I got like 4 rounds but I wasn't able to eat a lot because I got full very fast. The premium is worth it because of the a5 wagyu, amaebi, unagi ! So delicious and the highlight of my whole experience plus the takoyaki and shrimp tempura. The sushi melts in your mouth and is so good. The takoyaki was sooo delicious! The gyoza was good but the sauce could be better. I tried the premium hand roll and the salmon roll sushi and ok I was disgusted because it tasted like fishy LOL... couldn't get the thought of fish sperm out of my head.. The sashimis were alright Disappointed because they didn't have bluefin belly fish at the time I came in.. UTC roll was not good I don't recommend But the hotel del sushi was so fireee! Because Yelp reviewers have so much credibility, right? The unique location makes the building a stretched triangle and gives it a certain vibe. I ordered 3 things and was extremely surprised by all 3. First, I had a spicy salmon sophia bowl. I had no clue what a "sophia" bowl is, and after a brief search, it appears that Google has no clue what a "sophia" bowl is either. I'm very curious as to how this place landed on the name "sophia" bowl. I assume this used to be or came from the "crispy rice (6 pieces)" on a previous version of their menu. If so, I guess this is better. It's just a salmon donburi, but I think it's rather different than what Americans would expect from a "poke" bowl in San Diego nowadays. There's not a ton of other ingredients, and while there's sauces that enhance the taste, it really just focuses on the interaction between the salmon, rice, and crispy rice. Ironically, this style of salmon rice bowl is more Japanese than your typical San Diego poke bowl, which is more of a Hawaii staple. I loved it and thought the texture and umami came together really well. Next, I had a few takoyaki. The plating for this is not very convincing. There's no bonito flakes and pretty light on the green onion also. There's plenty of mayo I suppose. The takoyaki themselves though, are fantastic. These are big, crisp, and hot, although still not as hot as I like. The texture is really on point. For as big as they are, maybe they could've put slightly more tako in it. Oh, also no pickled ginger, but I realize I forgot to check if there were any on the bar. Finally, I had a miso ramen, which was also interesting. Was it the best ramen in town? Definitely not. Was it at least amazing? Also no. However, it was.....really properly Japanese in a way that's hard to explain. Like, this is the ramen a Japanese chef would make if they had to make a cheap bowl of ramen with almost no resources. LOL Like, it has a lot of noodle. An average American would simply complain that it's too much noodle, but I would argue this is the correct ratio in traditional East Asian cuisine. We have a concept called 主食 shushoku or zhu shi in Mandarin. For ramen, the "staple food" is the noodles themselves, which should be the focus. In Japan, it is normal for ramen joints to have a noodle refill option, and that will be one of the most common requests from customers. The noodles themselves are some pretty cheap stuff though. On top of that, it has a bit of seaweed, green onion, and bean sprouts, which are all ubiquitous ramen toppings. The toppings it's missing are stuff like corn, mushrooms, kamaboko, etc., which while present in ramen, aren't always present and/or are more common in American-Japanese ramen. The pork belly is small, but the texture and appearance are both very standard. Also important, the broth is surprisingly soothing. Some ramen made by people that don't know what they're doing make a broth with a thin consistency that give them away. Well, a lot of times, there's just not much emulsified, which makes it more flavored water than an actual broth. While this broth isn't super intense or complicated, it has a well-measured saltiness and consistency that reminds me of average ramen shops in Japan. For that, I love this broth; I could drink it every day. For the record, I am far more likely to come back here again than Saiko Sushi at least, even if just to ask y'all a bunch of food weeb questions.

The dressing is light and lots on the plate including avocado, taro chips, cucumber, and apples. Textures and flavors go so well together. I also got a spicy tuna hand roll, the Kobe Roll, and a few nigiri's including Hamachi, Chutoro, and Salmon belly. All were delicious but the Chutoro was the fave. We were first to enter and it was clear immediately that omakase is this restaurants institution; delicate lighting that highlighted the bar that separated diner and chef, clean lines everywhere, and just overall a beautiful place. The theme of Sushi MARU is truly attention to detail, and that extends from arrival, to service, to, of course, the food. Staff were incredibly attentive and easy to talk to, including the chefs. The food, I will comment on just generally as the menu is constantly changing (as is the case with many omakase): each dish was composed of pieces that complemented each other well and created a cohesive flavor pallette. Each nigiri was artfully prepared that emphased the quality and cut of the fish, and were complemented by flavors to further highlight that. The flow of the evening was non-traditional omakase, but it felt perfect. Price ($180pp) is not for the faint of heart, but is cheaper than others I've seen. Service was quick, and they checked in often to take additional orders. I'd recommend ordering any baked or fried rolls early in the meal since those seemed to take the longest to come out. My favorite item was the special of the day: spicy garlic tuna carpaccio, served thinly sliced with crunchy garlic oil on top. The kids really enjoyed the udon, edamame, and California rolls, and there are plenty of options for picky eaters. Price-wise, I'd say it's in line with other sushi spots. Our total came to $230 for the five of us (three adults and two kids), which worked out to about $46 per person including drinks. If you come hungry and ready to make the most of the AYCE option, it's worth it. If you're a lighter eater or only stick to one or two types of sushi, they also have a regular menu with individually priced items.

The gyoza was PHENOMENAL. We had it pan fried. The karaage was more like chicken nuggets and we LOVED Them too. The rolls were all top notch. We are picky about our rolls (one of us lived in Japan for a hot second) and the rice was perfectly cooked and the seaweed was fresh. The cuts were each tasty. It's a small place with a few tables and a sushi bar. The service was exceptional! Very lovely people wanting to ensure you are having a good experience. For parking there is always easy parking in Liberty Station. I recommend either parking in front of the Trader Joe's (there's a walkway between Trader Joe's and Chick Fil A. Go through there and the moment you pass the math tutoring place it is on your right). Or you can park on the corner of Decatur and Womble (from there you can go the walkway to the left of the Navy Fed and at the first opening go left and it will be there). Lightly seared, topped with jalapeno, and paired with real wasabi root instead of that green dyed horseradish impostor. Clean heat, real flavor, no shortcuts. The salmon skin hand roll was another standout. Generous, crisp, and cooked to order. Too many places hand you salmon skin that has been sitting around at room temp which is still enjoyable but not the same thing. Ikuru does it right. Wrapped with radish sprouts and cucumber. My wife ordered a roll with spicy tuna. I tried it to be fair. And look, I respect the genre, but spicy tuna is just not for me. It is mushy paste that is a spicy mayo vehicle IMHO. The crunchy spicy roll... so I asked if they could swap the spicy tuna for fresh loin. They said yes without hesitation for $3.50. That substitution turned the roll into something genuinely delicious. Clean fish, great texture, and the crunch actually meant something. If there is one downside, it is the special roll menu leans heavily on spicy this and spicy that, or imitation crab in almost every option. I do not mind an upcharge and I do not love making special requests of the chef. I would just appreciate a more varied selection so the creativity of the kitchen can shine without needing edits. Ikuru Sushi is still the kind of place that respects ingredients and respects the customer. Fresh fish, thoughtful preparation, and a willingness to customize without attitude. A very solid spot and absolutely worth returning for another round.
