Nicora Winery in Tin City is one of those places that quietly resets your expectations. We were lucky enough to have our tasting led by Nick, the winemaker, and it felt less like a formal tasting and more like getting a behind-the-scenes download from someone who genuinely loves what he's doing. Then came the Euphoric Grenache... and that's when things went off the rails (in the best way). Bright, layered, and somehow both elegant and powerful...it's easily the best Grenache we've had in Paso, no exaggeration. Now, I walked in as a committed Syrah person. Or at least I thought I was. Nick's lineup didn't just impress, it completely rerouted my palate! Each Syrah had its own personality, depth, and structure without ever feeling overworked. Long story short: we joined the club before we even finished the tasting. No regrets, no second-guessing! Just counting down until the next shipment. The tasting room is quite simple but the wines are absolutely delicious. On our latest trip to Paso Robles, we were afforded the opportunity of a private wine tasting experience with the winemaker Nick. We found him very knowledgeable, simple, chill, and down to earth. His wines were absolutely fantastic, including both the Syrah and the GSM. I could drink those wines all day long. Came to Paso for a girls weekend and did a tasting at Nicora in Tin City. The wine was excellent. Sarah was the host for our tasting and she was terrific. She was very knowledgeable and shared great stories about the winery. She also gave us recommendations for restaurants and other spots to visit during our stay. Delicious wines that never disappoint! We visited Nicora Winery yesterday for a tasting and to pick up our Fall shipment. It is always a special treat to visit Nicora! They are a small boutique winery located in Tim City area of Paso Robles, CA. Nick and Elissa have a tasting room that is quaint, warm and inviting! Evan took excellent care of us! Evan (Tasting Room Manager and Sommelier), is very knowledgeable about the wines, vineyards and the process of making each wine. Nick (owner and winemaker) puts his heart and soul into each bottle that is produced. This is evident in each sip! Super yummy, outstanding, multi-dimensional with a satin smooth finish. Nick specializes in Syrah, Grenache and other Rhone varieties. Nicora is a must visit in Paso Robles. Appointment only... so plan ahead and book on line. The best kept secret in Paso Robles! If you like reds, this is the place!! I didn't know it was possible, but they actually have a 100 point red:) Tasting room located in Tin City-make a reservation in advance. We came to Nicora Winery by a referral from some friends.... thank god for friends! We had the BEST wine and the BEST service! I made my reservation with Evan on the phone and immediately felt that this guy knows his wine! Well, that was only surpassed by the actual visit and tasting of their fantastic wines. Evan gave us our tasting accompanied by the lovely Elissa and we felt so special and came away with and amazing hour of education about the wines and wonderful conversation from some truly nice people. First things... this is an appointment only tasting room. I'd been hearing good things about Nicora, so I made an appointment. My recollection is we tasted 4 wines. GSM, Euphoric, Buxom and Shadow Canyon (Syrah). Our host (I believe it was the winemaker's wife) also open a white wine for us to try. All 4 wines were impressive. It's rare to taste at a winery, where every wine you try you like. I mean really LIKE. Ended up joining the wine club on the spot. Shadow Canyon was my favorite, but I'm really a Syrah fan. Nick Elliot is one of Paso's most talented winemakers and he's offering great value AND superior quality. Simply stated, you never get an ordinary bottle from Nicora. His single varietals are outstanding and the blends are out of this world. These are all showing very well, and will only get better with a little time. The Bien Nacido Syrah was absolutely riveting. Gorgeous texture, astonishingly rich dark fruit on the mid-palate, and a long finish just leaves one wanting more! This was our first wine tasting experience in Tin City and I have a feeling anything after will be hard to top. First they were very quick to respond via email to set up the appointment and were very accommodating with tasting times. We actually showed up to our appointment earlier than expected. I thought we might have to wait but they got a table set up very quickly for us. Their wines are big, bold reds that did not disappoint. We never felt rushed and the experience felt very personable. Excellent hospitality, noteworthy wines, and contemporary location. We ended up at Nicora mostly by chance, as one of our original wine tasting plans cancelled last minute. I found Nicora by searching on maps and read some great reviews. We made a phone call, and got a reservation right away. It's a small tasting room, and primarily staffed by one person, Evan, who does a great job. By the time we arrived he had everything already set up for us, and we sat down outside to start tasting right away. One of my favorite things with wine tasting is actually learning the history of the winery, and their unique stories. Evan did a great job filling us in on everything. We learned about the history, the wines, local geography and harvesting, and more. Evan was informative and conversational, which he balanced very well with giving us our own time with the wines as well. The wines were excellent, and are well worth bringing some home. Located in Tin City, it is a perfect starting ground to walk to other tasting rooms. This seems like a relatively new area of Paso, built around the idea of tasting rooms being in close distance. It has a modern farm feel, and seems like a community of its own. We would definitely return here in the future and would love to check out more of Tin City. read more
