Not sure how this place has a 4.4 star rating but it looks like a lot of them were under previous ownership. Stopped in for lunch with my wife and daughter. We each ordered a bowl of noodles along with some popcorn chicken. After about 10 minutes my daughter's and my noodles were brought out, no sign of my wife's noodles or the chicken. About 10 minutes later we flagged down the waiter who told us they were being worked on. Another 10 minutes went by and we were told the same thing. A bit more than 5 minutes later my wife just said forget it, so I told the waiter to cancel the rest of the order. Totally ridiculous! It wasn't even that busy so I have no idea why after nearly 40 minutes we still didn't have half our order. As far as my, and my daughter's, noodles were concerned, they were good but nothing special. Nothing I would come back for, especially given the far better options in the neighborhood. read more

Happy to come across this restaurant, mostly because ever since Tian Tian Noodle lost their lease in DT Redmond, I've been looking for a replacement for their dan dan noodles. No one else seems to do them the same way. Noodle Nine doesn't serve dan dan noodles BUT the dipping sauce for the scallion pancake is the same as what Tian Tian used in their noodles! I absolutely used it as a dipping sauce. The scallion pancake was great- SUPER crispy. Cucumber salad was really good but aggressively garlicky. Actually spicy from just raw garlic alone. This spot is still good but it is not as great as it was before the ownership change and rebranding. They took out the maocai which is disappointing given that maocai is something you can't find at most mainstream Sichuan restaurants. I got their braised beef noodle soup and it was good. It is extremely rare to find a meal in the area for less than $10 these days and that is probably the biggest plus of Noodle Nine. We ordered a couple of dry noodles bowls, wonton in chili oil, fried dumplings, and fried chicken. The noodle sauce and texture were overall very solid and the portion was reasonable given the price. The wontons in chili oil and fried chicken were just ok. That being said, the fried dumplings tasted like they came out of a bag, would not order. Service is very bare, you order on your phone, which is to be expected given the price. This is a very casual place, mostly solo diners or families wanting a quick bite. I would not recommend this for any type of date, family gathering, etc. I would say the noodles and pricing definitely carried our experience. read more

Food is still dang solid considering I get the same thing every time I come here. This time I came with a friend who very recently moved to the Bellevue area to retry their braised beef noodle soup on a Saturday night around 7pm. This time I did not order extra noodles like I did the last time, and the food was more than enough for both of us - we each got the same thing. The noodles by default are a little spicy though you can choose not to have it spicy on their menu, which you still access using a QR code. I'm actually surprised that this time round there was hardly anyone inside to eat when before it was bustling an nearly packed to the point where their waitlist was utilized. I've been coming here (dining & takeout & doordash) consistently for about a couple months now. I'd like to say I'm a regular here given that some of the staff recognize me.... My go to order: mala & spicy Mao Cai (either the soup / dry pot!). It's more than enough to share with one person or two people since it's a la carte ingredients. The meat is delicious, tender, and high quality as well as the other ingredients. Spiciness level: I'd recommend the base spiceness, even as someone who LOVES spicy / mala food. The next levels are the same spiceness but they have more of the fresh peppers (which are crazy). Sometimes I'll order the medium spicy, pick out the fresh peppers, and add some as I go. I've tried other dishes, such as the beef noodle soup and dumplings, but it doesn't give a WOW factor like the Mao Cai. In fact, I would give the other dishes a 3/4 star. But my overall rating bumps to 5 due to the Mao Cai. End of the day, try it! The food consistently comes out quickly. The restaurant gives a cozy, authentic feeling. I ordered take out and ordered the dry mala as I had in the past but they completely changed the seasonings and not for the better. It's now some weird creamy peanut sauce that's not good. As a fan of noodles, dumplings and spicy food, I've always been curious about Nine Way since those are essentially the main components of their menu. Recently, it was named #89 on the list of Yelp's Top 100 Chinese Restaurants in the US, which gave me the extra push to finally give it a try. Five of us came for lunch around 11:45A on a Saturday and got one of the last available tables. The tables are small and sized for two to four people. They pulled an extra chair over for us, so while we all fit, it was a little tight. One waiter brought over a small dish of spicy roasted peanuts and hot water to start us off. After browsing the menu, which is accessible via QR code only, we selected a couple dry noodle dishes, dumplings and noodle soups. + BRAISED BEEF NOODLE SOUP ($14.99): This bowl contained a generous serving of noodles, cubes of beef, and two pieces of bok choy, topped with green onion and cilantro. The noodles were on the softer side whereas I would have preferred them to be a bit more firm. The beef was pretty tender; about half of them were on the more gristly side, but surprisingly, they were not too chewy. While the menu states this is spicy, it was actually the least spicy thing I ate here. Nevertheless, I still loved the broth and finished every sip! It was beefy, savory and not too salty. The bok choy added a nice crunch while the cilantro provided some freshness. + WONTON IN CHILI OIL ($10.99, 10 pieces): This chili oil really packs a punch! I love spicy food and this was nearing my limit. Every wonton was completely covered in the sauce which was heavy on the chilis and had a dry heat. The pork filling was delicate and the wrapper was nice and thin. + SZECHUAN STYLE DUMPLINGS ($10.99, 8 pieces): I loved these. The sauce was milder in spice with a touch of sweetness that made it addicting. I actually don't remember much about the filling since the sauce was that good. These dumplings had a thicker doughy wrapper, but they were excellent overall. + NINE WAY NOODLE ($11.99) & MINCED BEEF WITH GREEN PEPPER NOODLE ($12.99): These two dry noodle dishes tasted very similar to each other and I couldn't really tell the difference other than the type of meat. Both were completely coated in a spicy sauce. I believe the minced beef noodles had a bit of the mala numbing spice. Our waitress said this one is normally quite spicy, so we opted to decrease it a bit. Two waiters managed all the tables and stayed on top of everything, making it look easy. One of them still made time to check on us and drop off extra napkins among bussing tables, greeting customers, serving food and handling payment. Advertised as the "Best Sichuanese noodle in Seattle", this location in Redmond is one of two locations in the Seattle area (the other one being in Federal Way). They have been here for more than 6 years, serving up various dishes from the Sichuan region of China. It was another dreary day in the Pacific Northwest, and since both sessions of NFL football had only teams that we didn't care about, my daughter and I took a walk to the Overlake Village strip mall for a late lunch. The main tenant is Safeway, with a few restaurants around the edges. None of the restaurants were particularly busy, so there were plenty of open parking spots that we could see. We were seated immediately, given two glasses of water and referred to the QR code at each table that took us not only to the menu, but also the ordering mechanism. The table also contained pre-filled bottle of tap water, which we could serve ourselves. After we placed our order, the food came in one shot about 10 minutes later. I really like Chinese beef noodle soup, and knew I had to try the version here ($14.99). What's interesting is that my spice tolerance has really come down as I grew older, to the point where I don't order medium or hot anymore. This soup had no choice of spice, instead being called spicy...it really wasn't. It came with the noodles used in their other dishes, with some baby bok-choy. The meat used was from the shank, which had nuggets of beef along with the connective tissue surrounding it....i really think this is the best meat for this dish, and I like it almost as much as oxtail (which is a lot more expensive). It was a decent portion, came with a giant spoon, which I used to slurp and shovel into my face... really enjoyed this dish. The term 'mala' refers to the liberal use of Sichuan peppercorns, a very different reaction than from the typical hot peppers. It's the active ingredient in their most popular dish: Nine Way Noodle ($11.99). It had been ordered as mild like my daughter had before, but the amount of ground peppercorn used was more than expected, making it difficult for my daughter to finish it. So I ended up tasting most of each dish, and enjoyed both, but understand why it was hard to finish (it does numb your tongue quite a bit). It doesn't look like much when it comes out, but after you mix it well (recommended by the waitress) and try the first slurp, it is quite good, especially if you alternate it with some other foods that don't have the peppercorns. You can use the app to close out the ticket, at which point a server will come back to take your payment via a tableside tablet (Toast in this case). read more

They change the name, probably owner too. The mala MaoCai is not what it used to be. You cannot choose level of numbness or spiciness. But you got a lot of food for the price you paid. Especially the vegetables. Service is, well, ok. You scan QR code to order and they bring the food out. Though, our server have to be reminded twice before he brought us the rice that comes with the MaoCai, and he never bring us extra napkins that we asked. Was craving something that reminded me of the Bay Area and stumbled upon Nine Way as I had to go to Redmond for an appointment and wanted to see what else was in the area. Noodles were ok, wish they were thicker. Beef was tender but wish they had tendons or stomach with the beef. Pig ears are the best I've ever had. I got less spicy which was perfect. Nine Way noodles are ok but similar to a stir fry ramen you'd make. Overall, would come back but wouldn't go out of my way. Still worth a try! read more

We came last week craving their usual noodles and mao cai, and even though everything looked different, we hoped it was just a rebrand. We were wrong. Last time we went the szechuanese dumpling recipe was way different, got rid of free rice on the mao cai. Just tried to go in and they've gotten rid of the mao cai entirely, and completely new staff!! This time around, I tried their Braised Beef Noodle Soup and it was sooooo good and delicious! The flavor of the braised beef was really tender and juicy. The texture of the noodles was also very good and light. What made the whole experience more pleasant was my kind and sweet waiter. She asked me that she recognized me from before, which we were both happy and surprised to know at the same time. She helped me from before when they accidentally over charged me. I remember then when I called the restaurant and she answered and solved everything in a very kind, professional and friendly manner. Now she is my good friend and I have to say I admire her attentiveness and kindness to me and everyone else in the restaurant. It is always nice and pleasant to come here from listening to soft Chinese music, to the perfect waiter who is serving the best winter food you can find around the Eastside of Bellevue. Pretty good neighborhood Sichuan spot, prices are reasonable and the QR code makes it easy to order and pay straight from your phone. I've tried their beef noodle soup and dry pot, and both were solid. The broth for the beef noodle soup was too oily though (the friend I came with tried to scoop all the oil out before giving up LOL) but flavor-wise, they have the right idea. I don't see a ton of places serving dry pot in Seattle/Eastside area, so this will be my go-to spot if I'm craving it. Would not go out of my way to come here, but if in the area, worth a visit! When I heard that Nine Way was an authentic Sichuan restaurant in Bellevue, I was curious and a little worried for the spice! I was right to be curious, but no need for worry - their chili oil is awesome. We got the Beef Noodle Soup, Noodles with Pork, and Wontons, which all came with chili oil. It's very mala so it's a numbing spice and not a painful spice. I was surprised by how much beef comes in the beef noodle soup, and I shocked myself by finishing all of the broth because it was so delicious. I think the dish I got was supposed to be your choices sitting in a huge bowl of oil and you weren't really supposed to eat the oil as soup. It was incredibly spicy to eat.
