We made a reservation for 1PM. The place was not crowded but we were asked to wait. It took 15 minutes to sit us. What is the point of making reservations? The hostess looked very stressed. That was not a good sign. When we sat the waitress was very nice and profesional. I could tell they were understaffed. After the waitress took our drink order we didn't see her for another 15 minutes. The table that came and ordered after us got their drinks sooner. The food took a long time. My wife ordered a second drink which I saw just sat at the bar for 10 minutes. The bar was not busy at all. Actually, the restaurant was not busy. They looked understaffed and overwhelmed. Just came for breakfast/brunch. We all ordered different menu items. Steak and Eggs comes with great portions, very well seasoned potatoes, ans properly cooked steak. The chicken and waffles comes with a shareable size waffle but the star of the show is the perfectly breaded chicken. The chicken fried steak with green beans and mash potatoes and the wagyu hash was on point. As a starter we ordered the kolache and queso for the table, another great dish. This was our 2nd visit to Haywire. I love the decor, the vibe and thought the food was interesting. This visit, however, it felt crowded, service wasn't great but most of all food was bad. And, we were grossly over charged. I ordered an old fashioned. My husband ordered Jack on the rocks. My old fashioned never arrived. Server, Jorge, said there was a mix up and they were opening a new bottle of bulliet. Then, he came back and said they didn't have the whiskey at all. We ordered the blackened catfish with shrimp, ($26 ea) both men had chicken fried steak ($19.95 each)We shared a bottle of wine ($48). Bill came, I added on 20% and it was $315.00!!! My fault for not looking closely. They emailed the receipt. We called when we got home. Drinks were all charged as doubles ($24 for a jack on the rocks?) $20 for the old fashioned I never received. Doubles for both martini's! Jorge told me that I had " a little extra in my martini since I had to wait so long). My husband eats chicken fried steak everywhere. He said it was so dry and overcooked. Forgot the lemon I asked for when I originally ordered it. Zero sense of urgency and a total lack of attention to detail. Elk tacos came out room temp and dry. Sent them back. Got them returned to us maybe 5° warmer. Sent them back and said we weren't interested in a 3rd try. Manager came out and 'explained' to us that they aren't designed to come out hot like you would expect from Taco Bell. Not kidding - her exact words. I guess they should put them under the 'cold bites' section of their menu. Watermelon 'salad' had about half a teaspoon of feta and 3 sad strands of basil chiffonade. Tortilla soup came out lukewarm. When reheated to 'tolerable' it was okay. Wedge salad was the best thing we tasted. Nobody pre-bussed our place at the bar. The bar had about 6 people behind it but nobody could be bothered to do any actual work. Closing out our check was painfully slow. It's been a while since I have written a yelp review and this place was so good it took me out of my Yelp retirement! My husband is on a work trip and I discovered this restaurant on tiktok the day it opened which was perfect timing. I was really wanting to experience a country western/texan restaurant while we were here and this one takes the cake! This restaurant is definitely an experience restaurant, from the complementary valet, interior design, interactive smoker whiskey barrel, to the southern hospitality service and true Texan portions - we loved every minute of our dining experience. Andrea was our server and she was so kind and helpful when it came to making recommendations on the menu. All ingredients are locally sourced in Texas so you are getting the good stuff. We started with two drinks, my husband got the Judd whiskey cocktail and I got the front porch swing. The Judd came out in a whiskey barrel smoker which we thought was so fun! Both drinks were delicious. For our appetizer, we ordered the lump crap dip which was the perfect amount of crab, mushroom and spinach and it had a nice textured crunch on top! For our entrees, I ordered the chicken fried waygu steak which came with mashed potatoes and green beans and my husband ordered the smoked angus prime rib which came with mashed potatoes. The breading on the chicken fried waygu was so light, not greasy and the steak melted into your mouth! My husband's prime rib was marinated so perfectly and was full of flavor. We even were able to sample 3 different desserts which were all chefs kiss! My fav was probably the pecan pie though if I had to pick. We also enjoyed talking with Brooke who is a part of their sales/marketing team! I wish we had one of these back home in Pittsburgh because I'd love to give their brunch and lunch a try! First time here, seen alot of hype on tiktok so figured why not give it a shot on our anniversary. My wife got the blackened catfish and gulf shrimp with cajun corn, was decent but not cohesive at all in my opinion, catfish wasnt as blackened as it should have been, shrimps were good, corn did not belong and had no cajun to it honestly it had more mexican flavor to it than cajun , getting a perfect bite with everything on the fork just wasnt it. I went for the double cheese burger on a sesame bun instead of the everything bun ( not a fan of everything bagel) and honestly it was ehhh , i could have gotten a better burger for that price or less at chilis, the bun was very dry, the cheese had a weird flavor to it didnt taste like american and white american, the patties had a good crust but lacked flavor, the sauce was decent a take on thousand island so eh, the tallow fries were good, but tasted like they had been fried a while before being served, and kinda lacked flavor as well, the ketchup though was not it, was very bitter like a poor quality ketchup. My wife also had the brussels and they were good, needed to be cooked a bit longer though, and needs a sauce in them like a vinaigrette or a sweet sauce, that would take them from a 4.5 to a solid 8. Overall i would give the place a 5/10 the food id give a 3/10 did not live up to the ambience or the price. I think this place does have potential to have some good food though, and i mean you cant please everyones palate so again just my opinion. Also when i set a reservation they ask if theres a special occasion typically if there is at most places they give a free little dessert or something but here i guess it was for no reason but i didnt dock any points for it was just like why ask lol. read more

Now to the low and slow chicken... looks can be deceiving. Yes it's just chicken, however the stars of the plate are the chimichurri rice and the tortillas. The tortillas are freshly made and infused with herbs and the rice .. well I couldn't stop eating ! Marry the whole plate together and you have a dish full of layers of flavor.
