    The omakase here was amazing. The chefs were so attentive, kind, and passionate. Each course was so delicious. [[HIGHLIGHT]]The place seats about 13 people[[ENDHIGHLIGHT]], there are 17 courses for $195 pp. I would recommend!

    I think other than Tatsu I would pick Shoyo as my next favorite for nigiri. They have improved a lot since the beginning. I have been to Shoyo for both dinner AND lunch. The nigiri quality is the same at both meals. The only difference is at dinner you get more pieces and more hot dishes. One thing I do remember is they have this big block of salt on the table that they use in preparation of some of their sushi pieces. I thought it's a nice touch. At the time of this review it seems like reservations are easier to get compared to before.

    If you're looking for a Michelin style omakase in Dallas, this restaurant should be in your consideration. I stumbled upon this place on reddit and am glad I did. The dinner consisted of 17 courses and was relatively interactive. Chef Jimmy did a great job at descriptions for each item and injected humor to diffuse the pretentiousness that can sometimes accompany fine dining. You could truly see the chefs' passion shine through while they prepared the dishes. The only reason I am not giving this place 5 stars is because, I wasn't truly blown away. Simply having top-tier quality fish isn't enough to set yourself apart anymore. I fully acknowledge this is easy for a reviewer like myself to say, yet difficult for establishments to follow through on. All-in-all, still a fantastic experience.

    An exquisite omakase experience in Dallas! Chef Jimmy makes you feel like family and every piece is a delectable piece of art. I especially loved the nigiri, excellent quality and just so smooth in your mouth. The staff are all personable and attentive. Highly recommend the later seating, so not to feel rushed out. We usually book the last seating.

    Absolutely amazing dining experience! For context, this was my first Omakase experience. The food transported me back to when I lived in Japan with all of the fresh seafood and vegetables. All 3 chefs were humorous and super nice about explaining everything to us. We had Chef Nick, who was absolutely . The waiters did an amazing job as well, with constant attention on us all, ensuring that everything was going smoothly. [[HIGHLIGHT]]Atmosphere was super chill and elegant, definitely reminded me of sushi bars back in Japan, just on a more fancier scale.[[ENDHIGHLIGHT]] 10000/10 recommend. Will be back when I visit Dallas again in the future.

    One things for sure, I love sushi. And my fiancé knows I do which is why he planned for us to have a 17 course omakase experience at Shoyo for our anniversary. It was phenomenal! [[HIGHLIGHT]]Super small and intimate. There were 6 other people with us along with the 2 chefs.[[ENDHIGHLIGHT]] We started off with some drinks to pair with our first course, a Japanese egg dish. We decided to upgrade and get caviar with our experience which was definitely the move! Shoyo is not for everyone as they emphasize on adding twists to the traditional omakase. Luckily, we have some pretty mature palates that can appreciate this cuisine. P.S. Be prepared for your wallet's to hurt.

    I predict this place will have Michelin star in under 12 months.... mark my words.... I have eaten at the best in Tokyo and the US. This place is one of the top rated sushi restaurants in the world. I would give this place a top 5 in the US. Next to one of my favorite in manhattan and San Diego, it's really a treat!     I was looking for an omakase spot to celebrate my husband's birthday and through Asian Grub in DF Dub's Facebook group, I found Shoyo. My people did not disappoint! We luckily got a lunch spot within the same week. The lunch is the more traditional omakase while dinner is more inventive, per Shoyo's website. I was so impressed with lunch that I now want to do dinner. Overall experience was immaculate! [[HIGHLIGHT]]The facade of the restaurant was sleek. Black with gold accents. Once you step in, it's like another world.[[ENDHIGHLIGHT]] We were greeted by a wonderful gentleman, offering mimosas. We got there a little early so we sat in the waiting area until they were ready to seat us. They took us in one party at a time based on the order the parties arrived. When we were called, they opened up a cantilever door and they brought us to our seats. [[HIGHLIGHT]]I loved the intimacy of it. There are only 14 seats available and 3 sushi chefs.[[ENDHIGHLIGHT]] By far, my favorite dish was the Chilean sea bass. Don't get me wrong, everything was delicious! The fish was super fresh, but the sea bass was something I couldn't get my mind off of. The textures were exquisite! It completely made this girl's tongue happy lol Would highly recommend! Husband and I have plans to go here again, but for dinner this time to see what kind of creative dish they come up with.

    I've heard so many great things about Shoyo but didn't try it until recently. I wish I came here sooner because this has got to be one of my FAVORITE omakase spots in Dallas. Not only do the staff greet you warmly and make you feel so comfortable, but the courses here have a unique take and are DELICIOUS! I have never had caviar in this truffle marinade (not sure what it was exactly), but it paired so perfectly with the toro. There were several pleasantly surprising flavor combinations.     Scored last minute reservations on resy.com for lunch at Shoyo. Extremely fresh, ranging from Baja California & Faroe Islands, Denmark. Minimalistic garnishes & sauces such as yuzu, so focus can be on the seafood. All items were incredible, but we thoroughly enjoyed the slow cooked salmon (melt in yo' mouth like butt-ah), tamago & uni. Enjoyed chatting with other diners as well & it was fantastic dining; could've sat there forever & just let the experience linger in my mouth *sigh*

    Food was great! Chef was chill and unpretentious. When it's your first time trying something that you dropped a pretty penny for, you really want to enJoy the experience. And the waitstaff was also amazing! Just do it, you won't regret it! P.S. Tip, tax, drinks are paid at restaurant at the end of the meal. If you pay cash, have money as you want to pay since no drawer for change etc.

    We had an amazing experience . So glad I was able to get the reservation on my birthday. The food was really good. Well worth the price you pay for. Bursting with flavor because of the different seasonings they use. I don't know if that is the right way of explaining it. But food was just wow. The service was excellent. Our chef for the night was Jimmy. He prepared our dishes with care and his interactions with us, his group, made the whole experience fun and so much worth the big bucks. Very cool vibe. Plan on arriving earlier than your check-in time. Parking is a challenge.

    Amazing food, service, and experience at Shoyo! Worth those hard to get reservations! Reservations: Open the 1st of every month at 9am CST on Resy (website + app). Be online right at 9 because slots fill quickly. Food: Overall fantastic, well-prepared, and tasty meal! I had the best toro (fatty tuna) and scallop EVER to date. Some sashimi pieces I felt were just average, but the winners were truly winners. Meal was well thought out where you'd get roughly 4 pieces of sashimi, then a break with a different type of dish (soup/pasta/etc), and then repeat. Service and ambiance: You walk in and can immediately feel how classy it is. They take your coats and seat you in the back, narrow room in front of the 3 chefs. They are so good about constantly refilling your drinks, asking if you need anything, and cleaning your plate/area.     Right now it is 16 courses, but starting in October there will be 18-20 courses since we are only doing the Sho menu.

He checked in with us throughout the meal to make sure everything tasted good, offered to cut our hand rolls in half so we could share, and even gave us a salmon belly on the house. Black Cod Nigiri ($6): Best bite of the night and it was on the seasonal menu. It was cooked and I'm not sure what they did to it, but it was absolutely phenomenal. Salmon Truffle Ponzu ($18): My second favorite dish of the night. The salmon was super fresh and the truffle ponzu elevated the whole thing. Scallop Foie Gras ($24): Beautiful presentation and good but surprisingly not as flavorful as the salmon truffle ponzu. I was expecting more umami from the foie gras. Salmon Belly Toro Nigiri ($16): Salmon belly with fatty toro topped with ikura. Delicious and melts in your mouth. Toro Wagyu Uni Nigiri ($22): Fatty tuna, A5 wagyu beef, and uni nigiri. My husband thought it was fun to eat, but said he would not order it again. Nodoguro Nigiri ($13): I looked this up, and it's apparently a rare high end deep sea fish from Japan known as the toro of white fish. Based purely on taste though, I thought it was okay and did not compare to the salmon belly. Kanpachi Cherry Blossom ($6.50): A pretty rosy pink color with a subtle cherry blossom flavor. Okay in terms of taste compared to the other fishes we had. Ami Ebi Nigiri ($10): The sweet shrimp was a bit too raw for me. Crab Uni Butter Nigiri ($12): I did not really taste the difference between the uni infused butter and regular butter so I am not sure it is worth the price, though it was still good. Snow Crab Handroll ($7): So much better than imitation crab. Recommend out of all the handrolls we tried. Eel Handroll ($7.50): Not my favorite but my husband said it was one of the best eel he has ever had. Lobster Handroll ($12): Good but nothing special. Volcano Roll ($28): This took the longest to make and was the last item we received even though we saw them start preparing it at the beginning of the meal. The presentation was beautiful and Jayden even sprayed gold on it for our photo and video. It comes with snow crab, avocado, lobster, and bay scallop topped with eel sauce and was really yummy with lots of seafood. The only downside was that the roll underneath broke apart easily which made it hard to eat. Fresh Wasabi Root ($10): We watched them grind the wasabi fresh which was cool to see. It doesn't have a kick to it though so I wouldn't order it again since I like a tiny bit of spiciness. Matcha Mojito ($15): Not for me. It had a bit too much club soda. Yuzu Saketini ($15): I liked this one more than the matcha mojito. The yuzu flavor was prominent and it kind of reminded me of a Lemon Drop.

The room is intentionally intimate and very dark, with an industrial ceiling where pipes climb 20+ feet above, signaling you're in for something far from a traditional sushi bar. My only gripe came at the front of the house: the initial greeting and the rule explanation were a little too demanding and elementary for someone who is tired and paying a significant amount of money for a sushi dinner. Put the rules in an email, text and on the website i'm not in 4th grade. The hostess was pleasant, but she seemed a bit robotic in doling out the rules of the evening. The line-up system, where you wait your turn and have your name called, feels odd and reminds me of the times I visited my friend in prison and the guards lined us up against the wall by our names before they took us to the room with inmates. Uncomfortable but I do follow most rules and there was a reason for the lineup that becomes clear as you settle in. Next she takes you down a dimly lit, narrow wooden staircase and you land in a basement sanctuary of omakase heaven. Our hostess knocked and the door opened to a room that felt specially curated for this meal. Each guest found their name written in gold on a sign on the sushi bar where you are suppose to sit. The chair was a very comfortable leather chair. Each gold written name plate, marking the guest order she placed us in upstairs. My seat was at the center of the sushi bar, perfectly positioned to capture video and photos of both chefs in action. From the start, we were told we'd be eating with our hands, a nod to traditional Japanese dining. The chefs staged 17 courses with the precision of neurosurgeons, walking us through every nuance from the provenance of the seafood to the section of the fish we were eating to the age of the barrel aged soy sauce. Not a detail was missed, and timing felt both deliberate and urgent in all the right moments. The father, Jose, was laid-back and effortlessly in control, while Leo, Jose's son, emerged as a true partner in the kitchen, their dynamic reminiscent of watching a masterful, living artwork take shape. The two moved back and forth with a rhythm that felt like a collaboration at the highest level, each dish placed neatly on a flat stone in front of each of us. They would then announce with pride what we were about to inhale and wait in anticipation of our response. It was clear they take tremendous pride in their craft, presenting edible masterpieces that felt almost ceremonial. Too keep everyone happy with the time in between dishes there was an endless supply of a pickled salad that I could not stop eating. As for a favorite course, it's hard to pick one. Each bite built on the last, and the whole sequence felt cohesive, an immersive set from tartare hand roll, to Shima Aji, Madai, Uni my favorite, Hotate, Masu, Hirami, Hamachi, Bincho, Kinmedai, and something I have never heard of Zuwaigani, followed by the best Waygu I have ever had in my life and ending with a passion fruit sorbet with activated charcoal crumbles and toasted crispy coconut, I don't like coconut and I ate every bite. The pairing of technique, seasonal seafood, and f#%king great seasonings left a lasting impression or as my wife says, "my husband has food memories." If you're considering a visit, go with an open mind, a willingness to lean into the pace, and a camera ready (flash off it's one of the rules) for the moments when the chefs' artistry shines. The father-and-son team of Jose Manuel Tapia and Leo deliver something rare: not just sushi, but a storytelling meal where every plate is a page in an ongoing, delicious epic food story. At the end they will make you additional food for an additional price but it's worth it. They then walked us over to a very nice bar with a great vibe and old school Dazz Band playing like I was in a time machine and it was 1982. Great place, great food, great vibe. I was excited to see chalkboard specials but the pricing looked like it was for 2 pieces of Nigiri but it was for 1 piece and the two choices we made were not very good (seaperch and ankimo). The tempura tipped us off immediately (greasy and overly fried, they looked like onion rings from a hamburger joint), and I'm afraid the sushi was that good, especially considering the price. Himachi sashimi was good and cold. Nigiri was not cold and nothing out of the ordinary. Service was attentive but average (luckily our server forgot to order a roll that my wife wanted).

I really couldn't tell you all the delicious courses brought out, but all were chef selections and change with the seasons. I lose track of how many courses were included, but at least 7! The dessert was matcha tiramisu and crème brûlée! That I do remember. The tuna items were my favorite though. The only downside which is not the restaurant's fault is they have more seating outside than inside and with the heat, it is just tough this time of year in August! I will definitely be back though. The service was great and the staff are super attentive if you need more water, another drink and check if you finished your current course before bringing out the next.

I didn't have a reservation & I was hoping I can slide into a seat at the sushi bar. When I arrived I was greeted by Vivian, she was so sweet & welcoming. I instantly knew by her hospitality that if she wasn't able to seat me, I would come back. She was able to get me on a short wait until a seat opened at the sushi bar. I was more than happy to wait, I was offered a beverage while I waited but opted for just water tonight. The manager Alexander came back to see if I needed anything while I waited for my seat. I was seated at the sushi bar & greeted by my server. Her name was Sayaka. She has such a warm smile & energy about her. She explained the menu since it was my first time. Then I proceeded to order, I ordered a handful of nigiri's. My sushi chef was Joseph! He was so friendly, knowledgeable and made other great suggestions aside from what I ordered. Thank you chef Joseph for using his expertise to absolutely WOW ME @ the quality of the fish. The simplicity of what quality of fish & experience will make you feel. From beginning to end, my dining experience was exceptional. I am quite particular when it comes to sushi, but this exceeded my expectations. I'll be back again to visit Namo!
