Sadly, a Cut below the rest. It's a not a busy Thursday night at 6:45pm on 09/24/2026, while there were only three people at the bar including myself. In front of me was a completely wet and spotty greased bar top next to the well station. As the young bartender places the menus on it, she may have not seen the messy bar top. However, it's hard to believe this cleanliness oversight, which exhibits a standard for the service and possibly drink/food handling. I asked her for a wipe down and she half @$$ed it and sprayed the bar misting me . Food service 101, just spray the towel. This should have been taught as a bar back or busser. The combination was so unique and added a great texture to the overall dish. I'd definitely order this again. The poutine had a strong chimichurri flavor and came loaded with plenty of meat. Currently the best Breakfast Burrito in Orange County. Neck and neck with Barons and Sobuneh for best in the State. I arrived at 9:55am on a Sunday morning and waited in my car until they opened. Friendly service at the bar as I placed my order. As I waited 10-12 minutes at least a dozen others placed orders. Fair to say that the Bacon and Carne Asada Steak are the popular ones. Within one taste you realize all the hype is deserved. I will have to return soon to try a burger but I highly recommend their breakfast burrito options. First time trying out The Cut here in Irvine. It's a Gourmet style burgers and a full service restaurant. They have some good choices on their regular menu but I came in during their OC Restaurant week where they have a special menu offering which comes with a drink, Burger and a Side for $35. I decided to go with that so I chose Lavender Lemonade, Cheesy Tots, and a Marrow and Raclette burger which sounded amazing. The lemonade and the tots I could easily live without, they were just okay in my opinion, but the burger itself was very rich, flavorful and cooked perfectly! Too bad it won't be available again but definite glad I got to try that out. Also got to try their Truffle and Brie burger which tasted good but I definitely enjoyed the Marrow and Raclette more. Frankly I feel misguided by the reviews online. First off let me start off by saying that when I ordered, the long end of the estimated pick up time was 6:35. My dad showed up around 6:30pm and ended up waiting an extra 40 minutes because the order wasn't ready. The front guy was super rude and unapologetic, stating that "it's just one of those nights". Very unprofessional. If there's too much business in-house to handle online orders, then they should shut it down for the night. As far as the burgers go, I thought I'd take the opportunity to try one of their specialties so I went for The Classy. I'm an adventurous eater, which I think you can tell by my account so far, but i really didn't like this. The goat cheese was an unspread slab in the middle of the burger and the jam was overly thick and sweet... it needed something to cut it. I ended up reheating half and adding some arugula, buffalo sauce, avocado, and a fried egg and that transformed the dish. My parents got the OG, which frankly I should have too. I liked it a lot better, really liked how saucey and cheesy it was, but the bread to meat ratio was just too high (same with the Classy). We either need to increase the patty size or get a smaller burger bun. The fries were pretty decent. We also got the poutine, but frankly it wasn't poutine at all. No cheese curds, unnecessary short rib, no gravy. It wasn't bad but I wouldn't get it if you're having a poutine craving. One other thing I noticed across all dishes is that everything felt really greasy. Like I could visualize the old burning oil in the kitchen. Bbq sauce with medium rare burger - oh my sweet and tartness! Absolute melt in your mouth delishness. And sweet potato fries were the perfect addition to the savory meal. I cannot wait have my leftovers today. My other half had the double smash cheese burger with regular fries. He'd try different side next time. But the Caesar dressing for the salad was amazing with homemade croutons. So let's discuss sauces. I absolutely love this place. I came here with my wife and two other couples on the first day of burger week. I started with the cheesy tots which were spectacular! What a great way to start a meal. I then had their special Marrow and Raclette burger. It is a mix of chuck and marrow patty with a black garlic aioli, charred leek compote and pickled shallots on a potato bun. This wasn't at their storefront, but they were really nice really kind generous and you can smell the food from a mile away. I just got there cheeseburger and it was delicious. The bun is the highlight of it. My wife and I each ordered a burrito but ate only half to try to save room for dinner later. Even then, they were still quite filling. What really elevates these burritos above the usual are the crispy tater tots inside; they add texture and flavor in a way that turns a good breakfast burrito into a great one. These are hearty and satisfying the way they should be, but they are priced a bit higher than other breakfast burritos joints in OC. You're definitely paying a premium, but the quality and portion size help justify it. The $40 burger was worth it. But it's definitely a bucketlist item, one and done, don't need to do it again. It is genuine ground steak. Other places claim to have steak burgers, but this here is the real deal. High quality ribeye steak. No fillers. No blends. They want you to experience the purity of it, so it comes essentially plain but with cheese. And it's cooked a perfect medium rare. Delicious! The fries are great too. After The Counter closed nearby, I really needed a new local burger place when I had a burger craving, and The Cut delivers. If you've got $40 to spare and you like burgers, I think it's definitely worth it. I mean, I've had it probably three or four times now, and I'm not some kind of moron who likes setting money on fire (I hope), so it must be good, right? What's unique about it? Basically everything, but obviously the patty of meat is the star of the show, with a unique taste and texture that makes it stand out from a normal ground beef patty, and the cheese is no slouch either. The only negative is that my wife bullies me into ordering it so she can steal a few bites. The regular fries and sweet potato fries are also great. My wife got a steak with her caesar salad one time, and that was delicious too. We usually have the same waiter since we come around the same time/day every time, and he's always great. They also always have a great selection of beers on tap, today they had three different West Coast IPAs and I felt like a kid in a candy store... yum! Normally when writing a review I can come up with some sort of complaint to balance things out, but not really in this case. I mean, I could whine that the burger is $40, but no one is forcing me to buy it (except for my wife). We came to the cut during breakfast/brunch just because of their breakfast burrito we saw on social media and a Cesar salad just for the vegetables. When we came it was fairly empty and easy to get seated. Our server was fantastic and with it being less busy we got our food fairly quick. The actual food was good but it was a little expensive for the portions provided. We probably should have gotten the steak variety of burrito but we chose the classic bacon, which was good, but the steak online looked a lot better. Overall a good experience so recommend! read more
