The Saigon is their take on Pho in a sandwich, incorporating grilled pork, cilantro, basil, spicy mayo, and jalapeños on a ciabatta roll. A side of pho dipping broth - puts it over the top. We chose to park in a garage and paid $10 after our meal. We were there for about 2 hours. There's parking on the streets but it's first come first serve. When we went, you were able to seat yourself and we chose a spot right next to the fireplace. There's a barcode to scan and view their menu. They only serve french dip sandwiches but you will not be disappointed. There's a vegetarian option with mushrooms. We came during happy hour 4:00 to 7:00 The drinks were around $7 and they were wonderful! And definitely strong enough to make a difference. We ordered the bee's knees and the classic daiquiri and they were so good we didn't change it up throughout the whole meal! My husband ordered the classic French dip with crispy potatoes. He loved that the sandwich was not super beefy but very flavorful and the potatoes were extra crispy! I ordered the Frenchie with a Caesar salad and let me just say it was amazing! Like most of you, I took the opportunity last week to patronize my favorite local spots. And if you can't tell already, you can make the assumption that Pony Up is one of mine. I first visited Pony Up last summer before I was a Denver resident. My original praise still stands. But as I anticipated, the praise has grown and evolved into a much higher one. Not only is this one of my personal favorite spots in Denver, I think it's one of the best. The French Dips are unbelievable, with every microcosm oozing with flavor. The bread, the meat, and the toppings are married together expertly. And the dips themselves are the leading roles, worthy of a trophy on their mantles. My current favorite is the Pho French Dip (Saigon), and it's one of the best damn sandwiches in Denver. The appetizers are surely not to be missed either. Although this place specializes in French Dips, I had just had a HUGE lunch at another fantastic place in Denver, and too many other things caught my eye. We started off with a round of nicely priced happy hour drinks - Cabernet Sauvignon for me, a spritzer, a Manhattan and a whiskey sour for my colleagues. We decided to split a few appetizers to start - roasted green chiles, jalapeño and tomatoes with melted cheese and freshly fried tortilla chips. Everyone else had ordered their meals and I decided to have my meal be one final appetizer - Country Karaage. Crispy fried chicken marinated in garlic, ginger and soy, served with a spritz of lemon and spicy mayonnaise. The thick batter still somehow came across as light and airy, the chicken was perfectly cooked and the brightness of the lemon and tang of mayonnaise enhanced every bite.
