This is our fourth time to Spago. 3 times to the one in Maui and once to the one in LA.
The one in Maui is located in inside the Four Seasons hotel.
First time we went (2013), I gave it two stars--not a good experience at all.
Second time (2015), our experience much improved--we left happy and gave it four stars.
Progressively, they're getting better and better. Last night was a clear five stars! It was great.
I'm pretty sure there must have been a change of management, or maybe they brought in new chefs.
Why five stars?
1. We called last minute and they still got us in.
2. Not only did they get us in, we requested a table by the ocean with sunset view, and we got it. Beautiful table with a full view of ocean, facing the sunset. Even the breeze was blowing the right direction!
3. We had a waiter named Gilbert that was so great in taking care of us. He was totally into describing the food, and was very playful and entertaining. He offered to take what he called our "Christmas picture" with the sunset in the background. He escorted us to a private room next door, opened up the blinds so that we were against a huge window with the sunset behind us. Wow. Very impressed with his thoughtfulness. We were having camera issues and it was taking forever but he didn't seem to mind. My ribeye wasn't cooked enough and some waiters take it personally and give you some attitude but Gilbert was friendly and accommodating all the way through. One of the best waiters we've had in recent memory.
4. The food - everything 5/5, even the bread!
BREAD BASKET (5/5) Servers come around and offer you bread by the piece. They have a Focaccia Maui Onion that is pretty heavenly. You'll need some self-control to say no to the second, and third piece. Soft, easy to spread butter comes with it, sprinkled with some Hawaiian sea salt. Delicious.
SWEET BASIL RISOTTO W/SQUASH BLOSSOM (5/5) We chose this as one of our appetizers and it was really good. It was a beautiful green color, and the squash blossom in the middle was a nice touch. Perfect amount for 3 people to divide up.
WALU LOCO MOCO (5/5) Walu is a Hawaiian butterfish. This appetizer is pretty small. I wish it was a bit bigger since most people share appetizers. There was a tiny quail egg on top. We cut it up three ways but in the end, it turned out to be a pretty tiny bite. It was an awesomely tasty bite, don't get me wrong. Note to the Chef: This portion is extremely undersized for being on the appetizer menu.
CRAB CAKES (5/5) Only one but it was GREAT.
ORGANIC FREE RANGE CHICKEN (5/5) Thanks to the Yelper who reviewed this dish by calling it, "the best chicken of my life". That really influenced my wife to order it (along with the picture on Yelp). She was supremely happy, and although I didn't hear those exact words come out of her mouth, I think it was the best chicken my wife has ever had.
ONO (5/5) This portion of this dish is, in my estimation, undersized. Compared to the two other entrees that were on the table, I actually felt bad for my daughter when it arrived, although she was OK with the size because she was getting full. She loved the fish, but there was nothing on the plate to embellish it. It looked awfully plain (and small) especially next to the colossal Rib eye Steak and Roasted Chicken.
BONE IN RIB EYE (5/5) Presentation is pretty fab the way they do it, They slice it for you and arrange it over a doctored-up bed of corn. I ordered it medium and it came a bit undercooked. I sent it back and it came back quickly and it was perfect. No complaints at all about the steak. I ended up picking up the bone and finishing it off. At first I did it as a joke, but when I ripped into the first bite, I couldn't put it down. Gilbert also brought a Pineapple Chutney hot sauce on the side for my steak which was right up my alley. If you appreciate spicy, ask for a special hot sauce like this when you come and I'm sure they'll have a version of this on hand.
BANANA KISER PANCAKE (4/5) I don't know how to describe this dish. "Pancake" will definitely lead you in the wrong direction. It's more like a souflle. The texture is almost like a French Toast but even lighter than that. Caramelized banana sauce supplying the sweetness.
HALO HALO (5/5) Loved by all at the table.
Keep in mind, menu changes here EVERY NIGHT, not every week. We looked on line in our hotel room before we came down to the restaurant and even the menu from the night before was out of date! Frustrating, but really, I kind of like that. So you're getting fresh, new ideas every single day, depending on what fish are caught, what produce they find etc.
My only criticism is regarding portion control. A few of the items, although tasty, were pathetically undersized and that's something that needs attention.
Perfect weather + lovely sunset + awesome food = FIVE STARS. read more
