The Carillon was just fabulous and destined to compete for a Michelin Star. This was our romantic night out where the whole experience was terrific. I was not expecting such 5 star treatment and not exactly dressed for the occasion in business formal but I was wearing a nice Texas Longhorn shirt with pants. The restaurant was not busy and practically had the place to ourselves however the next night was packed with a wait list Our captain was the best being super friendly and tended to our dining preferences. He was also our sommelier and helped me select a nice glass of wine. We were provided with some delicious bread and real butter along with a shot of special tea to compliment it. My main dish for the night was the Maple Leaf Duck Breast with a small confit duck "pot pie" with two small cornbread muffins on top where the sliced duck was on top of the pimento cheese golden grits. The sliced duck was so good I took my time eating it. However I forgot about the pot pie and then tried it. Well it was also duck but cooked so soft it melted in my mouth along with the vegetable ingredients it was buried in. It was the best. The cornbread was also great and overall one of the best meals I had over a year or two. My wife had the Rosewood Wagyu N.Y. Strip and said was one of the best steaks she also had. I have a feeling we will be returning often to dine here whether staying at the AT&T Hotel, attending Texas home games, or at the Bullock Texas State History Museum. In conclusion, if you are looking for an upscale night to celebrate or impress your business partners then this place is definitely for you. They can cater to different dinning situations with many private rooms and configurations. They also had their own bar with TVs showing sports. The next morning we had breakfast here and ordered the Two Eggs Breakfast with smoked bacon, breakfast potatoes and croissant. Just like dinner the food was tasty and delicious. Everything was made in-house with that farm style flavor. More great service to make us fell welcomed.

Wow! What a pleasant surprise Carillon turned out to be!!! I stayed at the AT&T Center and decided to go down to Carillon for a late dinner (it was around 9:20). I went with the special and chose my starter, entree, and dessert for $55. Believe me, this is a great deal with the food that you get. I started with the Ahi Tuna Tataki, which was beautifully presented and the strawberry nuoc mam sauce was poured tableside. Not only did the dish look stunning, it tasted stunning. The tuna had the lightest sear on the outside and it was melt in your mouth. The avocado mousse, the small cucumber balls, the slightly charred strawberries, and the nuoc mam all worked together to create a unique bite. The nuoc mam was a balance of sweet, sour, salty, and umami. The entire dish was refreshing while packing a punch of flavor at the same time! It was a great way to start the meal. Then came the Seared Sea Bass. It was cooked beautifully and came straight out of the kitchen, as was evident by the temperature of the fish. It was buttery and also melt in your mouth, while the seared outside provided a slight texture contrast. It was extraordinarily well-cooked. The rice pilaf had peanuts sprinkled throughout, and it worked well with the tom yum sauce. It was not the typical tom yum flavor as you'd expect, but it had the perfect blend of creaminess provided by coconut milk and the typical sweet, salty, and sour flavor of a Thai tom yum. I only wish that it had some Thai chili in it to add spice to the sauce. The tomato confit provided the pop of tanginess to cut through the richness of the sauce and the Thai herbs (basil and mint mainly) provided the freshness. It was just a wonderful dish. The dessert was good, but it was definitely the weakest of the three items I got. Overall, this is still one of the best dinners I've had in Austin, and I've been fortunate to have dined at many restaurants like Hestia, Uchi, and other top tiered restaurants here. The restaurant was pretty empty when I arrived because it was so near closing time, but I never felt rushed. The courses came out well timed, and I was able to enjoy the dinner while being able to look around and appreciate the ambiance and decor of the restaurant. This is definitely a hidden gem and I would highly recommend this restaurant to anyone visiting Austin!

I've been here twice for the 3 for $45 dinner and am amazed by the special experience, intimate ambience, and flavors. Both times we came, it wasn't very busy and the managers came by and told us a lot about the restaurant, menu, chef, and everything. The value is incredible and the treatment is really top notch. Food-wise, the meals come with bread and butter and we go during happy hour to get half off drinks. Everything is really tasty and there are some really unique flavors and innovative usages of ingredients that make the dishes special. I think the appetizers really shine brightest actually and I was wowed by the beef carpaccio and crab ceviche. Their menu changes every season so I'm excited to come back and try new creations. Parking is also really convenient with a validated garage. So highly recommend for a special occasion or gathering with friends and a good time.

A bit of a hidden gem worth a try! Very beautiful presentation of each dish, hats off to the chef for that. Also, a more initiate menu but amazing options. The mushroom soup started was to die for and the sea bass main dish was impeccable. The portions were almost overwhelming though which is why I decreased a star but overall a great spot to try!

One word to describe my experience, amazing. I ordered the 3 for $45 and was not disappointed. Salad, sea bass & chocolate cake thing. Sorry! I don't remember the names. Salad was amazing, plate was full of greens. Seabass outer layer was crispy and the sauce they pour onto the plate made it taste way better. Chocolate cake thing had crunchy crumbs on top which was a great add. The employees were extremely nice & always made sure my friend & I were well taken care of. The ambiance gives a 5 star restaurant vibe.

This is NOT a paid advertisement. I am so blown away with this restaurant, from the moment we Sat down we were quickly greeted and served the 3 course for 45 dollar meal. The portions were generous, and the food was delectable! I had the bisque and sea bass with a New Zealand Sauvignon Blanc (the manager Elliot is also the sommelier). What a wonderful dinner in a beautiful place with great service at an unbeatable price!

Started with nice quality rolls, though that seemed like an old-fashioned surprise, few restaurants these days have a bread starter. I wasn't planning to have it but I ended up eating both! The waygu beef carpaccio was a work of art, light and flavorful. Seabass... lovely, herbal, mild heat from coconut- based sauce. Finished with creme brulee... enjoyed that but no so much the cookies served with it. Early on a Tuesday night, service was highly attentive.

Not sure why people seem to be sleeping on this restaurant. I've been here a couple times for events and the food and service were excellent. But most recently, we ordered a Valentine's Day bundle, hoping to spread some love to local businesses during COVID. The weather was just starting to get dreadful, but everything was packed up for us complete with instructions for reheating. We had the most delightful salmon, chateaubriand, an AMAZING pate, a gorgeous fruit-heavy green salad, plus lots of little extras. We actually ate really well for a couple days when our power went out because of this! If there's ever another opportunity to order one of these to-go specials, do it!
