    The last winery of the day on a recent Paso trip was Volatus Wine, with former Navy fighter pilot/Topgun instructor Hal Schmidt as owner and winemaker. The intimate tasting room had lots of navy memorabilia and although we arrived close to closing time, Tina graciously served up stories and great wines, all with memorable names (Bloody Well, Boys are Back, Long Way Home). Challenge accepted to go through the military alphabet! I took home a bottle of my favorite wine there, 100% Tempranillo "Long Way Home".

    Unexpected stop at Volatus & we LOVED it. Marilyn was our server & she was an absolute sweetheart. We were lucky enough to meet the owner Hal & his lovely wife. The Grenache OMGEEE amazzzzing. The ambiance was welcoming, fun & chill, We will definitely be back.

    Am totally hooked on this intimate little tasting room, where we've been enjoying their delicious wines. Staff Gina and Jeff have always been very gracious hosts, with both their knowledge of the incredible wines, and also of the Paso Robles area. Hard to choose just one favorite, but the Cavu (Viognier/Roussanne blend), Rose of Primitivo, Top Gun Cuvee, Tempranillo, Chardonnay, and Syrah were all excellent. Also thanks Gina and Jeff for allowing us to taste some of the most recent medal winning selections. Always such a fun time . . . and we just had to join their wine club. Looking forward to meeting up there again. Their tasting room is located directly behind the Dark Star Cellars tasting room, whose tastings we've also enjoyed.

    Such an amazing experience and such delicious wine. Hal the winemaker is a gem. So much knowledge about the area and gave us great recs.... But honestly we stayed around an hour after closing and had a great time. Highly highly recommend!!!!

    We were in Paso Robles a couple of weeks ago. There are so many great wineries there. This was our first visit to Volatus. The gal taking care of us was wonderful! Very friendly and made sure we were well taken care of. The wine is great, especially for the price. I very much appreciated the ambiance and the fact that the owner served in the military and flew jets. The tasting room shares another spot with another tasting room. I haven't written a review in about a years, so that just goes to show you what a neat little spot this place is! I can't wait to go back!

    TOPGUN CUVÉE RED

    I just ordered my second batch of Volatus Wine. The reds are amazing. Crisp and smooth!! What's even more impressive is their commitment to the customer. I had a time sensitive order that was held up because of high temperatures (they do this to maintain the integrity of the wine) but I needed the shipment to arrive on a certain day. Volatus (Tina specifically) was beyond accommodating and rushed an overnight delivery of the 6 bottles I ordered. They arrived safely and in time and I was able to present this fantastic wine at my event. What's more unbelievable is they not only waived the overnight delivery fee but they gave me a full refund for the wine purchased because of the slight shipping inconvenience. (which I didn't ask for) They just earned a customer FOR LIFE!!! I will be back to this winery for more amazing wine and encourage everyone to give this veteran owned winery a chance. THEY TRULY DESERVE YOUR PATRONAGE. Amazing wine, amazing staff and beyond amazing customer service!!!

    Great wine, great TOPGUN memorabilia. Great service. Located in the middle of a vinyard with great views. A must see place when in Paso.

Even with some of the downfalls, this was my favorite winery and I wish I could get some of the wines without joining the club. The commitment is too much and shipping is also high, so it's not worth it. The GSM was my favorite and if I ever see it somewhere, Ima get me some!

We have…read morestayed loyal to Austin Hope--even when cutting other clubs--specifically because of the service, but that era has clearly ended. We are the type of members who always take great care of the staff and rarely leave without purchasing extra bottles, yet today we were treated like an inconvenience. ​Despite being told in the past that spontaneous visits were no problem for members, we were turned away on a gloomy Monday with plenty of open tables. The host at the entrance was incredibly dismissive and wouldn't even let us finish our sentence before cutting us off. We were told our only options were to come back in an hour, a "limited" tasting, drive all the way downtown, or just pick up our shipment and leave. ​We asked for the Wine Club Manager to resolve the situation, but she wasn't on-site. To be offered a "partial" tasting as a favor after nearly ten years of support was the final straw. It feels as though they now prioritize "closing" new members over honoring the people who have supported them for years. They've gone mainstream and lost the personal touch that made them special.

The building, scenery of the vineyard hills, and the flower garden were all beautiful.

Kathy was our server and she is one of the daughters of the owner. She had another large group and a couple of smaller ones and she was all by herself. She did an excellent job explaining the wines and not rushing us. I was impressed with the wines so I joined the wine club. About halfway through our flight, she took us downstairs for the cave tour. Wow, what a stunner! Such a unique touch to this winery. The other incredible thing is that Eberle doesn't charge for tastings so you might as well pick up a bottle or two :)
