Because it finally happened and it was glorious. --- --- --- It was beginning to be comical how many times I visited Austin, planned to try Briscuits, and then something unforeseen would happen to prevent me from doing so. But at long last, I visited Briscuits on my latest trip. Briscuits is best enjoyed in a group setting where you can share many things. Their menu is full of appeal and it's painstaking to be forced to choose. I chose the Brisket and Jelly Biscuit based on the recommendation from the guy working here, and he was right. It was great. The brisket itself was nothing remarkable, but the biscuit was unreal. And the jelly was a nice touch. I never imagined the jelly + brisket combo, but folks, it works. Also, the day before, my wife showed me the inside out cinnamon roll that they posted on their Instagram story. It looks mind blowingly amazing on IG - I couldn't not try it. But this is exhibit A why multiple people are needed to come here. There was zero shot I was eating all of this. I probably got through 50-60% of it, but that's all I could handle. I made friends with a couple of guys sitting next to me and actually donated a few bites to them because I couldn't stand to toss something so tasty. So briskets finally happened. This is easily one of the best BBQ breakfast spots in Austin and it's easy to see why they've racked up countless awards, including a coveted spot on Texas Monthly's Top 50 BBQ Joints in Texas. This unassuming food truck tucked inside Radio Coffee packs way above its weight when it comes to flavor and savoriness. You really can't go wrong with anything on the menu but my personal favorite is the brisket, egg & cheddar biscuit sandwich. The brisket is smoky and flavorful, while the homemade biscuit makes the whole thing next-level. If you have more of a sweet and savory preference, they also offer strawberry and blueberry jam options that pair surprisingly well with the sausage and pork belly. They have traditional BBQ plates as well, but you'd be crazy to come here and skip the homemade biscuits. The one downside is the price. You're definitely paying a premium, with a biscuit sandwich easily pushing $20 but the quality is there. They also offer convenient online ordering which makes it easy to skip the wait. Their offering, the Briscuits & Gravy ($17.50). One of the (dumb) things about Briscuits, is that it's ONLY ONLINE ORDERING. At first, I thought I wouldn't order --- my phone had minimal service, but thankfully the Food Truck Lot seems to offer public Wi-Fi. After placing my order via QR Code on the Food Truck, I waited about 10-12 minutes for my order. As soon as it came out, I immediately opened it and was pleasantly surprised. 2 fluffy biscuits, drowned with that amazing southern gravy --- and the pièce de résistance --- the amazing, thick slice of brisken on top. My review: Honestly? Mind-blowing. The biscuits were fluffy, huge, yet light --- the gravy was stick-to-your-bones, and the brisket, tbh ---- was one of the best briskets I've had during my stint in Austin. YES, EVEN BETTER THAN SOME PIT-MASTER STOPS. The brisket itself was thick, moist, tender, soft, amazing crust and smoke-ring. The reason why it's not 5 stars is exactly for this reason: it is so rich, it is so filling, it becomes too much, too quickly. They definitely need another dimension. Some raw red onion, some pickled red onion, candied jalapenos --- something to cut through the richness of the dish as a whole. DON'T GET IT TWISTED, I ENJOYED IT THOROUGHLY. All were to die for, super tasty, rich, and the biscuits were so luscious I could seriously eat them daily. So don't stand in front of the truck waiting. The food was visibly stunning it looked like it came out of a magazine. I ordered a brisket, egg and cheese on a biscuit. The brisket was spot on and the eggs were so fluffy. The biscuit was on the drier side in my opinion so with thick brisket and a drier biscuit it was a mouthful. Through my BBQ awakening and journey to try all the best spots in Texas, I was most intrigued by the breakfast barbecue concept of Briscuits. I've always had a soft spot for barbecue sandwiches, and to see Briscuits hold that proudly as their purpose in the saturated craft BBQ market made them remain high on my bucket list. Now, I gate-kept myself from going to Briscuits until I could get up in the morning. If they pride themselves on meat served in a biscuit, it's not a lunch restaurant. It is a tried-and-true breakfast and brunch restaurant. Agreeing to pick a friend up from the airport was enough to motivate me to go to Radio and order some Briscuits. I got to Radio and scored a parking spot like a champion, scanned the QR code outside Briscuits, and easily placed an order through my phone. I'm so used to the extensive, never-ending, hour-long planning ahead of many of the BBQ joints I've been to, so scanning a QR code and getting my food 20 minutes after I ordered felt surreal. Briscuits opens early at 8 am, and by 10:40 when I placed my order, a majority of their food was still available. My order was ready 15 minutes later. The haul? The main choice in the Briscuits experience was to choose between a biscuit with egg and cheese or a biscuit with jelly. I could have gone for both, and maybe I would have if I had a little more courage in my heart, but I chose the brisket, egg, and cheese, which seemed to me the titular item that represented the ethos and essence of what Briscuits is trying to do as a concept. It was a heater. Breakfast sandwiches seem to peak with sausage, egg, and cheese, but if you replace the sausage with fine brisket and the bun with a mouthwatering, buttery biscuit, you learn society has reached a new level in the hierarchy of breakfast sammys. The thing looks like it's going to bust out of the damn wrapper, and the huge chunk of scrambled eggs really brings it together. The wrapper tries its best to keep the sandwich composed because without its structure, you start getting bites of just egg and have half of the brisket still to eat without the biscuit. Blessed. In addition, I ordered a link of their Blueberry Gouda sausage. I've talked many times about how a specialty link is an essential addition to a modern barbecue restaurant, so for a breakfast BBQ restaurant to infuse blueberry in the sausage is an A+ in conception. As for the link itself, it's very unique. The berry profile complements the meat very well. I had a few bites with their provided sauce, but I fear the blueberries and the BBQ sauce clash. It's great on its own. No need for sauce. The last thing I ordered was a side of their hash browns. They were a lot more peppery than a typical hash brown patty, but I really liked the kick, and it was super crispy on the outside. I think Briscuits and Radio really benefit from each other's existence on a shared ground because I got a great latte to mesh with my breakfast, which really tied the experience together in a nice bow and puts Briscuits in a really excellent space. I've been to Radio many times but never when Briscuits was open, so it was nice to hit both in one go. As a whole, Briscuits is the best way to eat BBQ before 11 am. I find myself, as I write this review in the evening, still yearning for another breakfast sammy because they reinvented what makes a morning magical. To wrap it up, I showed my friend a picture of the brisket, egg, and cheese I got, and he made me go back to Radio so he could get one himself. That's how good Briscuits is. read more

They combine some of the best the south has to offer, their fresh homemade buttermilk biscuits paired with their Texas smoked meats and homemade jellies are just the perfect marriage. I've never had a disappointing bite here. Today I tried their Inside Out Cinnamon Roll with Smoked Cream Cheese Frosting. It was light and airy and just the perfect balance of sweet and savory , the smoked cream cheese frosting really made it special. The Blueberry Sausage & Jelly Biscuit also caught my eye. Made with a Blueberry and Gouda Sausage and Smoked Blueberry Jam all topped on a fresh Buttermilk Biscuit. It's was simply perfect, I never knew I needed the combination of blueberry and Gouda cheese in a sausage until today and the blueberry jam was the perfect balance of sweet and smoky really making this an amazing breakfast treat. It's located in Radio Coffees food truck area and parking is always a hassle here! This has been a food truck weekend! I've always loved Radio Coffee, but this was my first time trying Briscuits. How can you go wrong... the sweet and savory combo of their flagship biscuit is absolutely incredible. Rich and delicious (perhaps over the top!). Service was fantastic and fast, and the outdoor seating was laid out perfectly. The vibe was chill, and this was the perfect amount of food for two, and we left more than satiated. Holy cow the Inside Out Cinnamon Roll was outstanding!! Briscuits is a food truck at Radio Coffee & Beer and is a solid choice for food alongside your coffee. I will admit, the Brisket & Jelly left me wanting a more. The biscuit was a little dry and flaky (which can be good in its own right at times) and it seemed the brisket was super flavorful and neither was the strawberry jam. I felt like both had opportunities to show out but it seemed like they actually dulled each others. The Cinnamon Roll on the other hand was outstanding. Basically a cream cheese sandwich, the bread itself was soft with incredible texture while the cream cheese hit with a fantastic sweetness upfront and at the end. Service was quicker than I expected at about 7 minutes from order to food. The ambience of course is more for Radio and I always recommend it as there is plenty of seating and fun events going on. Would recommend and would get again. read more

Not to be dramatic, but this is the best biscuit sandwich I've ever had. Absolute 10/10. I loveeee the real strawberries you bite into, it goes so well with the brisket. The biscuit is super crunchy on the edges but soft inside and is a great size. Even the hash browns are amazing, soooo crispy, perfectly seasoned, and a good size. The food came sooner than the estimated wait time. Not much else to say about the service since it is order online only. Wish I could come here every week, my boyfriend and I are obsessed! read more

I would say about 4.5 stars. Ordered two biscuit eggs and cheese sandwiches, pimento grits, and 1/4 of biscuit. Total came to $56. Each sandwich was about $17. A little pricey but the sandwiches were very, very filling. Briscuit was very good!!! The grits were a huge hit. A lot of seating available outside, but parking is a hit a miss. Two small parking lots for the area. Overall, I think it's worth it. read more

Be warned - they only do online orders (no walk ups) so save time by ordering ahead or be prepared to scan and wait (at 11am on a Saturday we waited 45 min for one biscuit sandwich - I would say this is about what I'd expect for a brunch time wait). Tucked away behind radio bar and coffee this food truck serves a legit smoked meat and biscuit mash up. The biscuits are flakey, buttery, and slightly sweet. The perfect conduit for their succulent, Smokey brisket. 10/10 no notes - delicious. read more

Not at all busy on a Saturday morning. We laid out $43.40 for two biscuits topped with brisket and smoked strawberry jam, as well as two orders of hash browns (2 wedges each). No plastic utensils were provided, and the jam ran everywhere, so we ended up eating it with our fingers. Bring your own utensils! While the biscuit was rather dry, the brisket and jam were well prepared; still, given the size of the servings, the price point struck us as way too high-- too much so for our wallets. Loveeee the food here. This is a first come first serve food truck and once they're out they're out. Brisket sandwich: 10/10- huge portion of tender brisket. The egg and cheese just make it better. You definitely have to unhinge your jaw to try and get this all in one bite. Super flavorful and the biscuits are fluffy and crunchy. Hashbrowns: 9/10- great crunch and super flakey. I love eating them with ketchup. They remind me of a McDonald's hash brown but 10x better and with more flavor Pimento cheese: 8/10- I think the pimento cheese itself tasted great. It was salty and creamy and paired well with the biscuit. I wish there was something else that came with the pimento cheese. It was just a little overwhelming for me to eat it on its own.
