazing with uni quail egg and sake. Overall the food meets the high end criteria that comes with the name and price, definitely an all time favorite place to go!

Miso Broiled Black Cod with Miso

The miso cod & spicy tuna never disappoints, those are a must! Ask about the house special rolls because we are so glad we did, we even ended up ordering 3 more.... For apps we got the cod lettuce tacos, edamame, crispy rice with tuna, & salmon. All were amazing. We each got different cocktails but all were so good. Went with the bento box & rice pudding for dessert which were both incredible but I personally think the bento box is the way to go. Service was TOP NOTCH & the ambiance is amazing. 100000/10 must go!!!! (Spicy tuna roll has my heart, Chef Nobu knows what he's doing)

Sashimi

By far, some of the best sushi I've had in the states. The tuna truffle special was out of the world flavorful that I was honestly shocked with the amount of flavor and taste I was hit with all at once. The udon was just okay, but the other sashimi rolls were fantastic. The drinks were also good and the service as well as the setting/atmosphere.

My friends and I dined at Matsuhisa this past weekend and had a very nice experience. Our friend who has dined here in the past took control and ordered for us. The service was superb. Between the food runners bringing the food out and our waitress always being present set the tone. The food was really good, but the wagyu wasn't worth it. Everything else was really good. I do suggest the bento box for dessert. The molten chocolate cake was hot and oozing chocolate filling. We sat out doors and the views were breathtaking looking into the mountains. The only con was that on Saturdays they have a dj playing in front of the restaurant which made it tough to talk. Otherwise a very nice experience.

Shrimp tempura roll & salmon roll

We were SO looking forward to returning to Matsuhisa since we were last here in 2/20 (during the epic snowstorm). Matsuhisa has always been our favorite in Vail, however, the food fell really flat and was so disappointing. The sushi looked good but didn't taste fresh. Definitely was not memorable. The best part of the meal was the shrimp tempura, salad and the cocktails. Service was superb so would give 5-stars for that.

Incredible atmosphere and service! This place was hyped up and it delivered. The Sake, Cocktail and wine selection is a legit. The food, exquisite, lots of small bites and larger entrees. Ask for Dan behind the bar, super knowledgeable!

Sizzling cauliflower

4.5 rounding up to a 5 because the service was impeccable. The food was very good overall, though the nigiri portions were quite skimpy--the fish was thin, especially considering the price, which was higher than top spots in Denver like Sushi Den or Temaki Den. However, the non-sushi dishes, like the crispy rice, black miso cod lettuce wraps, and sizzling cauliflower, were excellent. The service truly stood out--each time we used a plate, it was promptly replaced, and we felt very well taken care of. While I think it's one of the better restaurants in Vail, I might be biased because sushi is my favorite!

Everything here was amazing! They were super busy but our server was still on top of it. Family friendly but also great spot for a date. The whitefish crudo was incredible! They also have amazing cocktails.

Unfortunately this place has really fallen off lately. We always have amazing service and super knowledgeable waiters, however, the sushi is just not worth the price at all. Been wanting to try the upstairs bar though since it always seems lively/fun, so may have to come back and give them one more shot...

Giving this a 4 star food was excellent, so delicious everything, service is quick and nonstop and we got seated earlier than our reservation, only complaint is the waiters hovering waiting for you to finish but overall super good food, and such a cute little place

This is a decent chain sushi restaurant. Too loud for me but some people like the busy atmosphere. Food is fine but not memorable.

What is the attire for a Thursday night?

I've seen everything from casual to dressy. I always dress for the ambiance and they have a very elegant one there

If you want authentic Szechuan this is the place! What we got: - Wonton soup - homemade dumplings had a good ginger and garlic flavor. Big enough for two as an app. - Double cooked pork - absolutely outstanding. Big portion with vegetables, fermented black beans, so good! - Spicy crispy fish - highly recommend this if you like spicy food. I love this dish whether the chicken or fish variations and this might have been the best I've had! I can't say enough about the Chinese food. We were blown away with how good they were. Our server Patrick was incredible. He was so friendly and welcoming. He's a serious skier and you can often find him backpacking 30+ pounds of cooking gear to make fresh food slope side! We have tried many places in Vail and I highly, highly, highly recommend this place. The interior is small so I recommend making a reservation. Pro tip: it's BYOB so bring a bottle of wine or a few beers!

We dined on June 18th, their reopening night. Omakase and some dishes were not yet available as one of the former or expected Chefs was not yet working in the restaurant. We sampled about 7 or 8 dishes and they were all pretty good. Spicy Tuna Crispy rice which seems to be a universally found dish these days was very good as was the Miso Black Cod. I was surprised at the pricing of the A5 Wagyu at $58 per ounce, way above the norm, perhaps a misprint. Both Sakaba and Wild are overseen by Executive Chef Jasper Schneider, a graduate of the French Culinary Institute in New York and a student of Eric Rupert at Le Bernardin. Jasper oversaw restaurant operations in Anguilla, Hawaii, St. Thomas, Turks & Caicos as well as the Ritz In Maryland prior to coming to Colorado in 2018. The Ritz is a great property, quiet. In winter it has it's own ski lift outside the back door. Tennis courts are a short walk as well as nice hiking trails, great Mountain Views, a pool and some light entertainment. The finest Japanese dining is to be found at Matsuhisa, a Nobu property in Vail, but if you're at the Ritz and want to eat here, Sakaba should not disappoint. There's a fair wine list with markups around 2-3 times wholesale and retail including cocktails and some Champagnes starting around $110.
