Visiting Eugene, searched for a place for lunch and settled on Happy Cow. Grass fed, free range burgers on the menu. Ordered up a double, asked that the sweet pickles come in the side because I am more of a dill pickle kind of guy. Food came out quick and everything on the burger looked very fresh. Gave the sweet pickles a taste and quickly added them to my burger, they were yummy!! This might be my first burger I have ever ate without ketchup. The flavor of the burger, sweet pickles, veggies, and cheese was by far enough and ketchup was not needed. Not a huge dining space but it did look well kept and the music playing was a nice touch, not overwhelming. Happy Cow has a new fan!! I got this order from a delivery app, so I'm not able to say anything about the service or the ambience, but I was impressed by how nice the lettuce wrap looked. The burger did taste really good. (I didn't want pickles on my burger because they were sweet pickles-please offer dill pickles too.) The french fries were standard, middle of the road fries that were not terrible but not knockout. Excellent local oddity. What kind of restaurant is it? Yes, exactly! The centerpiece of the menu is an array of loco mocos, but it's not a Hawaiian restaurant - there's no Hawaiian decor or anything, and nothing else from the Aloha State on the menu. There are pancakes all day, but it's not a breakfast restaurant - it isn't even open early in the morning. There are burgers with interesting ingredients like bulgogi beef and kimchi, but it doesn't seem to go for a Korean theming. "Burger" is in the name, so I guess that's what they're trying to emphasize, but those are just a small part of the menu. And there's a lot of ice cream flavors, too. If anything, I'm guessing that someone in this neighborhood likes burgers, loco moco, Korean food, ice cream, and pancakes, and decided to open a restaurant dedicated to all of them. And more power to them - you don't need a theme if you do everything else this damn well. The one thing about this place that's consistent is that it's all good. Happy Cow is a new burger joint in S. Eugene, located in the Sundance Foods plaza. Along with burgers, the menu consists of breakfast hashes, milkshakes, pancakes, and loco-mocos. A loco-moco is a burger patty served with rice, fried eggs, and onion-gravy, which sounds the ultimate comfort/hangover food. The menu is small but they keep it interesting with a Korean twist by offering things like kimchee, kochujang mayo, and a bulgogi burger. The burgers use free-range grass-fed beef. I tried the standard burger ($7) and overall it was highly satisfying. It's nothing too fancy. The meat consists of 2 thin griddle-cooked patties with crispy edges. The pickles looked home-made. I asked for Korean mayo on the side and it was very good on the burger. I also tried the bulgogi burger ($7), in which the meat has a Korean bulgogi flavor. I enjoyed it! The flavor wasn't too strong (could be stronger) and added a nice sweetness, similar to teryaki. It's worth trying. A gluten-free bun is also available for a small upcharge. The fries & sweet potato fries were good too. They are the thicker-cut style, not crispy. They were seasoned very nicely and hard to stop eating. This place is good! Burgers, has brown bowls, milkshakes (regular and dairy-free). American and Korean fusion. The dairy-free milkshakes are so tasty, they use locally-made Coconut Bliss as the base for them. (I went through a phase last year where I got one of their milkshake once a week for about a month as a coping mechanism, so I can also confirm their shakes are comforting when you feel like the world is falling apart. :-D) I finally tried their actual food a few months ago. I ordered the bulgogi burger with kochujang mayo spread. It was really good--moist and full of flavor, umami flavors from the soy sauce, crunchy pickled cucumbers added something extra, and mildly spicy from the mayo spread. It's fast casual, so you order and pickup at the counter, or get it to go. (Their online ordering works well.) Staff are friendly. I recommend it! read more

Ordered online for Pick Up. Once the order was accepted, I got an email saying it would be ready in 12 minutes. I was skeptical - and 10 minutes away - so I left right away. I was thoroughly impressed that my order was ready when I arrived! I ordered 2 burgers that both came with fries and a soda. I filled up the fountain drinks, then was on my way. It was a bit of a bummer that when I got back with a Lemon Lime Soda that was missing the Lemon Lime (just soda water). But the fantastic burger was a happy constellation. I got the Cowboy burger, and the thick bacon, crispy jalapeños, and pepper jack cheese beautifully complimented the smash style burger. The fries were adequate, if a little soft (but that could have been from the drive time). The parking lot is a bit teeny and shared with a number of businesses, but it's easy to find. The dining area was a decent size for eating, with a covered outside area shared with another restaurant. The staff may be should remember that they work at a place called HAPPY Cow. I was in the mood for a burger and this spot was new to me, but close to my work. I got a Bulgogi burger with mayo and added kimchi. You had the option of spicy mayo but I worried that would be too much for me. The burger was cooked medium rare to medium, which is perfect for me. The Korean style spices added to the beef was tasty and the kimchi was an excellent addition. It came with a large amount of crispy fries (yay!), with some type of seasoning salt that I really liked. I got the food delivered so I can't speak to the decor or service. The veggies in the burger were cut pretty big and kept wanting to fall out and I think the meat could have had even more seasoning. With this in mind (and my love for both Hawaiian and Korean food) I decided to try the kimchee loco moco. It was very tasty, and it's hard to argue with rice, a fried egg, a burger, and gravy! The kimchee was very good as well. My friends had the happy cow burger and both said they were good as well. The portion sizes are VERY generous. When I return I plan to try their bulgogi burger. Wow! I am impressed! I discovered Happy Cow just days after having a discussion with a friend about how I may never will be able to try a Loco Moco due to me being a vegetarian. Low and behold, Happy Cow offers a plant-based Beyond Burger patty version of this popular Hawaiian dish! They also have on the menu a vegetarian version of their burger and a variety of options for their meat eating clientele. I ordered my husband a BBQ Pork Loco Moco and myself the plant-based version. I made the order over the phone but they also do have the option to put in orders through their website. The verdict? Yummy! After a few bites I doubled checked the receipt just to make sure that they, in fact, made me the vegetarian version for me. The Beyond patty is so convincing I was sceptical that they may have made me a regular one by mistake. After I gave my husband his order, he quickly assumed that he was going to have leftovers for dinner since the serving size is pretty hefty. When I returned to his office a few moments later to bring him a napkin he was already half way through the dish. "I lied. There is not going to be any leftovers after all. It's that good.
