Arrived here on a Saturday night around 6pm. Seated right away and was greeted immediately. There were inside and outside options with a bar. The decor included various depictions of nacho libre, which added flair. Asked about ordering chips and salsa and was told the only option was chips and guacamole, came with salsa. The guacamole and salsa were fresh but the chips were over salted and mostly consisted of small pieces. For an entree, I ordered the salmon tacos. They were edible but nothing special. While visiting Jacksonville, we stopped by Hatch to have lunch. The food is really good, and the service was good too. Alex was our server was very helpful and very attentive, he was the only server in the restaurant. My wife and I felt bad for him because he was really working his tail off so we left him a nice tip because he earned every penny of it. Ownership should really take account of what it takes to run a restaurant effectively. Running a very good employee into the ground is not a successful formula. Thank you, Alex for a great service. BOMB experience - we got picked up from the airport when we came to town by Hatch bartender, Adrian, so of course we got some recommendations- he stayed loyal to his roots by recommending the bar he works at, Hatch, which was walking distance from our accommodations. A great spot for Mexican food lovers in Jackson. The Margaritas are all delicious especially the Blood Orange and Pineapple margaritas. Well made with more citrusy flavors and not too sweet. Ordered the Salmon Tacos, and I loved the flavor. I ordered a side of avocado to make them ideal. Also had the Bison Enchiladas which were delicious with extra mole sauce, and the Elk Quesadillas were also delicious and quite a large portion. The chips guacamole and salsa are authentic and filling - you won't leave this place hungry. Our server Alex was very attentive and entertaining as well. I have had much better food in this style though. The quality of the meat wasn't fantastic and it wasn't all that flavorful. But the sauces were very good. The salsa and gauc were quite good. The drinks were all very tart, we ordered a few different margaritas and a Mexican mule and all of them were so tart it kind of feels like they use citric acid instead of lime. read more

Stopped in for happy hour on a Saturday (!!) and was greeted with friendly service, delicious food and margs and a lovely patio! The whole staff was friendly and service was incredibly quick. I opted for the patio on a beautiful day but they have ample indoor seating too. It's casual but not overly so where you feel rushed. Their happy hour is phenomenal and the marg lived up to the hype - a strong pour, great flavor. The quesadilla was large and I got mine with pulled pork which was a great addition. We just left the restaurant after both the hostess and server were acting rude towards us. We walked in and said hi with a smile to which the lady just stared at us as we told her how many people. We were seated and the waiter told us we couldn't order dinner until 5pm and could only order happy hour food and appetizers. We ordered the chicken quesadillas as our appetizer. They were good, but overcharge for food like that. We said thank you to the waiter as he put our plates down and he said absolutely nothing. We decided that was the final straw. We started with Chip and Salsa (they charged for refill!) and a few drinks: a Bloody Maria, a spicy Magaritta on the rock, a Corona beer and a glass of Californian Pinot Noir. Water was served without us asking, which I loved. For entrees, we spitted a Sputhern of the Border Wrap, which came with a great mustard dipping; a Tortilla Soup, and one of their Specialty Tavos. We used to love Hatch -- a few years ago it was the go-to place in Jackson for inventive and fun Mexican. The last few years, though, haven't been kind. The service has tailed off. On our last visit we couldn't even get our server to stop and take our order. The food, too, has slipped. Flavors are down, food quality is down, portions are down, and prices are way up. I get it -- inflation is hitting on everyone. But the delta at Hatch is bigger than other great places in Jackson. Hatch used to be at the top of our list when we were in town. We've been loyal customers of Hatch Taqueria for the past 7 years. The food has consistently been good, and the drinks are excellent. However, we've noticed a decline in the overall experience over the past 2 years. What was once a standout spot has unfortunately slipped -- reflected in a drop in ratings from 4.6 to the low 3s. On our most recent visit, we spent around $300 and were there for just over an hour (1 hour and 8 minutes). We had planned to stay longer and order more drinks, but just 30 seconds after settling our bill, the manager came over to tell us that they had another party coming in and we needed to leave. We weren't offered the option to move to the bar or any of the four visibly open tables. Nor even when we asked to sit inside or out (you can sit inside but we will need the table in an hour - give us this option). It's disappointing to see a favorite place lose the warm, welcoming vibe it once had. We really miss the Hatch of years past. read more

But here I am, back home, in the East Coast, still reminiscing on how GOOD those two plates were. If you're going for drinks, I'd strongly recommend getting the Huckleberry margarita- nice and refreshing, not too sweet. Gives off a nice blueberry flavor. As for the service, I'd say it could have been better. There were times where we would be waiting for our server and then spot him watching the game. Lol. Ambiance is chill and laxed. If you want to experience everything Mexican food isn't, this is the place for you. I never knew that you could mess up fajitas. They claim they are sizzling in the pan when they arrive but they weren't even cooked in the pan just warmed in an oven and somehow missing all flavor but drenched in oil. The kids meals are a joke and my kids barely touched them. Our server couldn't care less if you needed anything or actually pay any attention. I will say the one positive was the salsa was delicious but both rounds of chips were bottom of the bag small broken pieces. read more

I have come here for a margarita before and it was amazing. I decided to take my parents visiting since they love Mexican. This felt like a modern style Mexican restaurant and we loved every bit of it. Everything we ordered was delicious. We decided to share our plates and that was a great choice so we all can taste a bite of everything. My niece loved her bacon avocado breakfast tacos . They serve breakfast till 3! So I decided to get the huckleberry pancakes. They are more healthy tasting than an ihop pancake but they were good for GF for sure. They needed syrup so make sure to ask for the maple syrup. It came with a little drizzle of huckleberry but needed more. The carne asada tacos were exceptional and probably is what I will order next time. I had 2 margaritas they were strong and were SO good. Great service, we were pleased all around. Can't wait to come back for a girls night :) Loved the atmosphere and feeling of this place. read more

On our first visit we started with the yellowtale poke - which was average, not terrible but not great either. Then I got to tortilla soup with pork, and my partner got the tacos conchita pibil. Both were excellent! Based on this meal we returned a second time. This time my partner got the eggplant tostadas - which were so-so, and I got the tortilla soup (excellent again!), and the Mexican street corn. Had a couple beers and an appetizer, soup, steak fajitas and tacos. Service was slow, short on staff with our waiter working inside and out. Food was ok, Tortilla Soup was better than average, for the main it was QUESADILLAS and was impressed with the portion and tacos did not stand on their own from a flavored meat perspective. Unfortunately I don't have pictures anymore but the presentation was nice. Server was a nice fella but was working his tail off. It came with no cheese or anything---No rice or beans and then charged 2.00 for an ounce of cheese and 5.00 for 3 tortillas. It was truly a horrible experience. Nate and I met up with a group of friends for an early dinner at Hatch while visiting Jackson. We had a reservation and were seated right away. The outdoor area was nice and had a guitarist playing music, but we were tucked into a corner inside. Unfortunately there was no air conditioning, which seems pretty typical for many places in the area, but it got pretty hot and a bit uncomfortable throughout the meal since it was 90 degrees out, phew! We started with chips, salsa, and guacamole, which was really tasty. The salsa had a tiny kick and the guacamole was fresh. I got a classic margarita, which I could tell was freshly made without any mixers. For dinner, Nate and I decided to split the taco sampler, which is two of each of their best-selling tacos: smoked pork, camaron (shrimp), and verduras (cauliflower). The tacos were decent, but I wish I'd ordered the elk quesadilla. The smoked pork was really dry, but the shrimp were perfectly cooked. The cauliflower taco was lacking a bit of flavor. Overall this is a fun spot with a nice relaxed atmosphere, but I think I'd try a different dish next time. read more

Really great concept and environment - unfortunately, the food and drinks need drastic modifications. Our spicy bloody marys were laden with horseradish, the potatoes weren't fully cooked, and the "Mexican coffee" was straight unleaded. Very disappointed. There were no people in the restaurant when we went, and they still prepared the dishes like it was a Christmas Eve rush. Again - lots of potential, but nowhere near where they should be. read more

If you are wanting really good Mexican food just pass on by this place. The tortilla chips taste bland and like they were made last month. The Carne Asada tacos had zero flavor. A piece of shoe leather would have had more. I ordered the Hatch burger and they brought it out so well done it was deficient of every ounce of liquid. Then I asked if they could make it medium rare and it came out completely raw. At that point we just asked for the check and left. My recommendation is to pass on this spot. When we walked in we were immediately greeted by a nice waiter who showed us to our seats. First, no Hatch chili connection. This is a Mex and "Tex-Mex" menu. Almost all Mex. Example: it's chips and salsa not chips and pico de gallo. The space is nice and open but it is hard bench seating. We had to nab for ourselves the few cushions to hand. Very strange that. Leo, our server, is well meaning but needs further development. Each time you come on the table, you look to see what you can clear. We were a party of six sitting in a corner, and I took the time to have dishes brought to clear conveniently, and still I had to call him back to take them away. Another task of the server is to make sure the kitchen has properly spaced the order for the table so everyone can be served at the same time. We literally chose this restaurant because of the bison enchilada. Yet this, the priciest and presumably signature dish, of the restaurant arrived for me after everyone else in my party had basically finished eating. To their credit, they did take it off the bill, but that's not really the point. I wanted to eat my meal in the company of my group while they were eating theirs. Since the restaurant even basically emptied out while we were waiting for a meal, which took about an hour to arrive, something is definitely going on in the kitchen. So, be careful in coming here. I will say, that I took the bison enchilada home and eat at the following day, and it was delicious! My party generally like their food, but I would suggest they offer pico de gallo in addition to salsa read more

Popped in for lunch midweek with our golden retriever. Instantly were sat before the lunch rush started. Hatch offers GF options. Some items are cross contaminated making them not fully GF. It says it at the top of their menu and our server explained it too. Started with the chips and salsa. Crispy chips. Salsa had a bit of a kick. Our golden loved them too. Our server brought out waters for us and our dog. Huevos ranchero and a carne asada burrito were our orders. Asked for some of their house made habanero salsa. Good flavor and spice.
