I like the fact that you can view the employee branding the top of the cheesecakes with a hot iron. The cheesecake is not sweet. I would compare the consistency to a pound cake. It tastes like a cheese flavored pound cake, not like the usual cheesecake I'm used to and prefer. Don't get me wrong, it tastes good because they are made fresh. Once you get your Uncle Tetsu tattooed goody it is best to have within 6 hours of purchase for it to taste the best and its jigglyness is at its peak. I ordered a yuzu (seasonal) cheesecake and two cheese tarts - ube and classic. I brought the desserts home to enjoy, and they were still delicious after a few days. The cheesecake and tarts weren't overly sweet, and both tasted very light. The yuzu cheesecake had a delicate citrus note and the texture was very fluffy and melted in my mouth. The verdict: Original cheesecake: incredibly airy and light but bland with no cheese flavor whatsoever. Perhaps waiting after a day in the fridge as some have suggested helps the flavor? During weekend, the long line is non-stop and can wait up to 40 minutes. Weekday is best time to buy. I was there Tuesday noon and got in and out in 2 minutes. The original cheesecake is soft and fluffy when they are freshly made, when refrigerated, the cake is a little denser but still taste great. It's not too sweet and doesn't give you the heaviness of a standard cheese cake. Price is super reasonable. Each cake plus tax come out to be under 10 dollars. It can feed up to 6 people. I'm a bit embarrassed to say, I can finish half in one sitting. Service is very good and efficient. They are hard at work pumping out cake after cake.
