The staff were all so welcoming and friendly, and even though their kitchen was backed up with orders, they did their best to serve us quickly and the food was still top notch. The marine-like atmosphere was also fun and made dinner really casual and enjoyable. We got some of the best sellers, the bo la lot, the ma la beef cheek noodles, and the Hokkien wok noodles, and they were all a hit. I enjoyed the different Asian-fusion dishes they had from different cultures as well as their wide selection of drinks. The dishes were all very rich and flavorful, and you get a good amount to share for the price. It was the perfect place to eat while chatting and catching up with a friend. I really enjoyed my meal here and will definitely make the trip out here again.

As mentioned in other reviews, we also experienced a unique and relaxed atmosphere. They had some good local draft options to get started - which is good. We ordered the Bo La Lot Grilled Beed in Betel Leaf for an appetizer and we loved the combination of ingredients and taste. Our brides ordered the Chaca La Vong Wok Seared Tumeric Rockfish and they both enjoyed it. My son ordered the Pad Kee Mao and I went with the Reckless Fried Rice and we both devoured them! Our waitress (her name wasn't on the receipt) was outstanding....super friendly and patient with all of our questions regarding the menu.

As soon as you walk in, the smell of lemongrass mix with a hint of fish sauce gets your taste buds salivating. For starters, we had the Bo la lot. A flank steak wrapped in Piper Lala leaves - skip it to expensive and tiny. The catfish clay pot is not an option - it's a must. It's the reason why they have five stars. I can tell you what they put in it but it's not gonna describe the taste. I could tell you it's very distinctive and it's heavy in the soy sauce, but I don't mean that in a bad way - it's amazing. The drunken chicken is their version of orange chicken, but better of course than your standard panda. I really like pickled veggies that come with the lunch meal. The offset allows you to have a fresh bite every time. Very Happy with this place.

So I was really disappointed to walk away empty-handed this time... The ambiance remains as good as ever, featuring updated signage, fresh branded visuals, and clean, well-maintained self-serve counters that show very efficient management. Service: We arrived around 1:00 PM and there was only one server on duty. After walking in, we had to wait a short while before being greeted, though the overall service itself was still quite good. Flavor: First off, many of their previous staple dishes are gone. There were only four types of beef available, and they all looked pretty much identical... Many offal items, like tripe, have completely disappeared. The reason traditional Sichuan hot pot relies on heavy oil and high spice is, to an extent, to mask the strong gamey notes of offal. But with the limited selection available now, the offal's raw taste remains even after boiling. On top of that, the beef completely fell apart in the pot. If quality control is lacking at this level, even switching to an all-you-can-eat model won't turn things around.

In the past, I've seen Yelpers complain about a restaurant intentionally changing its name to wipe its review history. This seems like the opposite case, where maybe it SHOULD have a new page. Because aside from the name "Jade Fusion," nothing remains of the place I reviewed 6 years ago. The food and menu are completely different. The decorations are different. The lighting is different. The bar is so nice, and I'm not sure there was even a bar before. This is definitely one of the better bibimbap I've had in the U.S. The flavors combine perfectly. The kimchi and gochujang were generous. The rice is just slightly crispy every couple bites as long as you mix right away. If I had to complain about something, the texture of the bulgogi could've been even better. The wings are fantastic. Sometimes, the drumette part gets dry, but these were still so soft and juicy. I also got to try the tom kha. Obviously, it's not that spicy, but I found the creamy flavor to be really well-tuned and addictive. A very pleasant surprise. Five stars.

I will say the photographer created a bit of an uncomfortable experience as she came off a bit pushy and did not explain what the photos were for. When we said no thanks, she continued to press and tell us to just take a photo of the photo with our phone lol. Besides the photographer, the food was pretty good. In fact, the interior is so unique that you wouldn't immediately guess it's an Asian restaurant. The staff were friendly, though service was a bit inattentive; I found myself waiting longer than expected for basic things. Interestingly, when I ordered noodles and asked for chopsticks, they told me they didn't have any. It was quite a surprise to find an Asian restaurant serving noodles without chopsticks. As for the food, it was fine, but nothing memorable for the price. I've had better Asian food elsewhere in Seattle for less. If you're after a stylish, brunch-aesthetic spot to try Asian-inspired dishes, Di Fiora fits the bill. But if you're going purely for the flavors, you may leave underwhelmed.
