Baldy a was recommended by a couple of friends so after driving from Portland we were ready to give it a try. My friend is a food judge at BBQ competitions so he knows his BBQ! We split the extravaganza which had a full rack of baby backs, half a chicken, pulled pork and some brisket. It also came with 4 sides. Plenty of good for two. My favorite was the pulled pork. It was moist and flavorful. Chicken was a close second - still a good offering. The baby backs had good flavor but were a bit over done. Meat fell off the bone without much effort. Least favorite was the brisket. It was ok...a bit too dry for my liking. For sides we had the baked beans, bacon Mashed potatoes, chipotle potato salad and the cole slaw. You can also order dinner plates of meats with one side and the sides are HUGE, you definitely can share the sides here. The Mac and cheese is so creamy and delicious. The hot BBQ sauce they serve on the table did not taste hot but it was one that snuck up heat on ya later if ya know what I mean, so careful pouring that on. So my family always comes here when they visit Oregon, and had great things to say. So, disappointing. The wait to be seated at a table was ridiculous, since almost the entire outside seating area was available. The food.. brisket is not supposed to be dry, tough, or tasteless. The chicken seasoning was off, we barely ate any of it. The ribs were okay, but I personally dislike thin vinegary BBQ sauce so.. it was meh. The pulled pork was delicious, I liked the sides we got, the coleslaw was pretty good. The service overall was slow but it was okay. The lovely lady in the wheelchair was totally badass and attentive. This is the absolute worst brisket I've ever had the misfortune of eating. Meat was as dry as chicken jerky. Fat was pure gristle, clearly not cooked well enough for the fat to render. Brisket is a tough meat, requiring a long cook at low temps. They have not done that here. There is tough meat poorly obscured with disgusting sauce that is somehow a step down from the lowest quality sauce you could find at the most rundown 7/11 in your vicinity. Please stay away at all costs. Eat a sponge drenched in ketchup if you think you want this. read more

I am from Kansas City so I have a strong opinion about BBQ. I was placing our first order after weeks of trying to get in when there was not a line, and was bummed that they did not have burnt ends on the menu, a KC staple for BBQ fans. As I finished the order, they mentioned, We have Burnt Ends, do you know what those are? YES and YES. Very good. My only complaint was the brisket was sliced a bit thick and was dried out a bit.. as a salad accompaniment, but the flavor was good. We will be back. read more

I've lived in Bend for 15 years, and was at Baldy's on their opening day. It was awesome, finally, a decent BBQ place in Bend! I've gone back fairly regularly ever since, ranging between once a week and once every couple months. First off, I've always been very underwhelmed by the ambiance, but whatever it's a bbq place and if the food's good who really cares. So how about the food? It went from quite good when they first opened to quite bad after a couple of years, and has varied widely over the years, likely due to whomever is in the kitchen (Brian, the owner that I met a few times and who oversaw quality, is never there any more). So yeah, the food's been average quality over the years. I've had some great meals there, and I've had some throwaway meals too. But I can usually count on it being good enough to satisfy my BBQ craving. Over this past year I felt I was noticing a trend of the food gradually getting better and more consistent, especially the brisket which has always been sub-par compared to "real deal" BBQ I've had all over the country. But passable. However, the service has gotten generally very bad. I don't know what it is about this place but most of the people who work here are extremely apathetic. I can only assume it has something to do with the work environment. So now we have average food and below average service. Bummer. However today was one of those days where I just had to have a brisket sandwich. Called a togo order in. I showed up 20 mins later and was told my order was ready, great. One other patron in the restaurant. Girl disappears into the back and comes out 5 mins later with my food. Huh, ok. No biggee I pay and am out of there. Which brings me to now, where I'm eating said sandwich, and what prompted me to write this review- the epitome of apathy, lack of pride, lack of skill. Is this a sandwich? No a giant cube of brisket cut vertically 2/3 way through, dropped on a bun with nothing else. It's pathetic, and if I were the owner I would be terribly embarrassed knowing this is the type of food I put my name on. Furthermore the brisket is so rubbery it's gross. I'm pissed, partially because my lunch is so disappointing and partially because these people don't have any respect for BBQ, yet flaunt "best in Bend". Good food for a great price. The dutch ribs were cooked just right, with the meat ready to slide off the bone. The barbecue sauce was tasty. Solid cole slaw; good baked beans; sweet jalapeno corn bread... and local beer from some of the great breweries in town. If I were in Bend and looking for barbecue, I'd definitely come to Baldy's. It's a friendly, home-style place. But having just been to Alabama a few weeks back, I've got high barbecue standards in mind. So it's 3 stars. read more

The servers are nice & friendly. Decent food is served, but it doesn't take much more to make it better. For example, instead of corn syrup used in both the original and Cat Meow, perhaps molasses can be used. I like the smoked wings without any bbq sauce, for the reason that smoker & the dry-rub are already fantastic & there's shouldn't be any shame by masking them with the sweet sauce. The sauces themselves are okay... Not that special (sorry, I do have higher standard than most folks). I rather have more emphasis on better quality of meat used. The pulled pork is excellent. The brisket need to have more marbles (too lean & tough...not slowly smoked in low heat... no outer pink ring from breakdown of protein & fiber). This place is a great BBQ joint for Bend. I visited here Labor Day weekend 2012 and we immediately got a seat; felt pretty lucky cause a wait shortly developed after we were sat. The service was great. I ordered the pulled pork meal with coleslaw and cornbread. My favorite was their bbq sauce. Everything was delicious. Be careful about the parking lot though, it can be a bit of a squeeze to get in and out. read more

Incident date: 08/17/2022 at the approximant time 7:20pm I entered the Baldy's Barbeque Restaurant located at 235 SW Century Dr. My purpose for entering the restaurant was for conducting business as an Independent Contractor providing a pick-up and delivery service. Upon entering the business, I looked around and noticed that there were no patrons inside the building. I found it to be strange that no one was being served inside the restaurant considering that it was still dinner time. There was a man who was working behind a counter as I walked in. I inquired of him if the restaurant was still open. He responded yes. As customary for my job as a delivery driver, I provided the necessary information to identify myself and my purpose for being there. I thought it was odd that I never received a friendly greeting with eye contact as to acknowledge that I was there. This man held his back towards me and never stopped what he was doing until it came time to check on the order. At that time, he stepped to the kitchen area to check the status of the pending order for delivery. He Made a statement that the order wasn't scheduled for pickup until 7:45pm. Nevertheless, I began to wait until the order was ready. Moments later the expected order was up for delivery. To my surprise the order came up early at about 7:35pm. The man set the order on the counter then I said thank you and began to verify that I was about to take the correct items based on the information on the app order details. The two ordered bags had two different names of which only one name was a match on my delivery app. I began to reach for the bag that matched. The man informed me that both bags belong to the same customer. I hesitated because I wanted to verify accuracy before I took an order by mistake. The man became impatience and began speaking to me in a demeaning fasion. Asking me to read the receipt in the special notes section while pointing at the bag. He was angry and hostile in his engagement with me. I ask him if he was the manager and he said he was the owner. I picked up both bags and stepped away from him to a nearby table to verify the order. I left the business. In my vehicle as I was leaving, I could see the owner give me the middle finger through the window as he was in the kitchen area. There was no one else around. I was in his place of business. I captured a few photos because I felt threatened. It really troubled me. My attempt to serve our community with this business owner was meet with unprovoked distain. The mere fact that we both provide a service for our local community should merit a mutual partnership that is aimed and solely focused on the customer. read more

We grabbed takeout from this location last month while staying in one of the local campgrounds. This was just after restaurants were ordered to close due to the coronavirus. The staff had a great system to insure that the food was safely packaged and the transaction was also conducted in a safe manner. The food was delicious! The service is great and all the employees are very eager to help. My boyfriend and I waited only 10 mins on Sunday night around 7. The menu has a Lot if options in appetizers, sides, and entrees! We both got a "two meats plate", came with two sides. Reasonable prices, for Bend. The food hits the spot if you're in the exact mood for barbecue. However if you're in general looking for a really flavor packed dinner this will not satisfy you. It's barely above average. The food just seemed very basic, like the recipes don't go beyond and simple recipe you find online. There is that much thought put into the Mac and cheese or mashed potatoes. They tasted pretty plain! But didn't taste bad AT ALL. Pulled pork- it was a bit too greasy, but the texture was still there, it has a subtle smoky flavor and no overpowering meat flavor! I also got the Smokey turkey which was a bit rubbery for sure. Like that lunch meat texture but thicker. The coleslaw was perfect, I love cole slaw. The brisket was just okay, didn't have that much flavor, seemed to be served just "as is". The hot link, don't even bother, same as the grocery store sausages. A plus was that the portion was definitely sufficient, we both had leftovers and were super full! They had two home made bbq sauces at the table, one a little sweet and one a little spicy. Oh. My. God. These guys killed it! Not only were the ribs perfect fall off the bone with a beautiful bbq char, but they didn't smother it in sauce so I could put as much or little as I wanted on it. But I truly think that is the BEST loaded baked potato I have ever had! The skin just fell right off! We lived in Kansas City for over 10 years and feel like we know good barbecue. You will not be disappointed in this place.
