Wow, just wow. Incredible broth. You do taste a slice sweetness of maybe cinnamon but it makes the broth heavenly, if it's not your preference throw some jalapeños and lime into it. It'll be perfect. I chopped some basil with my hands to add some herbs. The soup was so comforting. A small size is perfection , I loved the chicken and meatballs. Id skip the marinated steak next time. It's decent place dor a long day ski or other sport. Broth is not really authentic. Food is fresh and also tasty. Service is a little slow and careless for my time there. It sure has been tough to locate a good bowl of Pho in this valley. I was super impressed with the light, flavorful broth of my shrimp Pho today for lunch. The traditional accompaniments of jalapeño, Thai basil, lime, and bean sprouts. I also ordered the shrimp and pork spring rolls with peanut sauce. Also delicious but I added hoisin and salt to the sauce. Something was missing and this really amped up the flavor of the dip. Service was stellar, kind and happy servers and bartenders. Serving sizes were good you could share if you're not a big eater. We tore our food apart! We needed a break from the expensive high class dining of Beaver Creek and wanted something a little more casual. It was freezing out so pho sounded like the best option to warm up! We are pho lovers back at home and hoped Pho Bay would live up to our expectations. It was DELICIOUS! They have an extensive menu and the first menu I've seen where you can mix meats in your broth. They also have a beef and vegetarian broth option. I opted for the vegetarian since the beef wasn't gluten free, but my husband really enjoyed the beef. The waitresses were knowledgable about GF options since the menu wasn't marked and I really appreciated that. I also really loved that you could see the size of the bowls since pho has 3 size options! My ONLY complaint about the restaurant is that the staff seem a little unorganized. There were times where all of the staff was doing one single task together and help was needed elsewhere. We got the beef filet pho up-charged $4.50 for the filet but it tasted like well done beef jerky it was not filet. The soup was full of MSG couldn't eat it mouth and tongue tingling. The spring rolls were full of rice noodles, not basil, lettuce or onions. The menu had chicken wings, seaweed salad, french fries, sweet potato fries. That is not typical fare at a Vietnamese restaurant. If you are looking to escape expensive dinner head over for a break but you will be disappointed with the food compared to your local restaurant you go to back home. read more

6 of us wanting excellent Vietnamese food and we certainly got what we came for! We had Pho with chicken, beef and tendon(separately), Viet egg rolls, spring rolls, fried dumplings, cheese wontons, vermicelli bowls with pork and beef. All of it was delicious! The broth for the soups were flavorful and yummy. They brought out their house made chili oil which took things to another level. If tomorrow weren't Christmas Eve,(they are closed) we would absolutely go back! We also had excellent service. Unfortunately I only got menu pics as everyone dug in too quickly for me to get photos-I didn't want to lose any fingers! Ignore the other poor reviews-go here-it was awesome! I had the chicken pho and literally the broth was just hot water with zero flavor. Then they didn't include any jalapeños, onions, bean sprouts that normally come with the pho. Ordered take out on my lunch break wanting to expand my current pho portfolio, as I am quite the fan of this Vietnamese cuisine. I called in and placed and order for the Rare Steak Pho and a small Cajun fries. I figured since they offered something like Cajun fries, they must have a special twist with it to make it stand out amongst the rest of the food. That unfortunately was not the case, they appear to be Orieda fries with just a small sprinkling of flavor on them, and for the ride back home had become a little soggy. The rare steak pho is pretty delicious however, a little disappointing on some aspects too. One: the price of 16.95 for a medium sized pho, is outrageous, seeings most places I have been to across the Mountain west are 10-11.95 for a medium. On top of the 5.50 Cajun fries, the pricing here could definitely be adjusted. The pho came with all the sides, however they use red onion for their pho which gives it a strange little punch rather than white onion. Some bites had hamburger is feels due to the choice of onion. I am also a very spicy individual and love getting the jalapeños, unfortunately for my batch, I got two slices which was a bit of a disappointment as well. However the steak and broth themselves are quite delicious with a dash of hoisin and a couple scoops of chili paste. Not the best pho I've had, but for the area if you're looking for something that isn't as 'highfalutin' for a quick easy bite, this is the place for you. read more
