    Sake infused chili sauce and Okinawan pepper~

    Randomly stumbled across this Okinawa style soba (not to be confused with ramen) yatai (Japanese mobile food cart) in a parking lot while (wait for it) looking for parking. I actually thought it was a movie prop initially. It's literally a cart with 6 or so fold-up stools and a portable canopy over the entire thing. This is definitely a new one (to me). Guess I'm trying the thing. Apparently the cart moves around town. I came across this on Grandview Highway near Renfrew Street (in front of JR Furniture, just E of McDonald's). Their (Instagram) website lists the daily location. This cart is run by a real deal guy from Okinawa. Very friendly and chatty with a heavy accent. I'm pretty sure it's his face on the logo. As the cart is tiny, the menu is obviously very limited. There is 1 type of soup (chicken broth), and 2 type of meat (pork belly, pork soft bone). There is a "combo" that includes both meat items, which is nice. For larger eaters I would recommend adding additional noodles or meat for additional cost. The food quality is pretty solid. Worth noting is that the pork belly is definitely on the fatty side. Quite tasty overall. Served with green onion, black fungus, and red ginger. The menu recommends adding some sake infused chili sauce and Okinawan pepper. The sake stuff is seriously alcoholic. Try not to inhale the fumes by accident (choking hazard). The Okinawan pepper is basically indistinguishable from ordinary black pepper. Both go well with the noodles. It's a bit pricy, but worth checking out at least once, if just for the eating-noodles-in-a-random-parking-lot experience. Recommended.

    Laser focus on making Okinawa style noodles the star! I tried the Okinawa soba noodles and the pork belly was super tender with a sweet and salty satisfying flavor to it. Everything about the dish is well balanced and very delicious!

    Very interesting pop up for Okinawa style noodles! This time we found the location in front of JR furniture so be sure to follow their instagram for the right location! The noodles were tasty and we waited around 30 mins for a spot since there's only 6 seats. Small but efficient menu. The pork was so soft and supple!

    Very interesting set up in Nanaimo St., Vancouver. Decided to try this on a sunny day and really loved the ambiance. It's reminiscent of Omoide Yokocho (Piss Alley) in Japan. Food menu is simple. We took the recommended, most popular Okinawa Soba - chewy noodles made with wheat flour instead of buckwheat. It's a two-men team but I suspect someone is cooking up the delicious pork belly inside the house. They are very friendly. Will definitely be back more often.

    I went to the rolling cart location, which had a popup not too far from the primary location. Noodles were great, especially on a cold night. Just be prepared for a queue at the popups, as there is very limited seating.

    It's been over 2 hours since I finished my Okinawa Soba at Tatchan and my belly is still very very happy. It's been somewhat of a ritual to have a quick lunch with my dad to try out different places after our weekly grocery shopping. Today, I decided to try out Tatchan after confirming their opening hours on Instagram. I had come to the stand 6 months but I mis-read the opening hours so I was thinking about lunch the whole time during our grocery runs. They opened for lunch today from 1200 to 1400. We arrived shortly after 1230 and waited for only 10-15 minutes for 2 seats. We both had the Okinawa Soba. The flavour of the soup base was balanced perfectly. The soba had a great consistency almost like ramen and I'm very glad that Okinawa soba is not made with buckwheat. It's a personal preference that I don't enjoy regular soba made with buckwheat. The pork belly was sinfully and heavenly tender with a salivating amount of fat. It was a perfect lunch on a rainy day and I need to try the So-Ki Soba with soft pork bone next time!

    I first learned about this Ramen stand through Instagram and had seen many similar stands during my time in Japan. These stands gained popularity due to their casual style, simple ordering process, quick service, and the delicious taste of their ramen, which sometimes rivals that of traditional restaurants. To my delight, a similar stand has now opened in the Vancouver Lower Mainland. I had heard that this particular stand often has long lines, but on the day I decided to visit, luck was on my side - there was no line-up, and I could secure a seat right away. However, after about 10-20 minutes, a line began to form. What we got - TaTchan combo Chicken broth, dried bonito, pork belly, pork softbone, green onion, black fungus, red ginger. The soup was excellent. The chicken broth boasted a smooth texture, and the salt level was just right. The pork belly and pork soft bone practically melted in your mouth, and the noodles had the perfect firmness. While I've never experienced Okinawa soba in Japan, I found it to be quite delightful. The service was good. The stand was situated outside of the Japanese school, and on the particular day I visited, it was very windy. Unfortunately, this made it uncomfortable to sit outside, and to add to the challenge, the tables were quite slippery. My ramen bowl slid off the table unexpectedly. I hope they consider making improvements to their tables or installing some kind of guard around the stand to prevent such incidents. Despite this mishap, overall, it was a very enjoyable experience.

    Been meaning to try this place for ages now, but you need to follow them on Instagram @tatchannoodle to know when they're open for business. Finally decided to drive out to east van (free residential street parking) and enjoy a hot bowl of ramen in the cold 7C weather of Vancouver today. Overall, a pretty good experience. I love eating ramen in the cold and at a stall. There's just something really satisfying and Japanese about it. This is the first time ever I actually enjoyed a bowl of chicken broth ramen as well. Normally, I'm a pork broth kinda girl. Noodles were good. Pork was tender. Soup was sweet, but good. Only docking a star cause I wish we had actual bowls instead of the take out containers. And they don't serve hot water or tea. Thankfully I brought my own bottle of hot water. It was cold tonight.

As someone who doesn't have chicken broth (paitan style) ramen, I was really looking forward to the original ramen I ordered but I was a bit disappointed in the flavor profile of the dish. The ramen had both chasu and seaweed paired with thin round noodles. The broth was creamy and had a hint of chicken flavor but even adding several rounds of their soy sauce/salt seasoning they have on the side to adjust your broth to your liking-- I found that the richness of the soup was not what I had expected from the reviews that I read prior to coming here. Overall, a bit disappointed in the flavoring of the broth but maybe we came on an off day. I would be willing to give it a shot again in the future if I had ramen cravings and given that it was very affordable ($11-15 per bowl with tip), but I would probably opt to try another place first.

Everyone except me in our group took advantage of it because I was too full from my bowl. Now, the broth here is different from other places because it is chicken based and not pork based. Everything I had seen about this place promised the broth is every bit just as good as the pork bone broth... however, the broth we received looked flavorful, but was bland. It was completely bland. There was no richness to it, not even a hint. I don't know, coming from southern California, the flavor just was not there period. We did all eat our food because we were starving, but it for sure did not hit the spot at all. Maybe we got an off day? Otherwise our broth had literally zero flavor to it. We all wished we had tried the other ramen place instead right after trying our ramen. Would I come back? I will have to say definitely no. We do not live in Vancouver and I do not want to waste any meals on a place that did not taste good the first time we went.

Atmosphere is so busy and lively, with white a modern decor. It's certainly a hot spot among tourists. Great sauce great crunch factor! Service is always fast! You may find a line when you go but they try their best to seat you as quickly as they can. The atmosphere is usually always buzzing and the have great alcoholic and non alcoholic drink options! Will be back for sure.
