From the moment we got to valet until the time we left, they didn't miss a beat. The team works so seamlessly together and communicate in a way that makes one say "How did they know my needs before I even asked. We came to celebrate my 59th birthday and enjoyed the 6 course partially selected menu and was blown away. Impeccable service is how I would describe Canlis. We were STUFFED, but left feeling extremely satisfied. I don't forget kind people. One of the Valet gentleman us to valet at Bellevue Square. I acknowledged him and instantly picked up where we left off. I have dined here several years in my 35 years in Seattle. When the dining experience is over, I am always perplexed by how they seem to outdo my prior experiences. 5 stars, well deserved. Thank you for making my actual birthday dinner wonderful

Our son lives in the area and booked this restaurant for us, as when we go to Seattle we'd love to have one of the nice dinners out! They rented the room that's by itself. I think it's called the Cache. This room is private, you get great weight staff, the view is absolutely incredible of the sound with the sailboats at night and there's a gorgeous tree that is probably close to 100 years old right out the window.! me, I like a little more activity and would like to watch the chefs and the waiters and other people's, but the room was really nice with the four of us! The room was elite, we had privacy, and we had fantastic incredible service! Mel was our main server, and we had a steady stream of excellent service the whole night! The menu is a set menu, there's a price for per person, and you get a list of items to choose from with each course, it was a six course and you get to pick three and they pick three! It was actually an eclectic and quite fun!! What an amazing experience! Service was impeccable! Experience even better!

My only photo: coffee service. Even these dishes made my wishlist!

It has been a few weeks since we finally went to Canlis for the first time after 12 years living in the area and this place is still on my mind! And I'm not one to let the supposed best restaurant in Seattle death grip that title without my critical personal analysis. So what did I really think after reading others' reviews? Oh, let me tell you. Reservations can be hard to come by. To get a babysitter and an available reservation to align took us many attempts but alas we finally did it. First up for me was: Will the ticketless valet REALLY be what it says it is (and what is DOESN'T say it is?)? By the end of our visit--and after curiously inquiring how the valet's do it--we were impressed! They do it; they did it; you have to try it and I will explain no mysteries for that ruins part of the joy of this place. Next up: the surprising and gorgeous story behind this place. I mean, go ahead and read up on it. Or preferably, my advice: don't. Let that be part of the allure and your journey; allow for the staff to tell you. That was my experience and I delighted in the surprise and joy of it. Not to mention the intrigue of...: why, is that the current owner, son/grandson? Touching tables? Checking in on clientele? Yes, yes, I think it is! In the finer details I noted homage to heritage AND the PNW in the pale mauve/lavender table cloth, a salt dish with a weight & story despite its minute size (do not steal to the tune of a $450 charge on your bill, but do attempt to lift it!), and evergreens from out the window views to being decor to your dishes. All staff on point when you move about. Piano covers of modern songs looped in to the restrooms. A cozy fire. A gorgeous view so quintessential to the area. Cocktails, a starter, a 3 piece first course to REVEL in (think: flavor + texture + temperature = mind palate JOY gears spinning in ecstasy!). I took no photos because I wanted to be so PRESENT for this journey and I have no regrets on that; I want you to also be open to the surprises of this meal! There are a thousand places for a hundred people to find dissatisfaction in a fine dining meal and I did not have much to come up with; rather: I was quite pleased with my experience! And I would withhold praise if I could find true and valid reason, I do have grumpy east coast roots after all! Our server Mac was wonderful! Informative, knowledgeable, kind, smart, helpful, personable, laughed at my joke of "what first course, we never got it!" all the things we needed in a waiter! We swapped restaurant and food recommendations back and forth from Maui to PNW (quite an added bonus when we find a waiter as food curious and open to sharing and learning as us!). I couldn't believe we were there for nearly 3 hours of fine dining because we love good food and can hoover it quite readily but we were having so much fun that time just flew by. Say yes to the salad; it's not only a historical throwback, it's also a delicious smattering of flavors! Say yes to wine, dessert, coffee and also, if so kindly and rarely offered: a visit to see the kitchen in action! And as always, be respectful of the hardworking crew that brings your experience to being: it takes the effort of so many to knock a meal out of the park and as I understand it this place does it meal after meal table after table night after night--a true feat in this day and age! Was this place worth the hype? Were most to ALL bites fantastic? Was the head chef down to earth, kind, relatable, talented, and worthwhile of this Seattle location staple, name, and locale "rank"? Yes, Chef!!

A beautiful restaurant that puts thought and care into everything. First you have to acknowledge the beautiful ambiance. Gorgeous view of Lake Union with floor to ceiling windows, in a beautiful and peaceful building. The service was friendly and top notch and really went above and beyond. The food was great and I was full before they even brought the first course because all the little bites were so varied and delicious. I had the celeriac which was the right choice - it was really innovative and unlike anything I've ever had before. It is apparently cooked while still in the ground. The Parmesan pasta and soufflé were always wonderful. They were exceptionally careful with my allergy and recommended lovely wines and cocktails. A beautiful evening.

    The view was okay

Verdict: not worth coming here anymore. Back then, it maybe used to be the "Belle of the fine dining ball", but it's not anywhere close to being what it once was (it's so much worse than anyone could have imagined). The missus and I have had better fine dining in Seattle - its not here. My wife and I held our post-elopement dinner for 20 people (private dining in the smaller room) back in June 2025. The original booking process and organizational timeline were both fine - communication with the event organizer and picking the menu were a fairly seamless a smooth experience (nothing to comment on). Day-of: The early morning (10am) of our dinner, we stopped by before opening to drop off the handmade flower arrangements that the missus meticulously made for the table, as well as the place card names and the seating chart, and went on our way. It was fully set up when we came back that later that afternoon, so things looked good when we arrived shortly before our guests did, at around 5pm. This is basically where everything went downhill. Service fumbles: as guests arrived, instead of knowing where to go, or being led to the private dining area where we were mingling with our guests, no dedicated "front door wait staff/host" was at the front to greet or route them, so I got a lot of confused texts on where to go from guests who arrived (after valeting their cars) to... No host. The valet had taken their car, but the handoff to 'inside the restaurant' was so bad that... We just had guests wandering in without anyone helping them? The service in the actual room was fine - they brought the food out slowly, though - missus had wondered when the next course would arrive because she was hungry and they were super slow at moving the meal along. I guess the speedy water and alcohol refills were meant to try to quell the slow speed of service? Worse yet, the food... Man oh man, I thought this place was supposed to be fine dining. The food was overly salty, not memorable, and honestly, it definitely did not feel worth what we ultimately paid. Table stakes would have been if any one dish was "a standout" - especially for an establishment with such a storied legacy and having such-and-such number of James beard (culinary?) awards... I guess maybe we expected too much? Maybe this place is overrated? Maybe it's inflated hype? The only real "win" of the night was the company we'd invited, the missus' flower arrangements (which were a huge hit!), and the space / view itself. The food and the service were greatly disappointing. I'd give this a lower review but they did enough "right" in the first stages, that the lowest I think this place deserves is a rounded-up 2.5 (so 3/5). That Seattle times article (Nov 1, 2025) basically hit the nail on the head.

Had an amazing evening at Canlis! From the amazing views to the exceptional service. We were greeted by the valet and then the owner--which was a pleasant surprise. The bartender, Zoey, was amazing and the pork loin and salmon and crème brûlée were divine! Highly recommend.

    Wine experience was amazing!

Canlis was an absolute experience from start to finish. From the moment I walked in, the level of service, attention to detail, and overall atmosphere made it feel like something out of a Michelin dining moment even though it's not officially one. Every single person on the team made the evening feel special without ever being over the top. The food was on another level beautifully presented, perfectly balanced, and full of creativity without trying too hard. You could feel the passion in every plate. What stood out most was how seamless the entire night felt from the timing of each course to the way the staff anticipated what you needed before you even asked. Canlis doesn't just serve food, they curate an experience. It's warm, elegant, and unforgettable. Easily one of the best dining experiences I've ever had in Seattle!!

Overly oily and salty bread. Miso jam did not really work. But the vegetable dip is amazing

Canlis is the special occasion of the special occasion restaurant with impeccable view of Lake Union, first class service and haute ambiance. As the OG of high end cuisine in Seattle, Canlis has been featured in almost major every food related media for Seattle, be it Top Chef, Eater essentials, and Food and Wine magazine. We came here after James Huffman, Canlis veteran took on the helm as executive chef. The menu seems to be featuring more local ingredients than previously, but honestly the ingredient and execution quality is just good but not exceptional for a restaurant of this caliber. For the October menu: The highlights are the umami explosion chowder, perfect for autumn tempura mushroom, classic Canlis salad, and unique blueberry halo halo. The lowlights are paper thin soggy root vegetable chips, overly oily and salty bread with overpowering miso dip (the green vegetable dip was delicious though), and heavily creamed potato side. The proteins (sablefish, steak, pork) were all cooked well but the quality of the ingredients itself is just average, I honest get fresher and more flavorful meat and fish from Uwajimaya and Whole Foods. Lastly, the breadsticks like cookies at end of the meal is really not up my alley, I'm not a fan of stale tasting star anise flavored dessert. Will I come back? Maybe in a few years when the new executive chef find his footing and refine the menu.

What's it like at Canlis with the creations of Executive Chef Aisha Ibrahim? Allow me to say, this is not the neighborhood broiler it once was. Canlis is an inspiration to other restaurants in the region to emulate for fine dining excellence. It has definitely earned its place as the humble, silent and unofficial flagship of Seattle's culinary scene. You start by arriving a little bit early, and having cocktails (not drinks) at their lounge (not bar). Sit and order yourself one of their mixologists' suggestions. While doing so, wait and watch their creations at work. This are professionals who are driven to excellence. But that is where your experience BEGINS. I can show you pictures. I can describe to you the ingredients. But the profiles in preparation, organization and taste is something you have to encounter IN PERSON. This is so you can personally give justice to Canlis' hard work of crafting creative food, creative spirits and phenomenal customer service. I was also privileged to visit behind the line and see the action, up close and first hand. As a culinary professional myself, I can say I was definitely honored to be invited to see a kitchen with such a storied history. The care and dedication is something that cannot be replicated from a mere selfie, or improved with sprinkling of a garnish, proclaiming the word 'bam.' Where the restaurant has received three James Beard Awards, accolades are not the goal of the Canlis family, Chef Ibrahim or the dedicated staff. Excellence and your happiness is. That's why I would go back. And that's why you should visit.

The service was great, the views were dope, andddddd the food was just ok. Like I get it, fine dining often times is more about paying for the experience as a whole, but sheeeesh for $600 I wish I left with a full stomach at the very least lmao. In terms of the quality of the food itself, I mean you could tell that they used top notch ingredients and the presentation was nice, but I can't say it separated itself from other restaurants in the area. When ya combine that with the fact that the quantities were tiny, idk. As a local, I'm glad I finally got to dine in the city's most famous restaurant, but at the same time, I probably won't be coming back.

Food: - small bites: Dungeness crab was flavorful but too salty, mushroom was great and crispy, and the shingoku oyster was very cold but mild flavor - Bread and dip: focaccia had a crispy exterior and chewy interior but a bit salty. The kale and cheddar dip was flavorful but also salty. The miso honey was alright. The cultured butter was smooth and creamy. - Canlis salad: Very mint, cheese, and salt forward. We each got a half portion. - Manila clams: the bread was too salty that I couldn't eat the pieces. The rest was creamy, vegetal, and slightly fishy. - Pork loin: kale chip was too salty, the sauces were flavorful, the pork loin was delicious, the radish was decent - Sturgeon: the fish had a good sear, the foam was light, and the beans were slightly salty but flavored well and had a good texture - Soufflé: rich and not too sweet, it was a bit heavy though - Chocolate: chocolate was rich, vanilla ice cream was delicious - they gave us extra dessert at the end probably for Valentine's Day. The donuts were warm and salty and the gummy was pretty standard - they also gave us a complimentary beverage at the beginning. It was a bit sweet with warm spicy flavors Service: the service was great and attentive Ambiance: the restaurant is very dark, cozy, and warm. I almost fell asleep Overall, I didn't appreciate so many dishes being too salty and at the steep price point, I don't think I would return.

Amazing service and everything was top tier. We aren't sure if it was worth the entire price, but it was a wonderful first time experience.

Does the lounge still offer a nightly happy hour?

    Yes

Are the crab cakes loaded with belle peppers? I prefer a crab cake where I can taste the delicate sweetness of the crab and not all the filler. Whoever thought belle peppers were a good choice to be put into crab cakes?

We do not have crab cakes on our menu. The menu can be found at canlis.com/menu

What is the photography policies.Im planning a photoshoot?

I do not think you can perform an all out shoot while dining if it disturbs others.

Do you have gluten free options for someone with celiac disease?

Yes! We have a separate menu that is completely gluten free. Just keep in mind you may have a few less options than guests who dine without any dietary restrictions. If you have any other questions please feel free to email reservations@canlis.com…

Can you eat in the bar?

Yes. I actually recommend eating at the bar over the dining room. It's more bang for your buck and you are not restricted to choosing just one per course.

Do they have vegan options? How much do they accommodate those with vegan diets?

I inquired about vegan options and was told that sadly, there were very few (only salads). This was with over a month's notice. I would take your business elsewhere for vegan options.

Every custom flight is tailored to your specific taste and price point which I love. Hannah, one of their whiskey curators, is super knowledgeable and created one of the most memorable bourbon flights I've ever had with super rare allocated stuff. The service here is extremely friendly. I was speaking with Hannah about what I wanted in my flight and shared my wish list. Based on that, she chose 4 esoteric bottles that each had their own characteristics that would be interesting to compare against one another. My flight consisted of the Pappy Van Winkle 23 years, Colonel EH Taylor Distiller's Council, Very Olde St. Nick Superfreak, and Wild Turkey Austin Nichols 16 years. It was super nice trying all of these rare bottles that I wouldn't even be able to find, and they were all interesting and delicious! The food here is also fantastic. We came during happy hour since the food is a lot cheaper. My favorite things were the Dry Aged Steak Frites and the Crispy Pork Belly. The steak was cooked perfectly and extremely tender with a great beefy flavor. I love a good french fry and these were fresh and crispy. The pork belly was tender and fatty but the fat was nicely rendered so it wasn't chewy. I love the Asian inspired flavors and the kimchi slaw provided the perfect acidity and freshness to complement the fatty pork belly.

We arrived right at the opening time and there was a line, but it moved pretty quickly and we got our food in about 30 min. As for the food quality, these were some of the best steaks I've had in Seattle at this price point. $15 for 4 oz steak frites is a great deal, and they really load you up on the fries so you get full even with just a 4 oz steak. The steak is cooked perfectly edge to edge pink since it's sous vide. They get a nice sear on the outside so you still develop a good crust and deep flavor. It's super tender and I love the fat cap adding a beefier richness. The best sauce by far was the Sichuan Au Poivre. It was creamy, rich, and had a light citrusy peppercorn flavor. The highlight was this sauce with the fries. The sauce soaking into the beefy tallowy frites was amazing. My only complaint is I wish it had a stronger peppercorn flavor. I also liked the duck breast with the au Poivre sauce (maybe even more than the steak).

I was…read morehonestly a bit nervous beforehand, as I'd read quite a few reviews that had cited long lines, really long wait times for food, and people's orders getting lost. I can't fault a place for having lines (if you're popular, you're popular) but I was worried that we'd be dealing with both long lines and long wait times for food given that it was a weekend. I even packed a snack just in case, since I can get pretty hangry. Thankfully, the whole process was actually really smooth! My guess is that the expansion of Steakeasy's hours to include both lunch and dinner instead of just lunch has taken the pressure off the lunch service. We only waited in line for about two minutes before ordering, which was super easy given the limited menu. We were given little number signs to bring to our seats and found seats relatively easy. Now I wouldn't come here with a huge group, as most of the tables here are on the smaller side (2-4 tops) but the two of us sat down at the bar and soon after we sat down a couple tables became available. While waiting for our food, I took full advantage of the Stumbletown bar and first got a Blackberry Gin-ger and then a Purple Rain. Can you tell I like gin? I loved the cocktails and they're super quick. Food came out pretty quickly, and we were digging in about 10-15 minutes after we ordered. I got an 8 oz steak frites with chimichurri, and my lunch buddy got a 4 oz steak frites with the Sichuan au poivre. We both got our sauces on the side, which they were happy to accommodate, so that we could dunk the steak and keep our fries crispy. The steak here seems to be generally cooked to medium doneness. My ideal is a medium rare but I can rock with a medium if needed. The cut is a lean one, so this is more of a meaty one where you'll need to use your teeth than a melt in your mouth type of situation. The sauces are great, and I think the meal really benefits from the green freshness of the chimichurri. While the Sichuan au poivre seems popular (and I definitely dunked my fries in my friend's au poivre sauce) there isn't actually much Sichuan peppercorn flavor. The fries were pretty solid and plentiful. Due to having our sauce on the side, most of our fries stayed crispy until we ate them. The steak frites here are a really good value, with a 4 oz steak frites going for $15 and an 8 oz steak frites going for $25. Is this the best steak ever? No, but it definitely scratches that itch and is a good time. Worth trying!

I noticed the salmon on the menu and decided to give it a try since I was looking for something a little lighter. I am so glad I did. Without exaggeration, it was the best salmon I've ever had. The fish was cooked perfectly, and the sauce and accompanying ingredients brought everything together beautifully. Every bite was outstanding. Beyond the food, the atmosphere was fantastic, the service was friendly and attentive, and the bar offered a great selection of cocktails and spirits. If you're visiting Seattle or looking for a great dining experience, I would absolutely recommend Shaker + Spear. The salmon alone is worth coming back for.

It's nice to watch the staff cook because it tells you that the food is fresh. I have high expectations for seafood in Seattle. However, I was disappointed with the scallops as it tasted raw and cool to the touch in the center. I'm not a scallop expert but this one missed the mark - the flavors were off with the sauce (tasted earthy). Presentation and color looked good, but this didn't taste good. Also came here breakfast several times. I don't have pictures, but each time the breakfast was amazing!

Phenomenal service and really good happy hour. The oysters and gem salad were our favorites.read more

As…read morea side comment, it would have been a nice touch to provide a bit of bread to sop up the sauce. One could purchase it separately, but one or two pieces would have sufficed. I ordered their signature dish: the crow lasagne. I am picky about lasagne and appreciate all combinations. This one did not quite hit the mark. The marinara sauce was bright and flavorful, but barely lukewarm. It was hard to tell whether this was deliberate. The lasagne itself was good, but the consistency was odd. It was almost as if the noodles were made of gnocchi (potato) dough. The ricotta and sausage had a nice flavor. I had debated whether to order the chanterelle pasta. One of my dining partners did, and after seeing it, I was glad I did not. The pasta looked as if it was cooked properly with a variety of mushrooms;, but I did not see any chanterelles. I would have been disappointed. The salmon filet and grilled vegetables were presented nicely. The clams in miso broth were an unusual presentation; the stark white shells and plate contrasted sharply with the brown broth. The broth was tasty though. The desserts were also a mixed bag. The ganache on the German chocolate cake was rich and delicious. The pumpkin basque cheesecake did not have the consistency of a typical basque cake, but had a good flavor. The sweet cream mousse topping on both desserts was a perfect accompaniment. A solid restaurant and definitely worth stopping in.

We made a reservation, but realized it was happy hour which is only in the bar. The hostess was nice, and got us a table in the bar when we inquired. The downside, honestly, is the ridiculous menu!!! I always have a tough time picking what to eat, but where there are 100 options, it really stresses me out! lol the happy hour is also very extensive. This isn't probably an issue for the average person- look ahead if it is. We ordered oysters on HH (amazing deal!), fried green tomatoes (ehh), gumbo (very good), fries (good), and Brussels (not bad, but I didn't like the sauce). We also ordered wine and a Mexican mule. I can't believe it's taken me so long to try out. I'll absolutely be back to more things!

Everything we ordered was flavorful, well-seasoned, and perfectly prepared. We were genuinely impressed from start to finish. We also ordered the beignets, and they were some of the best we've had in a long time. They instantly reminded us of our trips to New Orleans and made us feel like we were right back there. If you visit, I definitely recommend trying the shrimp and crab gumbo--it was outstanding! Overall, this was an amazing dining experience, and we'll definitely be back.
