Once upon a time, I did not consider myself a wine person at all. Then I met a guy who grew up in a town close to this winery in Long Beach, CA, where we live now. He was determined to turn me into a wine drinker. I told him it was possible but white wines were out of the question. Then one day, at a local wine shop in Long Beach, he picked up a bottle of Union Sacre Sylvaner and I found a bottle that converted me into a white wine person. So on our most recent trip to the Central Coast, we had to stop by my now favorite winery and have a tasting. I forget the young lady's name who helped us out but she was amazing and balanced all the parties on the patio super well, providing a great experience and wine knowledge to everyone. The weather on the Central Coast is amazing and sitting out on the patio was such a great vibe and although I have every intention of visiting new wineries throughout the coast, I will make it a point to regularly visit this one. When I see 5 star businesses, especially if they are small local businesses, I do my best to visit, support, and learn what makes them so successful. Quality/Quantity - After tasting a few wines, I settled on a glass of Pinot Noir. Atmosphere - Small tasting room, bar, indoor, and outdoor seating. Plus tasting. Got lucky, as today they were bottling so we got to experience that a little. And due to the small size, they bottle via a trailer; see pictures. Plenty of Tin City parking, as we got here late and right before closing. Open 7 days a week from 11am to 5pm. Service - Emma was perfect. As usual, we were the only customers. We got all the attention. It felt like we were all just hanging out. (Or she was just so bored, lol). She shared so much information about the winery and Paso Robles. We compared stories and wineries, etc. Lastly, she gave us a tour of the facility as the production just ended. This was unexpected and really appreciated. Price - $18 + generous tip. I just got a glass of their Pinot Noir. Tastings are $20 a person and waived with two bottle purchases. Owner Comment - Congrats on your success at this location since 2019. Stopped in for a quick tasting while in Tin City. We had time to kill before another reservation, and had just been told about Union Sacré and the unique wines they make during our last tasting. They were happy to accept us as walk-ins, and offered us our choice of seating. They have outdoor seating and indoor standing tastings at the bar, since we didn't have too much time we opted for a bar tasting with Kirsten (the wife of one of the owners). It was great learning about the wines, and the area of France that they are inspired by. The wines here are a little different than most you see in Paso, they have a lot of white wine and do a decent amount of skin contact on some of them. Some of the wines reminded me of natural wine, which I'm not the biggest fan of, but I know a lot of people who love them. I ended up leaving with a bottle of their 100% Pinot Blanc, a little sweeter than something I would usually go for, but I'm excited to drink it on a nice summer day! read more

We spent the past weekend in Paso Robles to attend a pick up party but also wanted to try out some new spots in the area. Our second stop on Saturday was Union Sacré and it was such a cute lil spot pouring delicious, light and refreshing white wines. We had a party of 5 total and was able to get seated right away. When we first walked in, the venue gives off sushi and sake vibes but we were seated in the side room where all the magic happens and it was nice and cozy. They had heat lamps inside to keep us warm since it was a bit chilly. Overall, the wines were really good and it was a nice way to switch up what ended up being a really red heavy day! This is a little gem in Tin City, they have some lovely Alsace region white wines that are very unique and delightfully different. The owners and staff are super friendly and knowledgeable. I always try to do at least one Tin City winery during a trip to Paso and they can be very hit or miss. I'm happy to report that Union Sacre is a clear hit! We loved our experience tasting on the patio here and had some truly fantastic wines. I'm not someone that is always compelled to buy, but I was here. Went here for a tasting with a party of 11 and they were very accommodating. Went on a Saturday early afternoon, place wasn't too busy with another party doing tasting close to us. They knew we were celebrating a birthday and had tiny birthday hats for all of us on our table (adorable!) Xavier, the wine maker was amazing at explaining the wines and talking to us about the process and answering questions. Super funny guy and even gave us samples of the wine in the metal vats! I found this tasting room by accident while trying to find parking in Tin City because it was so busy this afternoon! Being a fairly new player in the game, Union Sacre specializes in boutique, small batch wine, and you can definitely tell because the taste of their wine is incredible! Their wine tasting is $20 per person and consists of 4 wines: 2 whites and 2 reds. The fee is waived with a 2 bottle minimum purchase per person. They said that all 4 wines on the list were considered dry, but I thought they all tasted really good! But I think that's because I like my wines extra dry. So much so that these didn't taste dry to me at all. The flavor profiles were spot on. I ended up liking every single wine on the list! I don't think that has ever happened during any other tasting I've been to! I ended up buying a bottle of each white since I'm usually a red wine drinker, and it's very difficult for me to find non-sparkling whites that I really enjoy. If you're in the Tin City or Paso Robles area, I'd highly recommend stopping by this tasting room! If you find a wine that you like, be sure to purchase it because they seem to only make 240 cases of each type, so they'll likely be onto the next one if you sleep on it! read more

What a wonderful small place with a friendly and helpful owner on premises to answer all your winey questions. I highly recommend the 2019 dry Riesling. Honestly, it has such bright floral almost crisp summery flavors that it did not feel like a dry Riesling to me--but it would go so well with food--perfect for pork or something shrimp. Giving this place 4 stars rather than 5 simply because if the wines on the tasting menu. I have tried La Passion Du Diablo and was blown away by how delicious this wine was. I was excited to taste more of their offerings, but I found the other reds on the tasting menu to be on a different level than that wine. At $70 a bottle, they tasted young and just... Not quite there. The Reisling and the rose were good, but not stunning. The labels are absolutely whimsical, and I will be back, but probably will be sticking with some of their older wines. read more

My enophile friend suggested we try Tin City. Some of the wineries were closed, so I'd suggest calling ahead. Luckily Union Sacré was open and the first place we checked out. Aaaaaand what a great surprise! Their white wines are remarkable, unique and therefore recognizable. Check out the labels, both inside and outside are cool. We had a great time chatting it up, tasting, admiring their wall art, and -of course- getting some bottles for home. We've visited Union Sacre multiple times and absolutely LOVE them! They always have a great selection, and are one of the few wineries in Paso that has good selection of white wines, but also have amazing reds. They also have some really fun and diverse varieties, and we love how elegant and balanced all of their wines are. They're not your typical fruit/alcohol bombs. The owner/winemaker is French and super passionate, and there's a good chance you'll get to meet him when you visit - which is sure to be a great time!
