Our visit to Cascade Biscuit Kitchen was really disappointing. The restaurant is kinda fast casual I guess, because you order at the counter and then sit at your table for your food to come out. My mom ordered a waffle a la carte and it was honestly stunned to see that it was a pre-made waffle (I saw her put it in the oven when I was getting some water). Liege style they may be, but Eggo liege? I mean I clearly don't know they use Eggo waffles specifically, but I just cannot believe they charge over $5 for a frozen waffle they stick in the oven for a couple minutes. We ordered some beignets for the table, and beignets came with the meal; we assumed they'd come first. It was a lot of food, especially all at once, so the beignets didn't quite get the full attention they deserved. But they were just ok, and if you're looking for beignets I wouldn't come here just for that; Oh My Mini Donuts in Eugene makes them better. Probably the best part of the meal in my opinion was the breakfast casserole thing they have--their potatoes. It reminds me of a breakfast thing that my mom used to make and now I need to find a recipe for it so I can make it soon. The biscuits were not bad, though the butter was cold so it couldn't really spread very well and that made the biscuit a bit dry. And on an 80 degree day they couldn't put any ice in their water container (water is self-serve) so it was room temperature. I'm glad that we came because now I don't have to wonder about it anymore. And I mean, it's in Springfield just on the other side of Glenwood, and the Eugene/Springfield area isn't huge so it took all of 15 minutes to get her. But everything I had here--except for the potato casserole--is something I can get a better version of elsewhere, and closer. read more

Tried this place out today (around 9:30 am on a Sunday during Memorial Weekend) and loved it! It was early enough that there wasn't really a wait and plenty of seating. The space is really cute--feels like a legit southern biscuit place, it's tidy and clean but without frills (in a good way). The benches can seat a lot of people! We ordered a Ron Swanson breakfast, a Chicken & Waffles Breakfast, and some beignets (because I had to try them)! As you can see in the pictures, there is a LOT of food! The waffles are liege waffles, the yummy kind with the sugar crust! And it was all really delicious! The beignets were hot and flaky and came with this light lemony creamy stuff that was very good. We ended up taking home boxes--I feel like I've got enough food leftover for 1.5 meals! They have Coke Products & juice in a case, along with unlimited coffee and water. The mushroom gravy could had been warmed a bit more and had fresh mushrooms but it was still a delish dish. Appreciated all the substitutions since it was the perfect plate for us. 5 stars. There was a bit of a wait for food, but we appreciated piping hot beignets and fried chicken. The floor and our table needed a little bit of a cleaning but I'm wondering if it was just an off day. I question the food practices here, saw a giant pan of gravy on the counter with a box fan blowing in front of it. The place just was a bit cheap feeling and tables were dirty. We came on UO's graduation day to celebrate my graduation. There was only two workers and I think they felt quite overwhelmed because it was a Monday and might've not known it was graduation. The food took awhile to come out but came out still hot. We had the beignets which had a crisp outside and were a nice not too sweet treat. I had the hash plate which I felt like the hash was a bit greasy, and i wasn't the biggest fan of the hash browns, but overall it was good. I know that this restaurant is new so they're still getting used to it but I think that maybe having another worker would help tons. I've been here twice with my family. The biscuits are good. The breakfast meats are excellent, they buy good sausage and bacon and they cook it correctly. The coffee is diner-grade coffee, and it would help some if they simply made it stronger. The country fried steak is diner-grade, probably bought as a frozen prepared, and good enough for me. The "rich sausage gravy" is disappointing. I would guess they open a #10 can of industrial country gravy and warm it up like almost every other diner does. No aroma or flavor to it. With their excellent breakfast meats, they could make a big batch of killer gravy, and even mix in some of the canned gravy to stretch it out and this would be a 4 star review. Improving the coffee would be the other step. It's a cute enough hole in wall type breakfast place, I will return to try the chicken and waffles. read more

The hype is real! I had been having this place suggested to me for weeks and finally had the chance to try it on a Sunday morning. I was worried because I have read reviews about this place not having table service and seating being limited. On a Sunday morning I figured would be the worst time to give it a try but here we were. We arrived about 9am and to our surprise, no line and plenty of seating. Ordering is counter service as stated. We had plenty of time to sit and look at the menu before ordering. The food sounded great on paper and I was hopeful it tasted great too. I ordered the lucky clucker and my husband had the ranch hand. I also got a biscuit on the side for later and beignets. The BEIGNETS... good lord, take me to fried dough with lemon curd dipping sauce HEAVEN! Both of our meals were huge. The chicken was amazing and the gravy is seasoned to perfection. I ordered the biscuit on the side because the one in the meal gets lost in the sauce so to speak. I assure you, the biscuit by itself was the real deal. Coffee is self serve and limited to cream and sugar but this isn't the Cascade Coffee Station. Bussing your table is also the expectation. Service was nice, friendly and they are keeping the place clean and inviting. Downtown Springfield could use a new breakfast /brunch place and I was glad to see them opening. Unfortunately I was not impressed by the food I ordered. I was in the mood for biscuit and gravy and ordered the Lucky Clucker. Honestly the only thing it had going for it was its size, an enormous biscuit drowning in white gravy with thick pieces of fried chicken, a slice of thick bacon and a sunny side up egg on top. It looked very appetizing. But, the gravy was flavorless even when I added a dosing of black pepper and some salt to it. It simply had too much flour to it to be tasteful, it was pasty in my mouth without flavoring. There was so little sausage in it that my tastebuds did not pick up on it at all. The biscuit itself was baked right, doughy and puffy. The fried chicken was off as well, very bland and over- cooked, not pleasant, quite tough. The breading was okay but had a weird flavor to it. Like it had been fried some time ago and received a second short frying right before serving.... Bacon was thick and smelled good, but again, it tasted like it was old and more jerky than crips bacon. The egg was done perfectly. The egg was also the only thing that came out hot, the other parts of the meal were lukewarm so the gravy was congealed which did not help it at all. We had to try the beignets, as I read multiple reviews that they were good. Indeed, they were good. We had three and the outside was nice and crispy, light and airy on the inside. Just like the ones in New Orleans. The lemon curd served with it was delicious. But again, they were NOT hot at all, just warm. I think this place could be excellent, however, I thought my experience overall was okay. First it's self serve, your order at the counter, get your own water/drinks, grab your own seat, and silverware and napkins are at your table along with salt pepper and some hot sauce. Im okay with this but I thought our container that held our silverware looked dirty. Second, when ordering I was informed that the eggs are cooked in the oven. I don't think they have an actual stove top. Eggs come sunny side up only. My wife is not a fan of super runny eggs. The order taker said she could cook them so the whites are fully set. I think that's should be standard as whites are not meant to be runny. So you're not able to get a different style egg. Third, while I did feel the food quality was good most everything needed salt badly. The need to season better to begin with. Fourth, most of my food was lukewarm warm at best. I did notice that someone in the back assembles the plates except the eggs and the plates sit under a small heat lamp that did not appear to cover all our plates. They were waiting for the oven cooked eggs which come out last. Finally, everyone was friendly and staff seemed happy. I usually stay in Eugene when visiting my college kid but saw the reviews for Cascade Biscuit Kitchen and some were not glowing. The fried chicken is really good even if you don't love fried chicken. The beignets were out of this world served with perfect lemon curd (which I usually don't like) and marionberry compote. My kids had a waffle which had a slight hint of cardamon and wasn't crispy but soft. I am sure you can make a request if you prefer a crispier version. The eggs come over medium which worked for me. The vibe of the space is warm and homey which reminds me of places I enjoyed in the early '90's in The SF Bay Area and parts of NorCal. The staff were warm and kind. Our first visit to Cascade Biscuit Kitchen caught them very soon after opening. Found them between Tavern on Main and Washburne Cafe. Small space with an order at the counter set up. Staff is friendly and fairly attentive however they did seem a bit discombobulated. Consequently I watched many orders sit on the counter for up to ten minutes before being delivered (including my own). This is where they lost a star as I'm a stickler for hot food. That being said, the gravy was very flavorful and the biscuits were good. I ordered the Lucky Clucker and it was all very good except that the gravy was a bit congealed and the egg was a bit rubbery. Hubs ordered the Ranch hand and he thought it was really good. We shared an order of beignets which were DELIGHTFUL! We both agreed that a chocolate sauce accompaniment with them would have been chef's kiss- over the top. Their menu is extensive with lots of southern options. The bacon is self proclaimed "ridiculously thick" and it was good and tasty. I didn't have coffee but the hubs wasn't a fan of his. ( he drinks it black so he's usually a fair judge of the coffee). All in all it was a good experience, I'm hoping that with a bit of practice they'll work out the kinks in food disbursement. After the dust settles we didn't eat our fried tomatoes, and the sausage, the grits. I posted through the eggs, which weren't bad at all. And I made myself eat the bacon. Because it tasted a lot like bacon. Again.... I know taste is a subjective thing. And I HATE giving negative reviews, especially when I desperately want this place to succeed. But I'm hopes that management reads these things, I offer my friendliest of suggestions. Our food came to us room temp warm, the sausage tasted like it was fried in a pan that had just been cleaned with 409, and the bacon was... well.... Hard to describe. It very much looked like the fattest bacon I ever saw, but tasted like those super dry beef sticks that randy savage use to promote on t.v. Of course I can say my gravy blows this stuff out of the water, but that's back to the subjective part. Some folks prefer their gravy to taste like warm milk & flour--which was my impression here. I was really excited to try this new breakfast spot in downtown Springfield. But damn was it a let down. I'm not sure I understand the trend towards no table service. The experience was, in a word, chaotic. Having to stand in line to order (which you have to wait until a table opens up, causing a bit of confusion as new people arrive not to mention the waiting area is the bathroom hallway), get your own (luke warm) coffee from a carafe on a stand next to the register and then you have to bus your own tables in the end (don't miss this step, the cashier will yell across the restaurant to remind you). When they got busy, they literally asked people to leave the moment they were done eating. Paying $20 per person (plus the tip we regretted leaving at the time of ordering) for a meal served in a "fast food" environment that takes more than 20 minutes to be served - it's just not a pleasant dining experience. On to the food... If you want biscuits and gravy, you will be happy, but I strongly suggest getting it to go. The biscuits are fluffy and have great buttery flavor. The gravy is well seasoned and a good consistency. They do not ask how you want your eggs - so they all come out Sunnyside - which is only to say the yolk is on top. The eggs are rubbery and unevenly cooked because they sit under a heat lamp for a bit waiting to be brought to your table. The bacon is definitely good, but the sausage is pretty bland, as are the country potatoes. Portions are really big, so that's a plus, but it's just not enough to make us want to come back. read more
