I have to start by saying that I'm curious if this restaurant's 4-star status has anything to do with their advertisement they have listed up above...

Our decision to stop at Capital Grille was spontaneous last Saturday night. We were driving back from a family event when my companion told me she was really craving a cheeseburger. so I thought that I'd either stop at a Wendy's, or the Grand Lux Cafe at Garden State Plaza. I oped for Grand Lux and then when we pulled in to the plaza, I saw there was a Capital Grille, and suggested let's get a great steakhouse burger instead.
For background, I've been to various capital grilles in the country, and recall being very happy with the burger in Baltimore. So it seemed like a fun idea to go to a nice steak chain and sit at the bar for some food.
When I think of capital grille, I typically view it through the lens of the high end steakhouse chain competition (i.e. Flemings, Striphouse, Del Friscos, Mortons), which I enjoy for the environment as well as the food.
So we arrived and went to the bar area (which was pretty full) so we sat on this secondary bar that was first come first serve, and waited for about 10 minutes and noone approached us. A little off putting, but we saw some spots open at the bar so we just moved to the bar.
A bartender greeted us and we told him we were ready to order (as the 10 minutes at the secondary bar was adequate to peruse the menu) and ordered. He didn't wipe down the bar in front of us which was pretty dirty and sticky, and reminiscent of a divey pub (and even they wipe down the bar for you) and not a higher end restaurant. We asked him to wipe it down and he took a dirty smelly rag and rubbed it briefly, and then threw it back under the bar in front of us (not in a cleaning bucket) so we were left to smell that dirty wet aroma for the remainder of the meal.
When our meal finally came, my tuna tartare was fine, but my partner's burger, which she had ordered medium was significantly overcooked.
Normally I don't like to make a fuss if something isn't cooked exactly right, and my partner asked what we should do and I originally said just leave it, but we ordered medium and it was pretty dry and well done (i.e. inedible) so we sent it back. We decided to send it back because we're paying more for a higher end experience and well frankly should have a satisfactory product. I also noted that it's particularly disconcerting that a steakhouse couldn't properly cook a cheeseburger - i feel like that should be a walk in the park. I don't have to send burgers back at McDonalds, or Wendy's, shake shack, in n out (or the aforementioned steak house competitors), so i figured yes, execution should be paramount when paying 5x-10x the price.
Also, the bartender never even checked on us, or asked how everything was going, which was not the usual experience for us. and i get it, it was probably close to closing time, but that's no excuse for just a sloppy disinterested staff, and poor cleanliness. Either be open, or be closed, but during the hours you're open, the experience should be the same. It's not like i payed the twilight golf fee and im racing to get my round in before sundown.
The manager was very nice however, and came over and apologized and gave us a new burger and even more fries (and the bartender/server never had a clue, nor removed my plate after i finished my meal).
Overall, look, it wasn't a disaster, but it was nowhere near the standards I've come to expect, especially since I did decide to pay a premium over my other options.
Going forward, I'd be hard pressed to recommend the capital grille over competitors that have been more consistent in their service, and the apathy of most of the staff truly stands out.
A wise man once said, "it's the little details, gentlemen and ladies, that matter most." good advice to follow.
