Much right, much not wrong but off. Sharko's is above average, but barely squeaking by that 4th star.
I ordered the Mac daddy ($9.50) and "4 ribs" which would be "about 8 ounces" and basically wound up being a 9.4oz half slab ($0.89c/oz). I thought it was really cool that you can order the meats by the oz, but a bit strange that my order wound up being 7 ribs off the small end. The total came to $19.44 which was a little more than I was hoping to spend, but fair enough priced for what I got.
As far as the service - everyone was pretty nice but it seemed like they were unnecessarily busy and it didn't seem like they were getting much done. It seemed like each piece of food took 10 long steps to get on the plate. I understand some of this having been to per/oz meateries in Austin, but it just seemed like it took a really long time. Each of the 4 people on the line kind of took over another job from the last, but never really handed it off. Also, it would have been really nice to know about the pickles on the side of the register in the shadows (that were surprisingly good, don't miss them) and the free ice cream (on the menu, but sell it... it's a nice bonus!) I also realize that they can run out of meat since they slow smoke which is totally OK - but for the brisket portion of my meal they said "we only have chopped, is that OK?" - then proceeded to slice off the burnt end (fair enough), slice a lean brisket, and chop it. I'd have preferred the slices, but I'm assuming chopped simply means "lean" here (of course the moist side is the tastiest side of the brisket). There was also a handoff of the old mac 'n cheese over the new container which allowed some of the stay-hot-steam water on the bottom of the container to drip into the fresh set. Hopefully it was steam and not the reasonably gunky looking (though contained in stainless steel) water that was below.
In the seating area there are 2 large tables, a double window seat, and a small table that crowds that window seat (and the exit & ice cream machine). There are also just a couple of extra fun saddle seats if you want to eat like a cowboy. If you come when it's dead you can probably fit a nice big party, but if not expect to eat near a stranger.
Getting down to the food - the ribs had a great tenderness and moistness without being mush. The dry rub was pretty good, but I think a little brown sugar would go a long way. None of the 4 sauces went particularly well with the ribs according to my taste buds, which is a shame. Being that the flavor was good enough on its own I was A-OK. The mac and cheese was pretty darn tasty, and the bit I saved for later tasted really sweet cold. I'm not sure if sugar is the secret, but whatever it is works pretty well. The brisket was tasty for how lean it was and actually worked well with the Sassy sweet Memphis sauce. It still didn't agree with the other sauces very well, but was pretty darn good on its own and with the Sassy sauce.
When it came time for the ice cream machine it was either out of order as 3 other patrons tried it or some unsupervised kids happened to be the lucky ones it broke for (I hope not broke it, but I'm an optimist). Luckily it was fixed by the cook in about 10 minutes, though it seemed like he rubbed his mouth / nose a few times in the process. I'll let that pass a bit as I'm sure BBQ joints are covered in post-finger-lick trauma *shudders* (I'll never leave you!) The cones got even smaller than they looked up close, but they were free, tasty, and a nice treat to finish off the meal.
The other sides here looked great really. There were some tasty looking chopped beats, good looking cornbread, a cheese topped spinach dish, and some great looking sweet potatoes. There was more to offer, and they really all did look good and fresh.
I'm going to have to go back to give the burnt ends a try and maybe the rib tips or chicken. If a smoker can master those then there is something I must have missed the first time around.
In all honesty - without a friend's recommendation (and tips) Sharko's would have landed at 3 stars. It was all pretty good for the midwest, but we are spoiled with some other local locations and there were just some things that irked me a little. I will be back to confirm the 4 star status and sample the other wares though. read more
