The prices are a little on the high side, but after tasting the food, it's easy to understand why. The quality of the meat is fantastic and every bite was packed with incredible smoky flavor. The seasonings were perfectly balanced, and the flavors absolutely exploded in your mouth. The meats are without a doubt the stars of the show. The BBQ sauces complemented the smokiness perfectly without overpowering the meat. Each sauce brought something different to the table, making it fun to mix and match with the various meats. The sides, however, didn't quite live up to the same standard for me. The potato salad and mac and cheese were just okay and weren't my personal favorites. Things happen for a reason. I went to the Egyptian BBQ truck and it was rather late and the Lamb Chops were sold out. However, earlier in the day, someone had highly recommended Parish Cajun BBQ that is literally a couple of blocks away so I headed there for my lite afternoon snack and let me tell you, I had another culinary revelation beyond measure. I ordered Beef Brisket, Pork Spareribs, and Cajun Beef Link with the Acadiana Potato Salad on the side. The brisket is bathed in Tabasco and then finished with Cajun seasonings. I failed to order moist brisket but the cuts that I got were not dry and very flavorful The Pork Spare Ribs also get their Tabasco bath and Cajun spices then finished with a light Steen's cane syrup glaze. Steen's cane syrup is a product of Louisiana. The Beef Links are house made with the Cajun Flair and I love the snap on the casing. The Acadiana Potato Salad really got my attention. For a newcomer bbq trailer to show up and make its mark it is certainly facing a wide variety of competition. Parish BBQ resides as a trailer in the rear of Batch craft beer near the intersection of Airport @ Manor Rd. It is located with several open picnic tables, an outdoor roof covering for shade along with the canopy of several large trees. The owner originates from Bossier City, Louisiana near the Shreveport area and you can certainly tell there is some cajun heritage made with this BBQ trailer. Its a small truck with just one single smoker, but they are creating a new variety of BBQ. Batch has a small parking lot but dont be surprised if it is all filled up. Parish menu consists of brisket, pork ribs, sausage but then shows some cajun roots with some smoked ham, boudin, and pulled duck. You can order meats individually, 2 or 3 meat plates with two sides, or order up a bbq sandwich. They serve an all meats platter that will feed roughly 3-4 people. Side offerings are Acadiana potato salad, Remoulade vinegar slaw, pimento mac & cheese, crawfish cornbread dressing, and creole tomato salad. They also serve their fried pistolette rolls with a side of honey butter. I ordered the two meat plate with brisket, pork ribs, crawfish cornbread, mac & cheese and also got a side roll. They provide you pager, you wait about 5-10 min and then pick up your order. For a busy Saturday, line was short, orders moved fast and service was quite friendly. Brisket certainly was moist and tender. You can tell in the seasoning there is the typical salt & pepper added with some cajun spices like cayenne pepper and tabasco. Ribs are super tender and easily fall off the bone. Brisket and ribs had a solid flavor, not a heavy smoke cook, and light bark. It seems they practice a low & slow style cooking method. The mac & cheese was fine, but I think there are better cheeses to make with it than pimento. I will say the crawfish cornbread stuffing was quite impressive. I focus on the meats when going to a bbq spot but this side dish really impressed me with its different seasonings. The fried roll was good, fresh, flaky and served with a cajun style butter to it. Parish is a new candidate in the vast list of bbq spots in Austin. It is a small operation serving up their own Louisiana style version of bbq. You realize visiting all these different bbq spots big & small, that everybody has their own style of cooking. It comes down to the wood used, seasoning rub, the smoker, length of the cook and everything in between. If you want to be in the BBQ game in Austin, you have to define your own way of cooking. Came here for lunch on a Sunday around noon. Was pleasantly surprised to find no line and that the only item they'd run out of was the boudin sausage. We tried a pretty reasonable portion of the menu and see why they've been getting so much hype! Surprisingly our consensus top item wasn't a meat, but the crawfish cornbread. I honestly could've had just a plate of that as my meal, absolute must have. The pulled duck was the dish that caught my eye the most when looking at the menu initially. The first few bites were like the best pulled pork you've ever had taken up a level. Oddly we all found pretty diminishing returns through the meal and our enjoyment of it went down to around the level of a solid pulled pork after a couple of bites. My personal favorite meat was the beef sausage. I'm generally a beef over pork person and I think this was my first time having a bbq beef sausage, so it's no surprise this did it for me way more than the usual bbq sausage. For a place that does everything besides the brisket non-traditional, they nailed the traditional brisket. The lean wasn't too dry and still had good flavor, the fatty was at just the right level of melt in your mouth delicious without getting too oily They recommended the ham as one of their staples and it was good, but if you're pressed for space I think it's skippable. As with most bbq places, the turkey is skippable, even if lemon pepper makes it sound intriguing, end of the day it's still turkey and pales in comparison to the other meats The pimento mac and cheese was quite good, most other bbq places in Austin this would be the best side available, but I think that says more about the quality of sides in town than the quality of the mac and cheese. The GREAT: The service and the wait - short wait on a Saturday afternoon. The owner was very friendly and gave us more info about all the meats, which was really interesting to hear about, especially the Ham. The Ribs - This may not be very Texan of me, but I always prefer a top-notch rib over top-notch brisket. Very tender and flavorful. The Ham - So having ham at a barbecue is very unique and Parish actually took a lot of time to theory-craft the perfect ham for them, and it shows. It's not my favorite cut of meat, but actually, it's a nice contrast from the other meats. A lot of times at barbecue, you're getting different cuts of meat and using sides to cut into the same flavor, but the ham here works well for that as well. The GOOD: The Sides - I think I enjoyed all of the sides. The cajun flare they brought to the table was welcome compared to the usual sides you get at BBQ. I'm not a dressing fan normally, but the crawfish flavor in the dressing was really nice. The Brisket and Sausage - neither of these meats blew me away but were both very solid. The Boudin - I initially was mixed on the Boudin at first. But after eating all the meats, it grew on me, because it was a bit of a cajun flavor infusion compared to just eating meats. The Turkey - I'm not a fan of turkey overall, but this is probably some of the best turkey I've had. Very juicy pieces of turkey. The MEH: The Duck - This is also one of their unique items, a shredded duck, and we actually weren't aware it was shredded duck and thought it was shredded pork until they asked us about it afterwards. We had a sausage sandwich, a brisket sandwich with a side of Mac and cheese and crawfish corn bread. I wasn't a fan of the corn bread but my fiancé liked it. Mac and cheese was too salty, we both agreed on that but it was still good. I really enjoyed the sausage but when we got home and the food sat we both felt very bloated and nasty. Had it pretty early in the day and we didn't have anything else to eat for the rest of the day because of how we felt after the meal. Located outside on benches there was lots of flies that were a little bothersome. We went kinda late and they ran out of brisket and only had enough for a brisket sandwich. I got the corn crème it was a but spicy for me but that's personal experience. The bbq sandwich was good but def needed more sauce. Delicious! Attached to Batch in the back with a huge space, Parish is set up as an outdoor food truck. We ordered a variety of meats - brisket, sausage, ribs. The sides exceeded expectations - don't skip on these. We ordered $150+ of food but felt like they were stingy on the fixings, onions, pickles, bbq sauce, etc. We had to go back twice to ask for more of everything, slices of bread as well. Parish sits in the yard behind Batch Kolaches in the East side. There were a couple bluegrass bands playing music, plenty of shade, and relaxed vibe. No wait. Starting with the ribs. I thought they were just tender enough, pulling easily off the bone but not completely falling apart. I actually like this as a personal preference. Very very light smoke flavor and seems like a pepper heavy rub (classic). No complaints here. The brisket sandwich was good. My main issue was that the sandwich came topped with coleslaw. I wasn't a huge fan of the coleslaw, really vinegary batch which muted the taste of the brisket. The underside of the sandwich came with dill pickles and onions. In my opinion, too much veg added in advance. The dill pickles added an additional vinegar element that the coleslaw had already exceeded. Finally, the potato salad looks very seasoned but I thought it was actually lacking a tad of flavor. 4.1/5 overall. If you are in the area, a good option, but didn't see anything that stood out over some of the other places we have here. read more

Oh my goodness! Joel was my Sherpa through a menu where I wanted to order one of everything! The brisket was perfect in tenderness and smoky flavor, the was savory, the sausage had a great snap and spice to it. The coleslaw, pickles and the crawfish cornbread stuffing were amazing! First of all, if you deduct stars because there's not enough parking or the line is long and/or slow, you're missing the point of Texas BBQ. These guys (and ladies) are obviously putting out a product that far exceeds their bankroll. I hope that changes (meaning their bankroll grows to match their product), but we can't fault them for being excellent and not rich. Ok, I'm off my soapbox for now - this place exceeded my expectations. I have tried over 50 BBQ joints in Texas alone, and so as soon as I heard about this place, I was on it! I arrived at 1:00 on a Friday, and yes, the parking lot was full. I had to walk about 50 yards from my parking spot to the line. And yes, I said line. There was a line at 1:00 pm on a Friday. But I was at the counter in 20 minutes. Now to the food: The brisket was exceptional. Personally, I have a hard time distinguishing between the Top places in Texas when it comes to brisket. Goldee's, Interstellar, Cattleack, Barb's - not much difference in them when it comes to Brisket, in my opinion. This place deserves to be involved in this conversation. I can't pinpoint what it is, but it's good. Very good. Now, I was really excited about the sausage and the duck, but they were sold out. Am I going to punish them on this review because they're good and/or popular? Hell no. I'll be back to try those another time. Let's talk about the ribs - I place 2 places on a pedestal when it comes to ribs - Burnt Bean in Sequin and Terry Black's in Lockhart. To me, nothing tops those 2 places. Well, make that 3 places because this place is absolutely right up there with the best ribs I've ever had. I prefer dry ribs, and I would consider these dry, except the glaze they add - well, let's just say it's amazing. Ribs to die for. Let's talk sides - I had the Mac-n-cheese and the potato salad. There is absolutely nothing "ordinary" about these sides. The chips on top of the Pimento Mac-N-Cheese is an amazing touch, and the Potato Salad is one of the best I've we'd had. Hands down, 2 excellent choices for sides. I can't wait to try the Pistollette rolls and the Cornbread Dressing (Sold Out). Once again, I ain't mad about it - that's what I get for showing up 2 hours after they opened. I plan on going back and trying everything I missed this time. And those ribs - I got a little girl (now 20 y/o) who loves her some ribs. I know she'll go with me! Get to this place as soon as you can! read more

Been waiting to try this place - sooo happy we finally did. The brisket was CASH $$ (that means good). The Mac n cheese was fire, ribs were hitting too. Impressed with the sauces - they paired so well with the meats. The BREAD - don't skip. Fireeeeeee. The owner was so kind and we will definitely be coming back to eat this barbecue. Honestly, I was so excited to try this place. I'm a huge fan of both BBQ and Cajun, so this should've been a dream come true. Sadly, Parish manages to fumble on every single front. I showed up right at noon, stood in line for 15 minutes, and was greeted with a sign that said they were out of Brisket, Turkey, Duck, and Chicken. Basically, everything. The "good news"? They had sausage and ham. So I ordered sausage and got a buzzer. Thirty minutes went by. Nothing. Were they out back smoking the sausage from scratch? Forty minutes after ordering, my buzzer finally went off. The sausage was... fine. Nothing special. And definitely not very Cajun. The guys running the place were grumpy and short, which didn't help the vibe. The one saving grace? The crawfish dressing. Genuinely delicious. So if you do go, brace yourself for disappointment, order the dressing, and try to find joy in that while staring at an empty meat counter. Bottom line: Austin has no shortage of great BBQ joints with friendly service and plenty of meat. This isn't one of them. Skip it read more

Really nice guys and super friendly taking their time with each customer. However, the BBQ itself was not on the same level as Interstellar or Franklin's imo. Most of the brisket we ordered wasn't tender, which was super disappointing, and everything else (Ribs, Sausage, sides) were just ok. Maybe an off day. read more
