I have eaten at this privately owned restaurant many times including before it was remodeled due to a fire. The food is American style small town. It isn't a flashy place and normally staffed by the local high schoolers. There is also always an adult supervisor on staff. The owner will walk around and greet his customers. The prices are very reasonable and stop by when you are driving south from Denver on HWY 285 or traveling north from Buena Vista. read more

Walked in Sunday morning right around 9am. Restaurant looked busy. Hostess immediately greeted us and said "sit where you like". Our server attended to us within a couple of minutes. Our server asked if we wanted something to drink and offered coffee. We just wanted water. Looked over the menu while she grabbed our water. She returned and took our order. I had the Reel Deal and wife had the French toast. Place was busy but only waited about 10 minutes 15 maybe before breakfasst arrived. Eggs were cooked a perfect over easy and both meals were very good. Easy parking, friendly staff and good prices. Stopped in with some friends this past week for lunch. 1hr 20mins later we had a partial order of what some folks would call food. Ok, fries were good even if we had to get them because the waitress and cook forgot our salads that were supposed to come with the sandwiches. Specifically: Flies everywhere! Very poor service. 10mins to get a waitress to take a drink order, which she then forgot. 20 mins later we got our drinks and placed our orders. After 40 mins, hearing lots of other folk who's orders were late AND wrong, we got up to leave, but were told "5 mins and your orders will be up". Mind you the waitress never came by to check on us, refill a drink, apologize for the lateness. Nothing till we decided to leave. So we waited, 10 more mins. Burnt to a crisp fish sandwich BBQ beef sandwich which consisted of Budig packaged beef, chopped up with some nasty sauce on it. Very disappointing, three of us locals will never be back. good solid breakfast food, comfort food very busy on a Tuesday morning en route to Alamosa. We were hungry and looking for breakfast as we approached Evergreen. i saw reviews for this place and preferred this to fast food places along the way. We had a wait of about 20 -25 minutes, then we ended up seated at the front counter, right next to the register, but it kept us from waiting long for a table and we got to know one of the locals. I'm pretty simple to feed, as I love waffles, French toast, eggs, and sausage. I had the pancakes and nothing fancy, but they were done well. I felt the prices were good, not too expensive for simple fare. The bf ordered a veggie omelet and he was pretty satisfied and felt that Yelpers did not lead us astray. Stopped into the cafe and it was packed today. We enjoyed our food, but the thing that ruined it for me and my family was a boisterous guy that spoke loudly enough for everyone to hear. Apparently a regular customer, he was extremely loud & swearing up a storm and not giving any consideration to women, children or anyone else for that matter, trying to get thru their meal. We felt very uncomfortable, and I noticed other patrons were annoyed with him, as well. Even one woman just walked out. He visits the cafe, meeting up with his friends, a few little old biker types, frequently. He just seems intimidating, you don't want to approach him. When we walked into this place, which seems to be an old house converted into a restaurant, I was nervous. It has that kitchy kind of decor that you see on "Restaurant Impossible" and that always scares me, since I am the nervous restaurant type anyway. There was fishing decor on every wall and some random boxes that contain porch lights (boxes you would see at Home Depot with what may have been price tags on them... confusing. The waitress didn't really know the answer to any of our basic questions "Is your beef fresh or frozen?" "Is there pork in your green chili?" etc. but she did find out the answers. We ordered and I got the grilled cheese, and it was really tasty! The bread was perfectly crispy and buttery. The fries weren't great, but they were ok. My kid got the red bean chili and he loved it! The other kiddo got the beef and barley soup and he thought it was delicious, so did my husband. Overall, it was a good experience, the food was pretty good diner style food. The burgers looked fantastic, I regretted not getting one. I saw a guy with a burger smothered in green chili and it looked great, too bad it has pork in it (which I don't eat). Stopped here before a fly fishing work event for breakfast. Great little spot in Bailey to grab some coffee, hot breakfast and just catch up. The staff is friendly and knows all the regulars by first name and will even hand them coffee or soda or their drink of choice upon entry. I sat at the counter and ordered 15 breakfast burritos for our group and had a cinnamon bun with hot chocolate while I waited. You should definitely stop on your next drive along 285! read more

Solid breakfast restaurant. It's a little small but has a nice cozy feel. Service and food was fast, staff was friendly. The smothered sausage burrito is the best we've ever had. The burrito comes packed with potatoes, a fair portion of sausage and egg. The smothered sauce is thick and cheesy, has a nice little spiciness and tastes phenomenal! I ordered the fish and chips. Sorry but if you're going to advertise fish and chips as being authentic at least serve fresh fish and fries. Taste was fine, but I shoulda known this was not going to be good when upon entering I see a microwave on the counter front and center. I'm all about giving folks a chance and decided to go ahead and order. The fish was Im quite sure frozen out of a box as were the fries. On my part I should have inquired, but being in the mountains of Colorado near all the rivers and lakes with abundant trout, I expected fresh fish. So 2 stars is what they get and I should make it 1 because you basically had to clean up after yourself and condiments where prepackaged for to go orders aside from tartar sauce which was basically mayo and some relish. My husband and I visit Bailey about 10 times a year, just to get away. Cutthroat Cafe has always been a quick, satisfying stop for breakfast. While it isn't gourmet by any means, the portions are large and prices fair. Today's visit left a bad taste in my mouth though, and it wasn't the food. Our waitress, who we have seen before, made a real obnoxiously-loud stink about her tips. Between badgering the new-ish busser about how much a certain table left and if she made sure to put it in her "bucket", and ranting to another waitress about how she felt jipped by lousy tippers, I couldn't help but be offended. Not only was she discussing this loudly, but her attitude left me feeling like a bother by simply being there. Chip and the rest of the staff are great and we have never had an issue before, so we still tipped generously, but this situation stuck with me all day. As someone who has worked in customer service most of my life, I understand that it can be frustrating. But if you don't like the way your customers are tipping you, you should be more cognizant of the kind of service you are providing. read more

I think this place might be heaven. Sweet little patio, good, solid food, kind staff. We were camping near by and no fires were allowed. This was the pot of gold at the rnd of the rainbow! Been a while since I've come here because it was so off putting to enter the seating area with filthy carpet. The owner has remedied that filth by getting a wood floor which makes the place feel more inviting, open, and mostly CLEANER. The service here is awful. I appreciate the owner employs high schoolers and gets them into working adults. But they are terrible servers. On their phones by the register. No refills, even when you decide to be annoying and slurp the nothing left with your straw... you come here if you want to be left alone I think. They drop your check when they run the food and you don't see them again. It is what it is, and it's much better than it was the last time I reviewed. Good job there but please get those servers to be attentive. read more

Small little local restaurant, which is great! Waitresses seem to be very young, but they are super nice and try very hard. This restaurant is not as great as the reviews have said. I've been here for lunch a couple of times. The first time I had a cheeseburger, fries, and some water. What surprises me was that the food portions are really small - like children's lunch size... Way smaller than I expected for a small town restaurant. Usually around this area, you get huge portions of real food. This food was very tiny, and the quality was not very good, the food we got didn't taste very good either (dry, bland) - and teeny-tiny The meals my friends ordered were even smaller. Think "wonder-bread sized sandwich you might make at home for a snack, plus a mini tea-cup sized side dish bowl (literally) with some beans in it. I'm not exaggerating. To be fair, I didn't have any problems with their service whatsoever, the staff were very nice. I just think the food sizes were too small, and the food quality was not there. No idea how this place got 4 stars. Salad was brown, asked for a fresh one. Got it...20 plus minutes later and after our meal was served and completed. And we were the only table in the place! Well, we wanted this to be a good experience and kept hoping it would turnaround but the whole thing just went from bad to worse. First, the ordering and seating procedures are very unclear. The outdoor seating offering is nice .... but right next to a dumpster with a wafting garbage odor while dining is quite unpleasant. And the chairs were dirty. My daughter's soda was dropped off with a gnat smashed on the inside is the cup and frozen into one of the ice cubes. The meals were all brought out individually so that no one actually was able to eat lunch together. The last meal was brought out to my son after everyone else has already finished...with a wet soggy bun on the burger. The food was all quite subpar. An amazing cafe with great staff. The food is delicious, I had the smothered breakfast burrito that had the perfect mix of mild spice from the sauce and savory from the sausage. We were driven through baileys at lunch time and decided to stop because of its reviews. I must admit when we drive up it looks a little sketchy. We had a moment of " should we go in". But this far most reviews are spot on. We were greeted by the happiest crew I have seen in a while. Most were late teen and early 20's. I very impressed with them. Chip's place is awesome! My family and I have been here countless times and we are customers for life. Last visit on the 15th of May for my daughter Madelyn's birthday we went there for breakfast and I ordered the smothered green chili burrito....Excellent!! My wife ordered The Real Deal, smothered in gravy, and my daughter ordered pancakes. Chip surprised us and made a mickey mouse pancake for her. She still talks about it. Just terrible. The place is "run" by teenagers it seemed. Staff are loud and obnoxious. My "chicken fried steak" was just Salisbury steak that was overcooked. Soup came out of a can. The turkey is just lunchmeat that has been cooked on a grill drenched in grease. Where are the adults? Everyone there was under 18...Aye aye aye. After moving to Bailey we were recommended this place by several people. We stopped in on Friday, September 5th between 3pm-4pm. We originally had wanted to go to the Coney Island hot dog place but that is another story. We walked into the Cut Throat cafe and immediately saw that is was being run by high schoolers. We thought that might be cool. We then saw that one of the staff's friends was there with their dog, a cute little Dachshund. They were just sitting in the entry way but being dog lovers we didn't think it was too odd. We were sat a table and it seemed a bit dirty. The big window we sat by was filled with tons of flies. As we waited for our food we noticed that the dog was now being walked around the counter area / kitchen door and was being brought food and water from the kitchen. The same kids petting the dog were also going back into the kitchen, presumably to make our food. Even though we love dogs we're pretty sure this violated health codes. We had ordered a cheeseburger, tuna melt, grilled cheese and chicken tenders. The food was OK, not great. The soda was watered down. The place was slow, I think there was only one other group besides us. Our waitress was nice. Based on the flies, the lack of cleanliness and the dog in the kitchen area, we probably won't go back. We're locals here now and are seeing that the good reviews places like this get are the product of folks who have lived here longer have lowered their expectations a bit. We are foodies and the only thing we miss from living in Denver is having good restaurants to eat at. The Bailey / Conifer and Evergreen area seems lacking in quality food places. read more

Affordable and delish! This little café is located in a "blink and you missed it" town on highway 285, in between Denver and Fairplay/ Alma, CO. It's on the way to the mountains, really, so if you plan to ski or get out to the mountains for any number of activities you can pencil this in as a stop for bfast or lunch.... and if you wanna get crazy, perhaps even brunch! The owner (Chip?) was super duper friendly and all the employees were so chipper. Really great service with a warm Colorado smile. I asked the owner about the name of the restaurant and he dove right into a heart-warming story behind the meaning. First, Cut throat Trout is the state fish of Colorado. That is the obvious meaning. Especially when you notice all the fishing decorations throughout. The second, part was far less obvious and really caught me by surprise. This gentleman's first wife passed away from cancer years before. She had throat cancer and had to have surgery which left her with a long scar. Her nickname became cut throat to her family and friends. He so lovingly told the story, there were several people listening in on the conversation and we were all so touched. He was so engaging and his regulars stopped in to give him a hug. This guy and his staff are awesome. I will be back on my next trip up to the mountains. Not to be overlooked, the food truly was great and breakfast prices were affordable with plenty of options under $7! read more

My wife and I stopped here for chili and light dinner on a late afternoon in June 2016. We were tourists passing through Bailey. We wanted chili and a light dinner. The chili was not good -- it's just bland baked beans, totally uninspired. But we enjoyed the BLT sandwich and fries. Prices are low and affordable. Good, down to earth food, staff and atmosphere. We came for breakfast and the steak and eggs was yummy! The steak had such good flavor. I love their hash browns. My friend had the French toast and called it "delicious". The young girls who were working Sunday morning did a great job and worked hard to make sure we had everything we wanted and needed. DO NOT come here if you want a fancy white tablecloth place. This place is down home! I had to laugh when I asked if I could pay extra and get a pancake instead of toast. The response? "Yes, but there's a charge." When I asked how much, she said, "35 cents." That cracked me up! read more
