I finally made it on a rainy Saturday a few months back and decided the surprise the BF. I figured it was a good time to go, hoping the rain would deter the people and I could finally try this BBQ internet sensation that landed in the STL. My hunch paid off and since I was in I decided to order for my mom as well. And since then Coy B Que is a family favorite and we haven't looked back since. We actually be craving this spot. And it works out that he's conveniently located that we can dip in for lunch on Thursdays or Fridays or just go on our designated day.....Saturday.
The owner is a super nice and friendly as well as his son and other employees. When I see the owner I always ask him what makes his BBQ so tender. He always says it's because he cooks it low and slow. I watched a interview he did where he stated "I cook what I like but what I think people will love", and I swear...................that statement HITS!!!
The ribs have a bone in them that certain parts of the bone get so tender you can actually eat the bone......... say whattttttttttt. The rib tips are melt in your mouth, fat and all, FAT and ALLLLL, you can't even believe you're eating fat because the fat isn't your normal fat, it's transformed into this luxurious rendering. I have never eaten BBQ like this before. It highly intrigues me on how he got the bone edible and the fat succulently tender. The pork ribs, rib tips and brisket are a must try and the potato salad is a favorite for our sides, sweet and perfectly well balanced. The brisket we get as a sandwich, which is my moms favorite and the BF loves their brisket nachos which is plenty filling for three people to share. A customer ordered the brisket nachos and discovered jalapeños were on top. She said she was allergic so I jumped on the chance to take her order since the BF needed a snack, he really eats a lot to be soo thin. I also discovered that you can order the brisket in a half pound and pound portions alone which I have done. I love how the meats are perfectly sauced, not drenching in liquid but the sauce accompanies the meat to add this balance and gloriousness. We have tried the green beans which have nice chunks of meat in them, the baked beans and greens.
The beef ribs are on my list along with the stuffed turkey legs on Soulfood Sunday. When they moved to four days a week in October we went on Thursday and were able to try the catfish which is served plain or sweet-n-spicy so I got one in each flavor with spaghetti. If you ever see Coy B Que offering the catfish as a special, I would hop on that.......ASAP ROCKY!!!! The sweet-n-spicy glaze is a perfect balance of the two, the catfish is perfectly cooked that is holds it own with the glaze on top and doesn't get soggy. It's seasoned and tender, the glaze provides the perfect touch of POW WOW!!! And it's not swimming in sauce. Another Thursday special we tried the following week, was the fried chicken. He hand cuts the wings and seasons them to perfection.
We can't get past our main staples to even try other menu options. We definitely want to try the smoked burger, we love a good burger, the brisket cheesesteak and smoked wings. I asked if they will be incorporating snoot anytime soon, he working on perfecting it.
