The deviled eggs were competent but unmemorable--perfectly cooked, yet heavy on onion with muted overall flavor. They're unlikely to earn a repeat order. The ribs arrived in a solid portion of three generous pieces. They boast a deep, competition-style smoke with a firm bite that yields nicely upon chewing, leaving satisfying tooth marks. Not overly sauced or seasoned, they let the quality of the meat and smoke speak for themselves--an approach I deeply appreciate. The marble brisket, unfortunately, proved a disappointment. Though beautifully trimmed with good bark and seasoning, and passing the pull-apart and finger tests with ease, it was exceptionally dry. A rare miss that I won't be repeating.
