Delicious sushi. Definitely for a special night out but worth it. We had to call a day in advance for a reservation. But there was no problem getting a reservation. I called right when they opened. It was a super intimate space. Not a lot of seating. Super cute decor with his and hers soy sauce pillows. This restaurant served mostly nigiri and sashimi. There's quite a bit of discourse around the best sushi spot in Vail and let me say there are only 5 restaurants on the Michelin Guide for Vail. and only 1 of them is a Japanese restaurant....guess which one? Yup, Osaki. They only take reservations via phone and only for 24 hours before, so we did just that. Walked in on Tuesday for a Wednesday reservation. We sprang for the omakase and I'll list out what we had below but it was all delightful and likely will change for you. They fly their fish fresh in from Japan! Our omakase adventure: 1) miso soup - we were asked if we want this first or later. We picked first. It had nicely diced pieces of shiitake 2) a little duo of cold marinated seaweed from Okinawa with little Japanese ice fish. The lighter counterpoint was the 3 types of mushroom in what chef called a "Japanese broth" which I'll bet is soy / bonito based 3) tempura - this tempura was so special! Featuring all my favorite shellfish friends like snow crab, shrimp, clam!! Then we moved into the stellar fish starting with * Tai (red snapper) * Shima Aji (Striped amber Jack) * Hotate with yuzu mentaiko - I love hotate (scallop) and this was ultra fresh. My hubby, who doesn't usually like fish eggs was down for the mentaiko too! * Aji (mackarel). - it was topped with ground ginger and shallots - okay what a preparation! Perfect with the typically kind of oily mackarel. * Black cod topper with sweet miso - okay insane. I've only had miso black cod at Katsuya in LA or Nobu (ofc). This preparation is wild. Like all those flavors in a lightly seared format * Mirugai (Giant clam or geoduck) - I don't see this often nor would it be my first choice but it was wonderful! Just a bit of a firmer texture than fish, as expected * Golden eye snapper with yuzu kosho - ate this one so fast I didn't grab a picture!!!! So so good. I also just love yuzu kosho but this complemented rather than overpowered. * Otoro - just expertly cut and seasoned. Also the temperature was perfect. Because of how fatty it is, I've had it in ways that make me a little gaggy but not here!! * Toro hand roll - amazing! No complaints - the chef's secret here is a lil' kewpie (spicy!). Make fresh so there was no soggy seaweed! * Red bean mochi ice cream - we could pick from strawberry, vanilla, green tea, red bean. They obviously don't make this in-house but it was a nice ending! Totally unexpected to find what turns out to be one of the best sushi restaurants in the country in Vail Colorado. This small intimate sushi bar/restaurant imports its fish directly from Japan, and has some of the freshest, best prepared sushi I've ever had (which says a lot given that I'm from NYC which has some great sushi). Oh my oh my. Treated my fiancé for his 31st birthday. Definitely visiting again. We loved every second. Took a break from stuffing our face just so we could sit in the magical sushi presence for a bit longer. Service was fantastic! We had the Hispanic woman start with us but I think they realized that we knew what we were doing so the Japanese male started to serve us. Perfect!! Quaint little hidden restaurant that was sorta nostalgic for me. Staff was very friendly and attentive. Food was super fresh! This was my first time in Vail with my family, and during our 6 day trip we were hoping to chow down on some really good sushi. We landed at Osaki Sushi and let me tell you I have no regrets. Didn't order from the menu since it didn't have what I was looking for. I asked the chef if I can get a Chirachi and Agedashi Tofu and he said they can make them for me. He also asked what tier of Chirachi (50/60/70) do I want and I picked the middle one. What a surprise! I'd say it was one of the best Chirachi, if not the best, I've ever tried. Even the rice was made to perfection. The Agedashi Tofu was also well made with thoughtful addition of veggie tempura which isn't common but did make the dish more pleasant. I was very pleased. Best sushi restaurant in vail by far. Went twice to matsuhisa and that is only for bluff (people watching) wish is not a bad thing but I'm a sushi obsessed and this is the real deal. It was my first time here at Osaki although I have been in Vail many times. I never heard of the name until my friend brought me here. The restaurant is small and kinda hidden. Not spacious..only a sushi bar and four tables. I was sooooo glad I checked out this place. All the fish we ordered were absolutely amazing and super fresh. I think this is a wonderful place for Nigiri. I loved all Nigiri we ordered especially the O-Toro (Tuna Belly) and the Hotate (scallop). We ordered almost all the special fish they had for the day and didn't regret. So, I recommend anything on special for the day. The appetizers were great too. We got the oysters in the Ponzu sauce and the Shishito peppers. Both were great except for I think the Miso dipping sauce was kinda too sweet for me but it was just me. We got the black Cod for an entree and it was yummy also except for the Miso sauce on the fish was a little too much. The rice Japanese beer (Yuzu) was really tasty. The service was fantastic and very warm, and we were well taken care of. Thank you! Our server did a great job and all the other servers and chefs were very well coordinated. Fresh and authentic this hidden gem is a must visit when in vail. Located in vail village next to Solaris. Ordered 4 different types of tuna and it is melt in your mouth delicious. Seeing as vail is a mountain resort no where near the ocean I was surprised how Light and fresh the fish was. Apparently the fish is flown in from japan and I believe it. I just had a fantastic sushi dinner at Osaki Sushi. The fish was very high quality, especially the bluefin tuna. Most of the dishes were simple, attractive preparations. Some had a little twist like a spicy ginger yuzu jelly, but I didn't have anything that was fried or contained cream cheese (a sushi crime in my opinion). Osaki is an authentic traditional Japanese sushi restaurant. It is not an Asian fusion joint, and the focus here is top quality sushi and sashimi. The o-toro is consistently some of the best you can find anywhere in the US....nicely marbled with great flavor and texture. A friend and came in for a late dinner mid week and quickly discovered we were the only ones in the restaurant. Eek! We felt bad, and wondered if we should stay, but we're warmly welcomed to the sushi bar. We decided to eat quickly and leave so staff wouldn't be waiting on us to leave. At the very beginning of ski season, I doubt an early night would disappoint too much! We ordered edamame and a few rolls. The edamame wasn't salted, so was a little bland, but the Fire Starter roll was dynamite! Super spicy and super yum! The unagi was good, but the spicy salmon roll was a little bland. Overall, ok. I would come back if I had an itch for sushi and was nearby the the Village, but I'm not sure I would go out of my way to come in. We arrived at 7pm. We ordered the $150 per person "Omakase". We were a party of 5 but only 4 ordered this menu. It started with a plate that looked like a sampler appetizers. It had zero taste and nothing that sparked our appetite. The second was 4 slices of fish with a ginger dressing. Not bad. The third plate was ok but just two small pieces of fish. Fourth plate was a round of nigiri. During this plate we found a hair on the plate. Overall we were not happy at all. They sent us a replacement of the hair sushi and 2 pieces of sushi, but not for the table. We paid $1300. We will never go back. It is not worth the money. read more

On top of it, when we got the check they have already tipped themselves 18% and then added the tax. We had two rolls (very small) an appetizer and green tea and the bill was over 50 dollars.
