Merry Piglet's Mexican grill on N. Cash St. is a super cozy, laid-back Tex Mex style restaurant in the heart of downtown Jackson. The restaurant is super cozy with the restaurant designed to feel like you are outdoors. The service is great, fast and friendly. I ordered an Asada burrito which was really good. The server did ask what kind of sauce I wanted and I ordered chipotle. I'm not sure if it was in the burrito or if it was supposed to come on the side but I never got it. I 100% recommend getting an Horchata with your meal. It is so delicious and refreshing. Weekend in Jackson Hole, WY for an escape from the Phoenix heat. Little did I know that today in Jackson, it is blowing and snowing. I thought shoulder season meant milder temperatures, I was wrong. Half the restaurants here are on hiatus during the winter and spring. The pickens are slim and it took us three tries to find a lunch spot today. Merry Piglets Mexican Grill was not on the list but here we are, hungry. The staff was helpful and quickly seated us. The chips and salsa were tasty and quickly consumed. We placed an order of queso and more chips. The queso sauce was thin and lacked any spice. Three tacos: shrimp, el pastor and carne asada with beans and rice were also ordered. The meats and shrimp were good but scant. The tacos were not much more than meat and some onions. I was not left wanting more or satisfied with our selections. Merry Piglets Mexican Grill fills a need in the beautiful town of Jackson Hole, Wyoming. Of the many Mexican restaurants here, I don't feel the need to recommend or return here. I must qualify. I was the recipe tester and researcher for Robb Walsh's The Tex-Mex Cookbook and I have traveled extensively in Mexico for 60 years, so my comments are from a different perspective than most. The guacamole was very good and I recommend it. The salsa was unmemorable, tasting more of canned diced tomatoes, and my personal preference would have been for roasted tomatoes and onions and garlic, with salt, vinegar and chiles. The tortilla soup was heavily cumin so if you don't like cumin, this is not for you. The recipe they have chosen is for more of a chicken tortilla mush. But it is not unlike others I have had. Ambiance is nice. Everyone super friendly. Great wall decor. I suspect that the recipes they have chosen are designed for clientele from all over but I would say, "Give your chefs an opportunity to offer something off menu as a special option". This is tourist gringo Mexican food. It's nothing authentic. It's nothing special. I'm guessing the cooks don't even eat this food without serious revisions. There is SO much better Mexican food to be found in the west, and in this town. I'd keep looking around. That said, if all you want is run of the mill Americanized Mexican food, this is fine. Prices are reasonable, food was edible, margaritas were strong. It's on point to just sit down after a day on the mountain and refuel for the next day... perfect place to bring your kids! ...but it's nothing special. I asked for house hot sauce. They didn't have it. What Mexican place doesn't even have a house made spicy salsa or knock your socks off hot sauce in the back? It's fine though. Service was fast even though only 2 people were working the whole restaurant. They share the space/kitchen with a burger place. The shredded beef as a meat option was very good. The big bonus, since I am only giving it 3 stars, is this is an easy affordable place to go out in an otherwise very overpriced town. So I guess I'm glad that it's here! ...but I mean, even good traditional mexican food can be affordable. My suggestion, if management reads this, is to have your cooks add 4-5 "Chef Specials" to the menu that are all things their mothers make. That'd be great. This is a very interesting restaurant. The ambience was good and the service was excellent. The young lady who took care of us could not have done a better job. What's interesting is their queso. It's pretty rough. Sort of like craft cheese with some flavoring it. I've had a lot better. The salsa was pretty good and we ordered extra of it. But my Carne Asada enchiladas were probably the second best Mexican dish I've ever had in my life and I've had a lot of Mexican food. It was hot, flavorful, and the presentation was fantastic. A friend of ours recommended this place over and over to us before we visited Jackson Hole saying that it was the best Mexican restaurant he's ever been to. I'd have to pretty much agree with him. My son's Brea tacos were great as was my wife's taco salad. I would highly recommend this place to anyone. They do need to work on their queso and make it more traditional Mexican. Mary piglet is still one of our family favorites. It's hard to imagine a trip to Jackson without swinging by. The kids menu offer us a good variety for our little ones. We stopped by Merry Piglets after walking around Jackson for a few hours. We got there around 4:00 so it was pretty empty. Our server was very attentive. They brought us their free chips and salsa. They also advertise that their food does not contain added seed oil. They fry their own chips each day. Sounds like they use beef tallow. Love that! You don't find many places willing to avoid using seed oils. The portion of the restaurant we sat in had a long skylight above us. Murals on the wall all have pigs in Mexican attire. It's an attractive atmosphere. We ordered the Wild Cowgirl Dip which became a family favorite. First, the free chips and salsa were very good. Homemade chips with a very tasty salsa. We also had queso which again was very flavorful. The fajita salad came with lots of grilled vegetables on a nice big salad. I added fajita grilled chicken with that. It was very hearty and I could not finish at all. We wanted to take my mother in law out for a good dinner, and she recommended Merry Piglets. I'm a vegetarian, so I always check menus before I go to a new place to make sure I can eat there. I checked online and Merry Piglets looked really good. We headed out. When we walked in, we walked past a sign that said something about beef tallow. I didn't really see it, but when the host sat us and handed us our menus and chips and salsa, I took a close look at the menu: sure enough, down in the bottom corner in small print, there's a little logo that says something to the effect of "We are proud to eliminate seed oils: we fry everything in beef tallow!" Record scratch. We ask someone: is there anything I can eat here? He explains that, well, anything fried will be in beef tallow, but suggested a salad. So we left. Note: the website's menu does not mention anything about this. If it did, we wouldn't have come. They really need to include details like that, that impact common dietary restrictions, more prominently. read more

This spot is located in the downtown area of Jackson. The menu is filled wih a variety of tex-mex dishes from enchiladas to chimichangas, burritos, quesadillas, and taco plates. Servings are huge and well balanced. As soon as you are seated, you are welcomed with a basket of complimentary, freshly made tortilla chips and salsa. We had a group of 6 so we got two baskets. We also decided to get the queso dip to try with it, which was soooo delicious. I couldn't stop myself from doing a large amount of damage to the chips. They aren't that salty and have a perfect warm, crisp.
