My wife and I have been here quite a few times now, and it's always delicious. After The Counter closed nearby, I really needed a new local burger place when I had a burger craving, and The Cut delivers. I either order The Cut (yes, the $40 burger and fries) or I make my own bleu cheese burger depending on my mood. I'll cut to the chase: is the $40 burger worth it? If you've got $40 to spare and you like burgers, I think it's definitely worth it. I mean, I've had it probably three or four times now, and I'm not some kind of moron who likes setting money on fire (I hope), so it must be good, right? What's unique about it? Basically everything, but obviously the patty of meat is the star of the show, with a unique taste and texture that makes it stand out from a normal ground beef patty, and the cheese is no slouch either. The only negative is that my wife bullies me into ordering it so she can steal a few bites. The regular fries and sweet potato fries are also great. My wife got a steak with her caesar salad one time, and that was delicious too. We usually have the same waiter since we come around the same time/day every time, and he's always great. They also always have a great selection of beers on tap, today they had three different West Coast IPAs and I felt like a kid in a candy store... yum! Normally when writing a review I can come up with some sort of complaint to balance things out, but not really in this case. I mean, I could whine that the burger is $40, but no one is forcing me to buy it (except for my wife). I can't believe we haven't had the cut before. And the sauces, I want more sauces. I'm bias for what I had. The blue cheese burger with amazing blue cheese sauce, carmelized onions. Bbq sauce with medium rare burger - oh my sweet and tartness! Absolute melt in your mouth delishness. And sweet potato fries were the perfect addition to the savory meal. I cannot wait have my leftovers today. My other half had the double smash cheese burger with regular fries. He'd try different side next time. But the Caesar dressing for the salad was amazing with homemade croutons. So let's discuss sauces. Three thousand island - yowsa- and house the cut sauce - my blue cheese sauce - and the ranch dressing! I want more things to dip in the sauces. Next time we will dine in and try more. Great burger! Juicy, flavorful, cooked perfectly, scrumptious! The bun was soft enough to make my mouth happy, yet sturdy enough to handle the burger, shredded lettuce, luscious ripe tomato, crisp dill pickles, fresh raw onion and beautifully melted American cheese. The tater tots were divine! They were hot, tender and crispy. One bite and I heard angels singing. There are other things on the menu, including an incredibly extravagant burger. There's something for everyone. Melanie, our server, made everything even better, and I didn't think that was possible. Melanie was friendly, helpful, patient, kind, and had a smile as bright as the California sun. Her suggestions were insightful, and, had we been braver, would've followed her recommendations. The Cut is an awesome burger place located in OC California. Great customer service really nice people. It was a pop-up shop. This wasn't at their storefront, but they were really nice really kind generous and you can smell the food from a mile away. I just got there cheeseburger and it was delicious. The bun is the highlight of it. It's a soft potato bun nice soft buttery melt right inside of your mouth fresh cheese absolutely delicious and the burger was nice juicy, but in my opinion, it could've been seasoned a little better. Ah... I really don't know how I feel about this place. Service is superb. Space is great and they have two tvs to entertain those seated inside. But the food is over priced and underwhelming. I really wanted to love this place after seeing all the hype online, and there were some bright spots! We tried the Grand Cut and Savory burgers. The first few bites were actually pretty promising. Rich, flavorful, and satisfying at first. But as we kept going, the heaviness started to build. The oiliness or fattiness leaking from the fondue made the Grand Cut feel a bit overwhelming. Finishing the burgers ended up being more of a task than something to look forward to. The Onion Rings were good. The Black Truffle Mac & Cheese, though, didn't quite hit the mark for me. Just a very subtle truffle flavor and a bit under-seasoned. Nothing stood out in a big way, and for the price point, I was hoping for something a little more memorable. Came here specifically for the breakfast burritos I keep seeing all over social media, and they lived up to the hype. Although they're currently only available during weekend brunch (10am-2pm), that just made it feel more like a treat. While they're priced a bit higher than your typical breakfast burrito, the Cali steak alone is good enough to keep me coming back to this local spot. The vibe here is one of the highlights. We sat at the bar, which added to the relaxed, social atmosphere, but the service was a mixed bag. The bartender was very friendly, but despite only serving two couples, we didn't get much attention. It seemed he knew the other pair and focused most of his time there. As for the food, the portions are generous. My wife and I each ordered a burrito but ate only half to try to save room for dinner later. Even then, they were still quite filling. What really elevates these burritos above the usual are the crispy tater tots inside; they add texture and flavor in a way that turns a good breakfast burrito into a great one. These are hearty and satisfying the way they should be, but they are priced a bit higher than other breakfast burritos joints in OC. You're definitely paying a premium, but the quality and portion size help justify it. Heard a lot about this spot for their burgers but I came on a weekend and I really wanted to try their brunch menus. My husband got the cali steak burrito and i got the chicken & gravy burrito & WOW. Both were equally amazing, portions are HUGE. I will say though, one item stole the show more then others, the chicken wings with chili lime, i think its called? THE FLAVOR WAS SO GOOD, so addicting. Service was really good and im so glad we got there when we did because by the time we were almost done, it was PACKED and busy! The $40 burger was worth it. But it's definitely a bucketlist item, one and done, don't need to do it again. It is genuine ground steak. Other places claim to have steak burgers, but this here is the real deal. High quality ribeye steak. No fillers. No blends. They want you to experience the purity of it, so it comes essentially plain but with cheese. And it's cooked a perfect medium rare. Delicious! The fries are great too. Came for lunch and there was a chair debacle. We asked for a table for 5 they said sure and sat us at a table for 4. We asked for a chair and they said they would bring it. 5min passed and no chair so we grabbed a chair from an empty table. A waitress then came and asked me to switch chairs because they needed that exact chair from the table we took it from. second time visiting the cut and it's honestly my favorite elevated burger spot. it's a casual place with seating indoor and outdoor i believe but service is always very nice and welcoming. they have a smaller selection of burgers but they're all very unique and customizable to your liking. i also like that you're able to adjust the cooking on the meat as well and i love a good medium rare or rare cook. apps/shareables were all delicious and even filling on their own. definitely a must try if you haven't already! read more

Not used to eating gourmet burgers as we are typically an In n Out family but my son and I came here after watching plenty of food reviewers post videos. It's a solid 4 stars. My first bite was juicy and flavorful but I'm just not used to the meat being so fatty and drippy. I understand this is a different type of burger and I went in with that perspective but still prefer a normal burger. It was great nonetheless. We ordered the OG. As you can imagine it was standard OG burger with the standard fixens. Then we also got the Savory which was on the salty savory side with bacon relish and all. Would I go back? Yes. But not a regular spot as i fly that the burger was more unhealthy than a normal night out food in the go burger. My daughter and I came here for their happy hour menu. They have the cheeseburger for $7, but you can add veggies for 25 cents each and a sauce for a dollar extra. The poutine was half off, so $9 for a great portion. This was so delicious with fresh cut fries, braised brisket, smoked mozzarella, and chimichurri. We also ordered the OG burger (classic cheeseburger with tomato, lettuce, and onion). This one was pretty tasty and probably my favorite burger of the night -- 7.5/10. Been coming here for YEARS but this was my first time dining in. I do have to say that from our experience I think this is more of a take out spot, or at least better suited for that. The food is good, but after our experience I would not recommend dining in. We came in on Tuesday night around 6:45pm and although busy, there were several open tables and we were immediately seated. We were ready to order quickly as we had already browsed the menu and knew what we wanted, and I always stick to the same order here because it's my favorite. We placed our drink and food orders and the wait for the drink was honestly unacceptable. We were more than halfway through our burgers when they finally brought the drinks out. We had asked about them when our server dropped off the food and it proceeded to take over ten more mins to get the drinks. We were about to walk over to find our waitress and just tell her to cancel the drinks at this point, but right as my boyfriend was about to get up the waitress walked over with our drinks. Took 25 minutes to get my purple drink and his Arnold Palmer. I'm not sure if our waitress was overwhelmed or a bit forgetful, she didn't even bring us our waters for over ten minutes. My boyfriend saw her walking to take a tables order then doing a u turn to grab our waters, it felt like she had forgotten then suddenly remembered while on her way to do something else. She asked if we wanted ice water and we said yes but she never brought ice water, instead she brought two glasses of room temp water and then several mins later brought us a carafe of room temp water. As far as my food, I did notice some changes that were disappointing. I always get the truffle and Brie burger with a side of sweet potato fries. The fries used to be thick and crispy on the outside and nice and gooey inside. Now the fries are extremely thin, maybe 3x thinner. They're no longer something I would order as they're so crispy and thin you don't get that nice gooey interior anymore. As far as the burger, my truffle burger always comes slathered in truffle sauce but this time there was just the smallest dollop of the sauce in the middle of the burger. I decided to wait for my server to come by so I could as for a side of the truffle aioli to fix my dry burger before I ate it. Took another several minutes before she came over to check on us. Not sure if this is how the burger and fries is meant to be served now, but the changes definitely lowered the overall taste and quality of my meal. Service was extremely disappointing. The calamari was the best I've probably had. Favorite burger is the truffle and brie, and the savory is what they are known for. Service is top notch always. Ambiance was great. Please get the truffle burger. Might get the aged ribeye burger next time I go. Price is very reasonable for the quality and vibes. The food was a bit of a mixed bag: the Caesar salad was good but not great, while the calamari was perfectly cooked, if just a little bit on the salty side. So excited for the new additions to the Cut's menu! When we heard that there would be some new breakfast burritos, we knew we had to come try them. The Pastrami Burrito was bursting with flavor and the pastrami at the Cut tastes so much better than any other pastrami I've tried previously. A must-try if you're a pastrami fan! The Cali Steak Burrito was also extremely flavorful and put together so well. The softness of the tortilla is contrasted nicely by the crispy bits of tots. Both burritos are served with your choice of salsa roja or salsa verde. Both are tasty, with the roja being tangier. The aji green sauce is my fav for burritos actually, so next time I'll probably order a side of that. Service was friendly and helpful as always. My friends and I love The Cut!! We've been a couple times for their bottomless mimosa brunch and it's an absolute steal. The service is awesome and very attentive. The atmosphere is casual but refined. We always have a great time here. They recently did a $5 burger deal to promote their rewards program and it was so worth it. Their burgers are such high quality and are crafted with care. Each burger has a unique flavor profile and there's something different to try each time. My girlfriend's meetup group had lunch at the Cut in Irvine. We had a last minute cancelation so there was a total of 6 of us. She made reservations and our server, Lisa, was terrific about getting us seated and set up. We all ordered our meals and sampled the menu. I had totine, a take on poutine with tater tots in place of the fries. It was topped with an egg. I really enjoyed it and ate every last bite. My girlfriend opted for the grand cut burger. She chose onion rings for her side. She ate half of the large burger and most of the onion rings, sharing some with the other members in exchange for a few of their sides to taste. Everyone enjoyed their food and the ambiance inside the restaurant. Prices were in line with a gourmet fast casual burger joint. We'll probably return. read more

However why I am giving 4* and not 5 - sometime recently they have changed the cut of fry that is used. I've found my new fave burger and it's at The Cut! Nestled in a shopping center anchored by an H Mart and a AAA at the corner of Alton Pkwy and Culver Drive, this establishment serves up quality meats and seafood prepared in a from-scratch kitchen. They also offer a curated menu of craft beer, wine and cocktails in a space that blends elevated ambience and neighborhood warmth. I've visited once before for a Yelp Elite event and both the quality and bold, thoughtful flavors remain unparalleled. We visited on a daddy daughter lunch date on a Saturday afternoon and the restaurant was at full capacity, so we opted to sit at the bar. Connor took excellent care of us from the minute we sat down to the minute we departed. My daughter enjoyed a kids cheeseburger meal which also included choice of fries or tots, beverage of choice and ice cream. The burger was bigger than I expected for a kid size and so were the tots, so I'd say it's a good deal at $17. Connor also mixed and created a Blueberry Lavender Lemonade Mocktail that I was told was a popular drink and it was also a hit with my daughter. I wanted to order the smash burger like I did during my previous visit but was told it's not offered during brunch. This gave me the opportunity to try a new burger so I went with the OG and it didn't disappoint. I washed my meal down with a pint of creamy amber ale from Stereo Brewing.
