I tried Pho for the first time. I guess I'm just not a fan. The broth tasted and smelled unpleasant to me, but that's just me. Others love it. It came with several different meats. I didn't care for the steak (too much fat), or the tendon (unpleasant texture), but what really surprised me was the meatballs. I thought they would be juicy, meaty but they were rubbery, as if they were made from snouts, intestines, organs, not sure... The only meat that tasted good to me was the rare flank. And oh goodness, it was awesome! Tender and delicious. If they would let me substitute all the other meats for the flank, I would come back, again and again. But they probably won't. Wouldn't hurt to ask tho, right? BTW the egg rolls and dipping sauce were delectable. Definitely recommend those! read more

They have very good broth, and the inside is very nicely done. The portions are a bit small and the sides (basil, lime, Chilli and sprouts) are weak. Don't get me wrong, this pace still is good and the best Pho I have had in Boise, but it's a far cry from the real thing. Take my review with a grain of salt, as I have eaten at dozens of Pho joints in Portland and the Bay Area, were there are sizable Asian populations. Delicious! I finally found an amazing pho location after moving to Nampa from Sacramento. In Sac, we were not short on delicious pho, here, it's been a bit of a challenge finding the right place. I'm sad this place is a drive for me, but whenever we are out on the weekends in Meridian or Boise, we will make a point to return. The soup was delicious and the vermicelli noodle plate was amazing. The sign is not to noticeable on a pretty rundown strip ...or maybe the color of the building. Not the most attractive/attention grabbing store front that's for sure. The interior, however, is completely trending. Pho is all the rage now and there's nothing wrong with that. It's a good, flavorful soup and it's easy to see why it has so many fans. However, one of the ways I judge a Vietnamese restaurant is by the quality of its bun bo hue. Most non-Asians have probably never heard of this gem from Hue, the central Vietnam town that formerly served as the imperial capital of the Nguyen dynasty. The namesake broth of Portland's Bun Bo Hue restaurant is so flavorful just slurping on it would be highly satisfying all by itself. It is a tantalizing mixture made from oxtail, beef shank bones, pork bones and lemongrass. The bun bo hue at Pho Le, while good, had a flavor more reminiscent of pho. It didn't have the strong taste of lemongrass that is essential to good bun bo hue. That said, all of the ingredients seemed high quality and the staff was very friendly. There must have been a fairly extensive remodeling of the space in a strip mall on Broadway. It looked sleek and modern. I returned another day for pho and it was phenomenal. The best I've tasted in Boise and it ranks up with the best in Portland, where they are crazy for pho. The broth was very flavorful and I really enjoyed that. My server even came by and asked if I would like some extra broth, after seeing me happily slurping what came with the bowl. I gladly accepted. Pho is nothing without good broth and theirs is excellent. One thing I don't like is the gimmicky names. Maybe it's easier for non-Asians to order Pho-Tastic, Pho-Sure and Pho-Nominal, but I'd rather respect the culture by ordering Pho tai nam gau, pho with round steak, flank and fatty brisket. Besides, using the gimmicky names mean you have to continue pronouncing pho incorrectly, rather than "fuh," as it's really pronounced. I do like that they have a small pitcher of nuoc mam, the pungent fish sauce essential to Vietnamese cuisine, on the tables. Not many places do that and I appreciate being to add an additional amount of the sauce to my soup. read more

When you open the door you are greeted with a very fresh ambience leaning towards a modern setting. You will not be disappointed with the interior. We ordered the pho to go. I like Pho Le. Their soup is well executed and, while I generally go to Pho Nguyen on State and Glenwood, I think PL is a reasonable competitor. I used to think it was too expensive, but in the covid 19 era all prices have increased so I now think it's competitive. The soup is not as sweet as Pho Nguyen's and their cha gio is crispy and fresh out of the fryer. I like their style and probably don't go to PL enough, come to think of it. Force of habit, I guess. Although it's not something a lot of Idahoans like to hear, but I'm a transplant; I originally lived the next town over from Southern California's Little Saigon (Westminster). I may not have any Vietnamese ancestry, but I know enough about pho to at least know what to look for, and have learned from Vietnamese friends. The restaurant itself was very clean, modern and well-kept, which is a far cry from a lot of hole in the walls that I've been to in SoCal. The menu, although thoughtful in teaching you how to pronounce certain menu items and even the usual etiquettes of eating pho, the menu of foods offered were fairly minimalist, and the only differentiators for pho were the bowl sizes and the option to add on tendon and flank... No option for rare beef or tripe. Also noticeable was the lack of soda chanh (lime+seltzer+sugar generally left floating at the bottom), which combines to kick it down a few notches in terms of authenticity... I'm not looking for them to be authentic enough to offer bò 7 món (7-course beef) or even ngo gai (sawtooth grass; it's even hard to find in Westminster), but I thought I'd just give a heads-up for people that also like authentic ingredients. The broth was a bit on the light side, but nothing a bit of condiments wasn't able to fix; I do give credit for the meat being tender and flavorful. I ordered the goi cuon (spring rolls, or I guess what they call "summer rolls"), but they wound up giving me cha gio (fried egg rolls) instead. Also per a colleague as random trivia a long time ago: in Vietnamese traditions, it's considered rude for a waitstaff to bring you the bill, yet I was given the bill almost immediately after the waitress gave me my order. For all of the above, I just got off a rough work week, a red-eye flight, then hit the ground running a few urgent errands before I finally had time to eat, so I was too tired to care about any of the above (I slept 14 hours in a 24-hour period after, but I digress)... But none of it is enough to deter me, and they'll still earn my future business. read more

I can't say it's my taste. they are going for super chic and futuristic but the food and the location do not match. they have 3 options for pho- small, medium, and large. they are all very expensive for soup. $11, $13, and $16. if you're looking for a cheap bowl of soup you are not getting that here. I ordered the medium with just filet. (it says they all come with filet, meatball, and brisket- but you can actually switch it up.) I will say though, the pho is good. it's authentic. the meat is really tender and fresh tasting. the broth is killer...the kitchen is open and you can see all the Vietnamese people back there cooking it so you know you're getting the real thing. it was aromatic, flavorful, and very fresh. Warning: if you get their pho to go be very very careful. Every time I have gotten it it was extremely hot. Last time I cracked open the lid and we to take a spoonful. I accidentally spilled it in my leg and, through my pants, it was so hot it blistered my skin so badly it didn't bra for 3 weeks. When it comes to soup...I just love it. So eating Pho at Pho Le is totally in my comfort zone. I love their broth! It has a subtle gentle taste and is very favorful. The meats they include in the Pho-Tastic compliment the broth and the rice noodles (ribeye steak, meatballs, and well done brisket + optional: tendon and well done flank). Extra condiments in the way of Thai Basil, Bean Sprouts, Cilantro, Jalapeno Peppers, and fresh Lime add a freshness to the Pho. It is a true filling meal and a huge hug of comfort on a chilly day. I recently rode my bike there so I could earn the meal. Yes...it was Brilliant! A note I will add is there is a small amount of MSG in the beef Pho (not enough to set my allergy off), but none in the vegetarian or the chicken Pho. Popped in to order take out. There's something about Pho that I crave when I'm sick and Pho Le did not disappoint. The interior is very clean and fresh. You can see straight through to the kitchen and it's kept immaculate. The service is top notch and the gentleman who helped me was very helpful in giving me a quick run down of the menu and recommendations. He was also very attentive of the guests who were dining in. I ordered two medium size Pho which is a very hearty portion- one with ribeye and the other with both ribeye and brisket. Take out soup of any kind be a bit precarious but they took the time to package it up securely and I had no concerns over it leaking on the drive home. All of the ingredients and toppings were packed up so neatly. As for the Pho itself.....aaaaamazing. So much flavor and the fresh ingredients hit the spot. The Egg Rolls are also so yummy, the egg rolls will be the very first thing I order every time. The dipping sauce is what really takes them to the next level. I live in Nampa, so it's a bit of jaunt for me to go to Boise just to get Pho but, when I get a craving for it, Pho Le is the only place I'll go. When I was in the military, I had the honor of going TDY to Viet Nam for six weeks, as part of the Joint Task Force/Full Accounting mission, to recover the remains of American MIA servicemembers; our mission successfully recovered 12 Green Berets from 5th Special Forces Group (A), killed at the Battle of Kham Duc....Wikipedia doesn't come close to describing what really happened. 12 Supermen held off 3 NVA Battalions, killing several hundred before they were all killed. It was what inspired me to join the Special Forces, but I digress. While I was in Viet Nam, I ate a lot of Pho, mainly because it was delicious and really cheap. Pho Le brings back those great memories of my time in Viet Nam, because the taste is spot on and, quite frankly, it's what I expect from Vietnamese owners. Sadly, other Pho restaurants that are also owned by native Vietnamese don't hold a candle to Pho Le. A small bowl is more than enough to fill you up...don't let the size fool you, because small it is not. The staff is incredible, friendly and willing to accommodate their customers. I have a food allergy, and they went out of their way to make sure that my Pho never came near the ingredient in question. Their iced coffee is strong enough to slap you silly and call you Sally, with just the right sweetness to make it enjoyable. The only thing I can say that is a bit of a bummer is that they have taken Banh Mi (the most awesome Vietnamese sandwich) off of the menu....something about the bread supplier being a twat waffle or douche canoe, I can't remember.
