I am not sure how to rate this bakery. I bought two items. The pear tart was excellent. Averaging on high score and one low brings me to 3 stars.

They have so many yummy options, but I settled on a mushroom and Gruyère pastry and an earl grey blueberry cruffin. The mushroom and Gruyère pastry was SO good!!! Buttery flaky layers of dough with a strong earthy mushroom flavor and savory cheese - an absolute umami bomb. We ate it the day after and threw it in the air fryer for a couple of minutes, and it was so delicious. The cruffin was huge! Topped with a delicious light Earl grey cream that wasn't too sweet. It was filled with a blueberry cream and was definitely very filling. There's a lot of sugar coating it, as is standard with cruffins, but it's a nice sweet treat. Definitely coming back for the mushroom and Gruyère pastry and to try their other delicious flavors. Their supreme croissant flavor switches often and we can't wait to try the next one! One of the best bakeries I've been to in Seattle so far.

Don't park at the adjacent bank parking lot, even when they're closed, as when I went on Sunday they had someone ticketing everyone who parked and walked away. I got a small baguette and a cinnamon roll. The baguette has a lovely, toothsome crust, yielding to a diaphanous soft inner portion that tastes almost savory. It's good enough to eat by itself, or makes a wonderful base for sandwiches. This is definitely a bread to savor. The cinnamon roll has almost caramelized raisins inside, very unique. The cinnamon is balanced with the brown sugar so it's perfectly sweet. As for the dough, it's laminated so it's almost croissant-like and yet chewy and crisp at the same time. Delicious!

If you can find parking in the Cap Hill area I would definitely consider this as an option for a sweet treat. I think the prices are really reasonable considering some of the other options. Staff: 5/5 (nice) Sanitation: 5/5 (clean) Soft serve w/syrups (5/5) I've had most of the syrups that they offer with their vanilla soft serve. The soft serve itself is a really creamy and rich vanilla milk flavor. I would say it's closer to that Asian milk flavor if you know what I mean. I think the hojicha syrup is my favorite out of all the ones I've tried so far. It has a really nice roasty flavor and not something you can find at most other places. The matcha I would say is my second favorite. The flavor of the matcha syrup is definitely lighter compared to the hojicha but still is a nice compliment to the soft serve. The black sesame would be the lowest on my list out of the, all since I felt like the flavor was too nutty like it was a blend of sesame and potentially a nut. Overall I would definitely go back for the hojicha but if you're not into that there's definitely solid options for other flavors.

I have so many things that I need to go back and try, most likely with a group, so I can try lots of things. They do lots of specialty items, depending on the day which is a fun way to spice up their menu. I ended up going with the burrata focaccia sandwich which came with burrata, roasted bing cherries, pistachio butter, balsamic, arugula, and sea salt focaccia. SOOOO yummy. Great sandwich, and I am so glad that they did lunch items early in the AM. The cherries were such a unique addition to the sandwich but worked well, and they were also representative of the local area (Rainier Cherries). I wish that there was flaky salt on the bread. I didn't get much salt flavor wise, even though is says sea salt focaccia. The focaccia bread was soft which is my preference for focaccia. Sometimes burrata texture can be weird, but this one was smooth, creamy, and perfect texture.

Overall, I'd say their pastries were generally good not great and were significantly sogged up by 12:30 PM when I grabbed em. Their patisserie is stronger than the pastries IMO and while I wouldn't wait in a crazy line, it's still lovely neighborhood spot and perhaps the pastries are a better texture earlier in the day. Highlights: - Miso Roasted White Chocolate Cronut: My favorite item in their current rotation. The cronut was a tad soggy, but the buttery texture inside is still satisfying and the miso white chocolate filling is lusciously smooth and perfectly balanced between savory and sweet. - Blackberry Corn Mousse Cake: Blueberry mousse is the perfect fluffy texture and the corn is very subtle. The sponge cake is light and perfectly contrasts against the bottom layer of crunchies to add a bit of variety. - Blueberry Corn Croissant: Pastry also held up quite well on this one with the outside still being quite crisp. The inner cream unlike the mousse cake is very corn forward with a bit of blueberry jam to balance it out. Skip: - Black Forest Cake: Found the cake to be a bit too firm with the cream filling to be a little bland and too firm as well. Just wanted this to be better than it was. Also, it looks totally different from the photo on their website heads up. - Tomato Basil Croissant: Just found this to be off ratio wise. The only tomato is the 3 small quarters of cherry tomato at the top and a light smear of basil cream. I can see this being very good, but current form factor isn't doing it any favors.

We ended up getting the miso caramel pork belly from the Hinoki food truck with a side of rice. The pork belly was really well flavored, smoky, sweet, and salty. I'm only taking half a star off for the rice which really wasn't great as it was mushy and overcooked. I would probably opt for the fries next time instead, though this might be a heavier combination. The service was good, and everyone we interacted with was perfectly nice and helpful.
