There is a particular danger in expectation. It is not the enemy of pleasure, but it is its most demanding companion. My breakfast from the Hay Y'all food truck in Eugene arrived with promise, and in many ways, it delivered. The flavors were thoughtful, deliberate, and undeniably well executed. The pecan-crusted chicken was juicy, its crust confident and well seasoned. The French toast was rich without excess. The biscuits were fluffy and deeply comforting, and the gravy--pepper-forward yet restrained--was balanced precisely to my taste. This is food made by someone who understands flavor. And yet, cuisine is not merely flavor. It is temperature, proportion, and expectation meeting reality. Despite picking up my order immediately and driving no more than two minutes home, nearly everything arrived lukewarm--hovering uncomfortably between hot and forgotten. This was the single greatest disappointment, as warmth would have elevated every component substantially. Food like this begs to be eaten hot, not merely remembered as such. Portion size, particularly for the pecan-crusted chicken and French toast, also fell short of what had been promised--if not verbally, then visually. Online images suggest generosity: three, sometimes four pieces of chicken. My plate held two, both smaller than expected. The price remains reasonable, but I would gladly pay slightly more to receive portions that align with those expectations. The accompanying fruit, while a pleasant gesture, felt miscast. Tart strawberries and under-ripe pineapple did little to complement the dish. In January, this is forgivable--but perhaps a preserve or jam would serve the plate better, offering harmony rather than contrast. And yet, I find myself conflicted. Because despite these shortcomings, the food is good. More than good. It is thoughtful, balanced, and clearly prepared with care. With accurate portioning and food served properly hot, this meal would easily earn four, perhaps even five stars. I know this. For that reason, while my immediate, emotional reaction rests closer to a three or three-and-a-half out of five, I am rating this experience a four out of five stars. The quality of the cooking warrants generosity, even when execution falters. I was there very early, right at opening, and I recognize that busy mornings can challenge even capable kitchens. I will return. Not out of optimism, but out of confidence--because when food is this well conceived, it deserves another chance to be served as intended. read more

I have been seeing a lot of good reviews for Hey Ya'lls... especially for their Chicken Fried Steak / Biscuits and Gravy combo. So naturally I had to try it. Lunchtime, after all! Nice little food truck park up on Barger... easy to find and get to. Went up to the window and ordered Chicken Fried Steak! Service was ok. Got a remote alarm to let me know when the meal was ready. Ordered a bottled water also. Remote went off... got my food. It was good! Large piece of chicken fried steak, hot and crispy. Large biscuit (halved), and LOTs of yummy gravy. Little heavy on the pepper for my tastes.. but was very good. I ate it all! Good portions.... I was adequately full, without over doing it. All in all, a good experience! read more

It was good but a bit pricey. Paying $36 for a food truck breakfast kinda hurt a little. We ordered a full order of chipped beef, which was good but we'd get regular sausage and gravy next time. We also ordered the hot honey chicken biscuit and they charged us an extra dollar to put the honey on the side (and it was not a large amount of honey by any means). We got two iced Arnold palmers which were good. The star was really the homemade biscuits. Every table was filthy - if I owned a food truck I'd wipe them down every day. It was breakfast, early in the morning, they were the only truck open, but they clearly didn't take any time to wipe the tables down at the start of their day. read more

Winner winner chicken sandwich! The Extended Jam - Chicken fried to perfection with a tasty Reality Kitchen bun. Nice crunch from the cole slaw and sweet from the hot honey bacon jam. The pimento cheese was a bit of an afterthought but contributed well to the melange of flavors. 5 stars! Fried Chicken Sandwich - Very basic as described. Got it with the pimento cheese but again was barely perceptible. Maybe they were running out?? For the price I'd get one of the other sandwiches. 4 stars. French Fries - Very small order of fries and nothing extraordinary for $4 - would had expected more. 3 stars. Lemonade - Super fresh and refreshing! Minimal pulp. 4 stars. Outstanding customer service! We were miffed about our online ordering experience since we got up charged for our meal and we received a super compassionate response and complimentary lemonade. We usually hit Tucky's for chicken sandwiches but wanted to give this a try. I'm guessing breakfast and biscuits is the way to go here so we'll definitely have to come back for that! read more

I've had Hey Y'all a few times. I usually get a breakfast sandwich, but tried the uncle Benny today. So delicious! They were sold out of their new brunch dessert bread pudding, but I'm already waiting for them to reopen to try it! Everything I've tried has been so good. They are fast, friendly, and prices are reasonable with good sized portions. Their biscuits are the best I've ever had. I don't know how or why, I don't even like biscuits all that much. But theirs are buttery, soft, and amazing. If you love breakfast food, stop by and give this food truck a try! I took my whole family to Hey Y'all on one of the recent hot and sunny days. I'm not a fan of the heat, but this meal made it worth it. We got an SOS, an Uncle Benny, and the Sunday brunch Chicken and French Toast, as well as Arnold palmers and a Red Bull. It was 5/5 amazing. The SOS brought a couple of us back to our childhood, it was classic and delicious. The Benny was perfectly cooked, the biscuits were fluffy and light, and the gravy was creamy, peppery, and so good! The chicken fell apart when you bit it, this will be my new fried chicken spot, it was amazing. The French toast was custardy and sweet. This is one of my new favorite spots! The owners were so kind, and even gave us an extra drink for free they accidentally made. The spot was hot, but had covered seating and lots of other options, a great food cart pod. I want to note right up front that the people here are awesome and I just want to give them money to help them be successful on that alone. But when it comes to CFS and the B&G.... Nope. So another caveat here... I'm positive that this style of gravy is very appealing to many. But I'm not a fan. The CFS was breaded, but it was very plain and lacked any sort of a crisp to it, also soggy. The gravy was essentially water in consistency, with a decent flavor. But I'm fairly spoiled I suppose in that I'm comparing this to my very own homemade sausage gravy. I prefer a thick sausage gravy with generous crumbles of sausage. But... to each their own. The breakfast sandwich was incredible. Particularly the biscuit. Very fluffy and fresh. Look forward to trying the rest of their offerings, but I'm squared away on the b&g. Very nice folks.
