Busy place at lunch time but still QUICK service! I recommend the Burrito de Fajitas con Pollo (i.e. chicken) Great tasting Mexican food!

The Tex-Mex Cookbook. Two things I found interesting were that instead of the standard red and green salsa served this restaurant serve serves a kind of spicy coleslaw along with the red salsa. Additionally, I learned that what we think of as Piccadilly, ground beef with nuts, raisins, peppers; here, it is just shredded beef what I know of as carne deshebrada. But because of my love of the cuisine of Mexico, I always like to check out how it varies in the states of Texas, New Mexico, Colorado, and now Wyoming. And then something interesting happened. Our waitress told us she was fine Honduras and I had the aha moment. Repoyo!!! Like one has with pupusas! Service. Ambiance.

I've never had veggie fajitas that weren't just sautéed in like basic olive oil before; I think that some sauce would've been fine but it was truly dripping in it. The corn tortillas were exceptional!!! So so yummy. Healthy amount of guac, rice, bean but pretty stingy on lettuce and tomato. It is a place that comes with chips and salsa for free so that's nice! My plate was $20, I think my partner's veggie burrito was like $18 and he really enjoyed it. Def would come back!

The guacamole was very good and I recommend it. The salsa was unmemorable, tasting more of canned diced tomatoes, and my personal preference would have been for roasted tomatoes and onions and garlic, with salt, vinegar and chiles. The tortilla soup was heavily cumin so if you don't like cumin, this is not for you. The recipe they have chosen is for more of a chicken tortilla mush. But it is not unlike others I have had. Ambiance is nice. Everyone super friendly. Great wall decor. I suspect that the recipes they have chosen are designed for clientele from all over but I would say, "Give your chefs an opportunity to offer something off menu as a special option". The pickens are slim and it took us three tries to find a lunch spot today. Merry Piglets Mexican Grill was not on the list but here we are, hungry. The staff was helpful and quickly seated us. The chips and salsa were tasty and quickly consumed. We placed an order of queso and more chips. The queso sauce was thin and lacked any spice. Three tacos: shrimp, el pastor and carne asada with beans and rice were also ordered. The meats and shrimp were good but scant. The tacos were not much more than meat and some onions. I was not left wanting more or satisfied with our selections. Merry Piglets Mexican Grill fills a need in the beautiful town of Jackson Hole, Wyoming. Of the many Mexican restaurants here, I don't feel the need to recommend or return here. I wish them well and can tell that the locals feel at home at MPMG.

A unique setting in a wine / liquor store with a tapas bar in the back, amongst the wine racks and liquor bottles. Long communal tables and sitting hip to hip with foodies, locals, and people meeting total strangers. It is good conversation with everyone sharing stories, not once was politics mentioned. Reservations are not taken, instead you will find the host making people scoot to make room for new arrivals at the long tables. Our servers were spot-on with service, drinks and sharing her favorites. It is cozy and casual, people meeting people. The spirits here are for the pros with knowledge of wine, beer, spirits and bubbles. We started with the wild mushroom mozzarella with balsalmic butter, parmesan and balsalmic glaze served on crunchy baguettes. It was unbelievably flavored and tasty, a great start to the night and must have! The Spanish salad with arugula, apple, fennel, almonds, manchego and a honey-sherry vinegarette was good but not on par with the other dishes. The tuna crudo with cucumber, arugula, crunchy grains, orange wedges, citrous vinegarette, fried capers and preserved lemon was light, a real palate cleanser, and refreshing. A pleasant surprise and would order again. The lamb pintxos was our final selection and a great dish to end the night on. The fork tender lamb tenderloin was served on 2 skewers with mojo verde, Spanish aoili, and pickled red onions on crisp baguette slices. Another Homerun! The menu changes frequently and the tapas allow you to try several different delectable dishes. It encourages sharing and forces you to open up and try different dishes. The so called General Tso steak sauce was like a thimbleful smear and completely irrelevant. BBQ Ramen seasoning? Not even enough to get a taste profile of it. The trout with a green curry sauce was good but again, ummmm.... Trout has a subtle flavor. Green curry coconut sauce, and stuffed with another type of Asian something something....might as just as well better to use a neutral tasting fish like a better quality tilapia imho. Let trout taste like trout. Use a different, neutral tasting fish for these kinds of sauces and fillings. Well at least it wasn't covered with a garnish of micro greens lol. Just a little cilantro heh heh heh. I mean don't get me wrong. Both entrees were okay. But a waste of quality fish when a less costly fish would have been fine what with all those other flavors. And the foam and powder embellishments on the steak were barely noticeable. The whole menu reads like a community college cooking school graduate little bit of this little bit of that. When I get home I'm going to have fun writing the different components of all the menu items on index cards, shuffle, and see what combinations come up each time. And I love the idea of a General Tso steak sauce and want to try creating one. And using a packet of Ramen seasoning instead of Cajun seasoning sounds like a fun thing to try. I just won't do it on a fifty dollar piece of meat. If you are counting calories you skip the gross doughnut hole dessert. Dense ball of dough. Gummy. Like they used a cake doughnut recipe instead of a yeast doughnut or beignet recipe. But if not counting calories , go for it. It's fun to try the sauces, even if not that great a doughnut. We eventually had to check in to make sure they were even coming. The food was fine, but not something we'd come back for. The elk pasta lacked the depth and richness you expect from a bolognese. The trout--poblano stuffed and curry-prepared--was an interesting idea, but the curry completely overpowered the fish, making the dish feel unbalanced. We had curry-dusted trout at The Blue Lion earlier in the week that was far better. (One of the best trout meals I've ever had.)
